    The Herno Gins are contemporary gind in a classic mould with some native botanical added. Meadowsweet is the most unique and has a somewhat subtle aroma reminiscent to almond. it is, most importantly, a traditional component of Scandinavian Meads as well as wines and preserves.

    Among other it has been awarded with IWSC World’s best London Dry Gin, World’s best Gin & Tonic and a Double Gold at the San Francisco Spirits competition.

    There is a sweet grassy/floral element with savoury coriander and juniper to the fore. The flavours ebb and flow on the palate gently pushing and pulling between savoury corriander/cassia bark and sweet vanilla. There is an almost confectioned element but it is soft and beautifully done. The flavours are long and lingering and there is a crunchy black pepper, green herb spice element on the close. PWS

    Herno Old Tom Gin 500ml
    Like the Sloe Gin the Hernö Old Tom Gin is made from the same distilled gin as Hernö Gin, but with an extra amount of Meadowsweet added in the distillation and after diluting it down to 43% we add a touch of sugar. The sweetening lifts the floral notes, releases an array of juniper and makes the gin even smoother. This is a typical Old Tom with flavours amped a little higher on the scale but overall a smoother and richer result. Delicious stuff! PWS

    Hernö Old Tom Gin is full-bodied with woody spice. Followed by bright, juicy, juniper and floral notes. Super-smooth texture with a light sweetness and botanical notes. An array of juniper, green and crispy, followed by notes of pine flowers. A floral sweetness combined with woody spice and long-lasting juniper characterizes Hernö Old Tom Gin. HERNO

    Williams Paola Medina Amontillado de Anada 2001 500ml
    ABV 20%. Only 750 litres bottled. After delicate fermentation (17-22 degrees), the original Fino was aged biologically at 15.5% and later re-fortified to 18%. Later amontillados (after 2003) have not been re-fortified at all. This, Paola's first Amontillado, was aged biologically for 10 years, by which time it had naturally evolved into a developed Fino without flor, and was classified Amontillado, re-fortified and aged oxidatively.

    Supremely elegant, mineral and vibrant with great complexity. Brilliant amber in colour, very complex aromas, dry in the mouth, mineral, rounded and persistent. TSA

    Super deep and complex, rich and saline, with a pure developed perfume. Mapled acorn-rich, lightly glyceric, deeply spiced, strong at the rim, releasing to an ethereal boof from a structural base. Fine glazed toffee nut, orange blossom, sunflower and pumpkin seeds, dried chestnut honey, toasted hazelnuts, delicate tangerine caramel, brandied citrus, sandalwood. The acidity itself is incredibly complex, carrying brine and rind, fine old wheat and praline in a gloriously patinated, running mouthfeel. TSA

    Audemus Sepia Amaro 700ml

    Sepia Amer is a contemporary aperitif made in Cognac. An homage to the French-style bitters of bygone years.

    With a base of roasted French chicory, which provides a full-bodied and lightly bitter canvas, Sardinian myrtle (tannic and spicy), fresh seasonal oranges (smooth and aromatic), angelica root (earthy and bright) as well as a handfulof other botanicals are painted together to create an intricately modern, bitter-sweet spirit.

    The result is a tension between the earthy – roasted flavours of chicory and myrtle and the ethereal brightness of orange.

    Sip Sepia over ice, in a light beer as is the tradition method in France, or in cocktails.

    Half of the grapes are late-harvested at the end of October with more or less consistent development of the Noble Rot; the other half is left to dry on the vine. Spontaneous fermentation of the must in French oak barrels and subsequent maturation in the same barrels for at least 20 months. Additional 24 months of ageing in bottle.     The first rule of Ester: charismatic flavour, and lots of it. The second rule is balance: no one component steals the show. Clark and Kovner bring a chef’s mentality to fine-tune the scale between big flavour and textural elements.

    Mandarin! What a star.

    Ester Dry, and the Marrickville distillery’s own mandarin cordial, made using whole mandarin shrub including the skin, acid and sugar for balance. Essentially, this is a Gimlet ready to go, and so is designed to be served straight-up (at about -10 degrees), but the Ester team tell us this also works well served long with soda or Prosecco. We're definitely up for that, but it's so delicious, we're thinking it would be dangerous!

    Albero 4/34 bota seleccionada Manzanilla en rama (saca de deciembre 2022) 500mL

    Albero is the passion-project of local Spanish importer, Scott Wasley in conjunction with famed Manzanilla Bodega, Delgado Zuleta, and more specifically, a separate 275 year old solera called Barbiana solera - purchased in 1978 and kept separately ever since. Essentially, each year Wasley is given access to the solera to put together his own blend from this amazing vinous resource. In the first year, the blend was a mix of 5 of the 34 bota. That wine was a revelation, the en rama or non filtered Manzanilla is, in and of itself, such a departure from the water-clear, racy salty sherry we've become accustomed.

    The en rama element means the wine is brassy golden in colour signalling a rich and earthy vibe running from aromatic through to the textured palate. The 2022 version is another beauty but it's different to previous years. Richer, more masculine and boasting a deep seated resonating set of flavours. There's a beautiful aromatic of orange and lemon rind, whiskey esthers and retaining an unmistakable spary of the ocean sewn into every mouthfull. Like hot sun drying salt and sand on your skin in the height of summer. MICHAEL MCNAMARA, PWS
