Champagne

The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.

The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.

In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Grapes
White: Chardonnay
Red: Pinot Noir, Pinot Meunier

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

  1. Lallier R.020 Brut NV
    Lallier R.020 Brut NV
Sourced predominantly from the 2020 harvest, which makes up 81% of the blend. For the first time since the creation of Réflexion, Chardonnay dominates the blend at 51%. Grapes were sourced from over 50 crus within Côte des Blancs, Côte de Sézanne and Montgueux for the Chardonnay, and Vallée de la Marne, Montagne de Reims and Côte des Bar for the Pinot Noir. An early harvest, starting in late August, yielded a superb quality of grapes, combining delivering intensity and freshness. The resulting base wine is strong, elegant and persistent, with a high maturity.

  2. Brocard Pierre Champagne 'Tradition' NV
    Brocard Pierre Champagne 'Tradition' NV
Brocard Pierre's entry-level and only blended-grape expression of Champagne, Cuvée Tradition Brut, spends three years on the lees in bottle before release, which in our opinion, makes it one of the best quality-for-value wine of Champagne.

The Tradition is made of Pinot Noir (80%), Chardonnay (10%) and Pinot Blanc (10%) grapes from vineyards planted on clay-calcareous soil near Celles-sur-Ource. 2018 vintage reserve wine makes up the dominant base, while 30% comes from different réserve vintages. The juice was fermented in oak (15%) and stainless steel (85%) at controlled temperature. The wine then spent 4 months in stainless steel, and it was aged on lees for 2.5 years. It has 6g/l of dosage.

A flattering nose dominated by the Pinot Noir. Good harmony in the mouth, strength associated with freshness but not heavy accompanied by a slightly mentholated finish. Ripe citrus. Unctuous mousse. Chalky, mineral and saline and mouth coating. Generous autolitic notes.

  3. Thierry Fournier Blanc de Blanc NV
Thierry Fournier Blanc de Blanc NV
Julien explains that the Marne Valley vines sit in clay limestone soils, often giving richer Chardonnay notes than fruit from the Cote de Blancs. That said this is still very, very precise and fine with a rich mid palate for sure but then a precise, linear finish. To describe the flavour profile as ‘Chablis with bubbles’ would be perhaps to over-simplify things but this certainly makes for a sleek yet flavourful NV. Importer CellarHand

The blend is 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier, 80% of which is from the 2004 vintage, while the rest of the wine is composed of Pinot Noir and Chardonnay reserve wines.

  5. Delamotte Brut NV
    Delamotte Brut NV

Bright straw. Vibrant aromas of lemon pith, pear skin and honeysuckle, with a chalky topnote.  Dry, sharply focused lemon and lime flavors become deeper with air and pick up brioche and ginger nuances.  Firm, chewy and dry, finishing with very good clarity and stony persistence. JOSH RAYNOLDS

Pillowy and charming, the latest rendition of Delamotte's NV Brut offers up attractive aromas of orchard fruit, fresh bread and citrus oil. Medium to full-bodied, seamless and elegant, with a pretty pinpoint mousse and lively balancing acids, it's drinking well out of the gates but will also develop gracefully for a few years in the cellar. WILLIAM KELLEY, Wine Advocate 2021

The Delamotte NV Brut blends approximately 55% Chardonnay with 35% Pinot Noir and 10% Pinot Meunier. It is clear, round and spicy on the predominantly fruity and vinous nose with its delicate chalk and hazelnut flavors. On the palate this is a lithe, finessed, fresh and elegant Brut with good structure and a pure, salty-mineral and cleansing finish. The mousse is highly delicate, the whole performance almost filigreed yet well structured. This is a delicious Brut STEPHAN REINHARDT

A cleverly orchestrated reductive edge to the nose, this has a layer of toasted cashew ahead of citrus, peach, spice, fine cherry and raspberry fruits. The palate's nicely crafted to deliver an even and smooth impression. Red fruit flavors run long and smooth, with some fresh bread dough notes too; nicely yeasty to close. JAMES SUCKLING

