    The base wine is equal parts pinot noir, chardonnay and pinot meunier from the'07 vintage, and 40% reserve wine is added prior to the wine being bottled for its second fermentation. The reserve wine has an average age of 10 years, so after three years on lees prior to disgorgement the Brut Reserve has an average age of just under six years.     Classic is red in colour with a much warmer spice range. It has loads more orange-peel flavour, again, cinnamon before cardamom and a sweet, almost strawberry, smell.     Depp, bright purple.  Drop-dead aromas of dark berry preserves, Asian spice, potpourri and incense, with an intense mineral overtone.  Stains the palate with sappy, chewy black raspberry and floral pastille flavors enlivened by notes of allspice, star anise and nutmeg.  Silky, sweet and penetrating on the finish, which clings with outstanding tenacity and clarity.  There's an elegance and focus here that's reminiscent of the best Burgundies, but with more power and texture.  If I were a third-world despot this is what I'd be drinking every day.     Gosset is Champagne's oldest producer, founded in the 16th century, and this blanc de blancs takes advantage of its well-established connections by sourcing Chardonnay from 15 different villages. The base wines are aged on lees after the primary fermentation but malolactic fermentation is blocked in order to retain the house's characteristic zinginess. The result is prickly, saline, lemony and tight, with some mouth-puckering apple, citrus and herb flavours. Light and focused, there's a touch of nuttiness on the finish.     A well balanced and solid drinking Rye out of Louisville, Kentucky. Each bottling comes from a single barrel and with the limited production these can be sometimes difficult to get. With not quite the demand in Australia that you see in the USA we are lucky enough to keep these on the shelf for the most part. Michters unusually, fill barrels at a much lower proof then most other bourbons and whiskeys and uses a fairly unique heat cycling warehousing system for their barrels which add more richness, complexity and flavour. A spicy and peppery nose, with hints of mint and fresh cut hay. The medium to rich palate is long, lightly sweet and carries its lovely charry/spicy oak barrel flavours beautifully. PWS

    Guilhem Grosperrin to resurrected one of the greats houses of the of Cognac Mestreau Cognac. In 2010, he was given an opportunity to purchase 250 bottles of early nineteenth-century Cognacs from the personal collection of Abel Mestreau and with that Frederic Mestreau was reborn.

    Today the operation is based in the town of Saintes, located a little outside of Cognac and continues to produce some of the best value, highest quality cognacs of the region.

    Handpicked Highbow Hill Vineyard Cabernet Sauvignon 2013
    This wine is from a single high-performing block that has had a number of excellent vintages over the past 15 years. It is a monoclonal wine of G9V3 Cabernet Sauvignon, an unfashionable clone in some circles, but in this vineyard, on this hill, a stunning example of the  variety. The fruit was hand harvest in late-March and yields were low but of excellent concentration and character. The must was fermented in static red fermenters and the wine was aged in French oak barriques, 40 per cent new, for 15 months.

    This is a superbly elegant Cabernet wine. This special wine, our very first Highbow Hill Cabernet, has superb perfume and purity of fruit. It is an elegant Cabernet Sauvignon that will age well over 20 years, but is ready for theenthusiast now. GARY BALDWIN

    This is the first time Noval have declared their famous Nacional since 2003 so this is an exciting development. Very dark purple stains the inside of the glass.  Gosh, a massive bruiser of a wine. There is such concentration here that not much aroma can escape initially. Wild, peppery stuff. Then wonderfully juicy and spicy. This is like the ultimate biodynamic wine with lots of microbiology going on, in a good way.  Very clean and fresh on the finish.  Not notably sweet and with more marked acidity than some.  A big contrast to, for example, Fonseca 2011. This is all about subtle topnotes rather than broad lusciousness. So vital! JANCIS ROBINSON, 2013

    The 2011 Quinta do Noval Nacional has an entrancing bouquet that unfolds with time. It is extraordinarily concentrated with black currant pastilles, baked earth, a touch of terracotta and bay leaf that gains more dimension with time. Yet there is undeniable purity and elegance here, a seductive chorus of aromas perfectly in tune. The palate has a wondrous symmetry and focus, perfect acidity and immense purity. Everything here is so precise and at the same time, unassuming, as if this Nacional is aware of its breeding without the impulse to brag about it. It has closed down just a little since last year, but I take this as a positive sign that this legendary Nacional will delight for decades rather than years.     Third generation vignerons, the Pinons have 25 hectares in Vernou-sur-Brenne. 50% of their production is sparkling and 50% still wine with nothing sold off to the négoce.

    We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.

    Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean  but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

    A blend of Premier Cru and Grand Cru Pinots Noir grapes from the terroirs of Aÿ, Mareuil-sur-Aÿ, Avenay, Bouzy, Ambonnay, Verzenay and Tauxières with a touch of Chardonnay from the Côte des Blancs -mainly Avize, Villeneuve-Renneville, Vertus- (respectively about 90% - 10%).
    Its specific style and colour are the result of blending in about 8% red wine mainly from the vineyard plots in Aÿ (Pierre Robert, La Pelle) and Mareuil-sur-Aÿ (Cumaine, Vaularon, Mutry).
    The vines are very well sited and belong to Deutz. The red wine is made by our cellar-master.
    After almost three years ageing on its lees, the aromas have softened and harmonised, giving this Brut Rosé a particularly subtle nose, and a very interesting mixture of softness and freshness on the palate. Calabria Family Wines, Importer

    This gin was originally the result of a conversation between Cameron (our distiller) and Jason (then Group Bars Manager at Keystone, and one of the World’s Top Ten Bartenders) back in 2014 - they wanted to create a gin specifically for the Negroni. Something to cut through the Campari and vermouth. And as the Negroni has always been a favourite at Four Pillars, Cameron jumped at the chance to make the first collaboration in our Bartender Series a tribute to the very definition of a perfectly balanced cocktail.

    Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters.  But although very powerful, the spice tends to glow rather than become hot.

    We also decided to use beautiful organic blood oranges in the botanical basket, as well as some ginger.  These wonderfully fragrant fresh botanicals help lift the spice to another level. Finally, we opened up the plates to add weight and intensity to the gin. fourpillarsgin.com.au

    This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.

    Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

    Chichibu Ichiro's Malt & Grain Whisky (700ml)
    Ichiro Akuto's most voluminous and accessible Whisky is, as it says on the label, a blend of Malt and Grain Whiskies. While the exact source of the material is not published, we know it's a blend of Japanese distilled material vatted with Whiskies sourced from around the world. In addition to Whisky from his own stocks--including, potentially, Hanyu and Karuizawa, as well as his own Chichibu--the blend contains spirits from Canada, the United States, Ireland and Scotland. The imported Whiskeys are 3-5-years-old, aged in their country of origin before being carefully blended with local Japanese material and matured a further 1-3 years at Chichibu. The Whisky is vatted in 2 x 5,000-litre wooden barrels built by French cooper Taransaud. Non-chill filtered, non-coloured.