60% 2008, 40% 2007 and 2008; majority from ‘Le Mont-Ferré in Vertus; aged one year in barrels and 2.5 years in bottle; 6g/L dosage; DIAM closure.
Veuve Fourny encapsulates its philosophy of purity and precision right from the very first cuvée of the estate, the most challenging feat of all for any champagne house. Crunchy granny smith apples, refined white peach and taut lemon fruit cascade into a very long finish of salty minerality and ultra-fine bead. Beautifully crafted, pure and beach-fresh. TYSON STELZER, The Champagne Guide
Plenty of forest berry pips and granny smith apple fruit in this: deep and complex-smelling but also full of sea-spray vitality. Lipsmacking, complex and pippy fruited in the mouth, with corella pear crispness and a long dry finish. Mouth-sucking and moreish to close. 9/10 - how much I like it. TIM WHITE, Australian Financial Review
(mostly chardonnay, with a bit of pinot noir):  Light, bright gold.  Nervy, precise scents of lively citrus zest, green apple and honeysuckle.  Vibrant and deep, with very good clarity to its mineral-accented lemon, orange and orchard fruit flavors.  Picks up a deeper fig quality and closes on a sappy, vaguely saline note.  The vivacity of this Champagne would make it a great companion to sushi or simple shellfish dishes. 9. Bollinger Special Cuvee (750ml)
    Bollinger Special Cuvee (750ml)
The NV Brut Special Cuvée is fabulous. Hints of pears, pastry crust and hazelnut lead to an expansive core of fruit. There is plenty of the signature Bollinger oxidative style in this rich, enveloping Champagne. Once again the Special Cuvée is one of the best Champagnes in its price range. ANTONIO GALLONI

… The complexity and richness of Special Cuvée is unparalleled among the entry non-vintage blends of every Champagne house, short of ascending to the mesosphere of Krug. Its grand recipe explains why, built on incredible depth of 50%-60% reserves. Triumphant complexity is a given at Bollinger, but it's the dynamic freshness and vitality that really set it apart as one of the most affordable Champagne benchmarks. (96) TYSON STELZER

Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy  mousse, it's a charming, characterful wine that proves that Special Cuvée is firmly back where it belongs. 10. Andre Clouet Silver Brut Nature NV
Andre Clouet Silver Brut Nature NV

Jean-Francois Clouet's zero-dosage ideal is realised with magnificent clarity here.  Such is the concentration and richness of his pinot noir that it has absolutely no need for any sweetness.  The bouquet is delightfully fresh, lifted, pure and expressive, with lemon zest, yellow mirabelle plums and red apple fruits.  The palate follows impeccably, showcasing the concentration of Bouzy with exceptional purity and focus.  Its barrel work blends impeccably contributing nuances of nougat, brioche and honey.  Succulent yellow summer fruits pull seamlessly into a crunchy finish of red apple and lemon zest, concluding long and refined, with refreshingly taut acidity and soft, chalky minerality.  Classic Bouzy of the finest order. TYSON STELZER, The Champagne Guide

Light yellow-gold. A highly aromatic nose displays lemon zest, fig, pear and ginger, with a bright mineral overtone. Tangy and precise, offering a complex blend of lime, white flowers, quinine and dusty minerals. Juicy, tightly focused Champagne, with nervy acidity adding cut to a long, sappy finish. This wine reminded me a lot of an old-school Chablis. JOSH RAYNOLDS

The NV Brut Nature Silver is naturally a very focused, driven wine given the no-dosage style. This shows wonderful nuance and depth all the way through to the long finish, with bright aromas and flavors but less of the toastiness than some of the house's other wines. The mousse and finish are both utterly impeccable in their elegance. ANTONIO GALLONI

The NV Blanc de Blancs Grand Cru Brut is a clear, fresh and chalky Chardonnay from Cramant in the Côte des Blancs that opens with lovely intense and soft white fruit aromas. It is a mouth-filling, very elegant and finessed Cramant with highly digestible balance and stimulating lightness in alcohol (12%). The finish is charmingly round and fruity but also has the typical chalky texture that gives it perfect balance. This is an excellent cuvée with a delicate, salty, well-structured finish. I didn't see a lot number on the label nor on the bottle, but this should be a pretty fresh disgorgement and is mainly based on the 2013 vintage, as Jean-Emmanuel Bonnaire told me. Based on the 2019 vintage, Roederer's NV Brut Collection 244 is the finest release of the house's reimagined non-vintage Brut to date. Offering up aromas of pear, peach and nectarine mingled with notions of white flowers, beeswax, freshly baked bread and buttery pastry, it's medium to full-bodied, layered and fleshy, with a pretty pinpoint mousse, racy acids and a long, chalky finish. The quality of the base vintage really shines through. WILLIAM KELLEY

The NV Collection 244 is gorgeous. Bright and focused, with a lovely cut, the 244 is immediately captivating. Dried pear, chamomile, herbs, mint and crushed rocks abound. Based on the 2019 vintage with 36% perpetual reserve wines from vintages 2012-2018, this vibrant, wonderfully crystalline Champagne impresses from beginning to end. Saline notes extend the finish effortlessly. ANTONIO GALLONI

The first impression is as invigorating as a sea breeze. I love the interplay of mirabelle, grapefruit and lychee fruit with minty freshness and waxiness from lees contact. And all this is welded to a beautifully proportioned palate with plenty of structure, the acidity bright and the mousse animating. Very salty finish that pulls you back for more. A cuvee of 41% chardonnay, 33% pinot noir and 26% pinot meunier. Of these, 15% fermented in oak and 85% in stainless steel. The final blend contained 36% reserve perpetual and 10% reserve wines of the 2012 - 2018 vintage from oak. JAMES SUCKLING

It has a fine and refined mousse, and the palate is supple and inviting. Medium-bodied and elegant, with a ripe core, it has a delicate salinity to balance its freshness and has an attractive, lightly tannic feel while retaining a refined and precise profile. Release after release, year after year, I have always marvelled at the lemon blossom freshness that Clouet manages to capture in pinot noir from two of Champagne's most powerful terroirs.  Here it is again, in a captivating interplay of fleshy mirabelle plums, white peaches, crunchy golden delicious apples, and even a hint of pepper.  Wild honey and mixed spice join the maelstrom along the way, gliding obediently into a well-defined finish of soft minerality and integrated dosage.  TYSON STELZER, The Champagne Guide

The NV Brut Grande Reserve offers up layers of mineral-infused red fruits on a silky, mid-weight frame, with gorgeous length and a refined, subtle mousse. This impeccable, elegant wine shows terrific overall balance as well as complexity. I loved it. ANTONIO GALLONI

The effusive nose of candied citrus, ripe pear and brioche pulls you into this fresh and creamy champagne that hits all the pleasure buttons for a non-vintage Brut. Then the chalky freshness at the finish pulls you back for another sip. Excellent balance! 100% pinot noir. JAMES SUCKLING

A complex, reliable Champagne that would show well in all occasions thanks to its freshness and class. Drawing on all three grapes (chardonnay, pinot noir and pinot meunier), this has a complex grilled-nut and autolysis character overlayed across red berries and citrus fruits. Definitely a lot of reserve wine character here. The palate delivers lemons, grapefruit, peaches and mangoes in a refreshingly pure, fleshy style. The bright acidity, handy balance and tannins smoothly frame the finish JAMES SUCKLING

One of the great signatures of the region, its calligraphy flowing with elegance, panache and balance, the last reflected in the equal proportions of the three great varieties of Champagne. A flamboyant straw gold lustre, and an immediately seductive nose, encyclopaedic in its indulgence. Nougat, praline, white pepper, spice and nectarine were first to the page for this taster, but there is much more behind that, the sugar discrete yet edifying, the long yeast ageing responsible for a happy and altogether luminous marriage of power and finesse. Consistently excellent. SIMON FIELD MW, Decanter

the wine wafts from the glass with an alluring bouquet of green apple, brioche, pastry cream and buttered toast. On the palate, it's medium to full-bodied, impressively layered and complete, with a crisp but fleshy core of fruit, a youthfully frothy mousse and bright acids, concluding with a delicately chalky finish. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. While it will be drinkable on release, it will reward some bottle age too. WILLIAM KELEY

Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. It is a lovely entry to the range to enjoy now or over the next 6-8 years, and I love this as an aperitif style. JEB DUNNUCK
