    The impressive line-up is opened with the pale-colored NV Manzanilla Deliciosa, which is produced with Palomino grapes from the Miraflores vineyard and aged for five years under yeast. It is a finer version of La Guita, easy to drink, with a sweet note of apples in the nose, a polished and gentle palate, ending with a saline touch. Drink 2013-2014.     With six centuries of sherry production under their belts, Valdespino lay claim to being one of the oldest sherry bodegas in the region. The heart of Valdespino is their vineyards. One of the few bodegas to release single-vineyard wines, their Macharnudo holding is one of the grand crus of Jerez at the highest altitude and located on the famous, and sought-after bright white Albariza chalk soils. From their savory and fresh Manzanilla Deliciosa and Fino Inocente, to their unctuous and intense Solera 1842 and Pedro Ximenez wines, the quality is world class and the bodega still ferment a proportion of their wines in wood, adding layers of complexity to the finish product. One of the few estates that age in solera far in excess of the DO regulations for all their styles of sherry.
    This is an impressive start to a stellar line-up of sherry. You can be guaranteed that if you see the Valdespino logo you are going to be a happy little camper.

    It's a juicy, fresh Prosecco from the cold upper reaches of the alps of the King Valley, Victoria and it delivers everything you could want in a super smart package. A touch of spearmint on the nose, crisp green apple and a hint of fresh sliced tree fruits. The palate opens with a hit of sherbet flavours that are driven through by a bright, creamy and crackling fizz. This is going go down as easy on its own as it would in a spritz. A real crowd pleaser here.

    STAGE 7 - INDIVIDUAL TIME-TRIAL - NUITS-SAINT-GEORGES > GEVREY-CHAMBERTIN 25.3 KM

    This sparkling Burgundy (not to be confused with the old term for Aussie sparkling red) is made entirely from Chardonnay and, honestly, it's a mystery as to how something this good comes at this price. The wine is produced by an estate which is over 100 years old, from premium vineyards and spent 9 months in bottle developing a gentle complexity before release. Light, crisp and fun, it's a fizz which won't break the bank and seriously over delivers.

    OK so its not the usual Champs-Élysées finish and this stage isn't even the finish line but we have to have a sparkling at some point. This is cracking stuff, unbelievable good value for the money, lovely fruit but crunchy and dry. Perfect to wet the whistle after a quick sprint.

    Yalumaba is a force to be reckoned with and a recent chat with the team there left us pretty excited about what is going on. This was one of the highlights of that tasting, and we were throuroughly impressed. The base wine is over 40 years old, the finished wine has an average age of 15 years. Deep sienna brown colour, with distinct green olive edges, showing its great age. Made from shiraz, grenache and other Portuguese varietals.

    The medium amber-hued non-vintage Museum Reserve Antique Tawny, which has had more than 15 years of oak aging, is a sensational fortified that could easily be confused with a high quality, 20- to 25-year-old Tawny Port. Delicious notes of prunes, sweet raisins, over-ripe strawberries, and caramel soar from the glass of this incredibly intense wine. 96 Points, ROBERT PARKER, The Wine Advocate

    The 'MVSA' is made from the tradition Cava varieties Macabeo, Xarello and Parellada at the respective ratio's of 35:30:35%, the wine has seen 24 months of lees ageing and bears 9.5 g/l of residual sugar, but has the acidity to clean up the tail; it is a stylish and satisfying wine of great value. It is pale in colour with plenty of bubbles showing aromas of apples and pears, toasty bread and white flowers balancing the right amount of bubbles and acid. There is pure apple on the palate with minerals and lemon sherbet on the finish; it is a very cooling and refreshing summer drink. PWS

    Now this is a Sicilian, family-run winery, and while we might make wry obs when we put the word ‘Sicilian’ together with the word ‘family’, and given that not too far inland is the town of Corleone… the real family story here is the remarkable and durable legacy of the founder, Vittorio Curatolo Arini. In 1875 ‘Vito’ decided to add Arini to his name in order to stand out, as he was about to embark on quite the gamble for a young man. Vito, a generational grape grower, founded his Marsala business by persuading the bank to support his proposal to build a full-on winery amidst the family vineyards on the outskirts of Marsala. Right from the start, Vito did things with care and style, including simpatico building design (rather than merely functional), signalling his serious intentions, and laying the foundations for today’s business. Not surprisingly, he and his Marsala wines did quite well!

    This is outstanding value PX with rasins, Christmas spice, grilled walnut in a lovely rich yet fresh frame. Don't get us wrong, it's sweet and delicious but still comes of with some nice bright citrus peel and orange fruit. Yum!

    Pomarina takes its name from the Latin word for apple; Poma. In autumn, organically-grown apples are carefully selected and harvested from El Gaitero's own orchards and local growers, which are regulated under the PDO Sidra de Asturias

    Golden with straw/yellow hue. It's floral, skinsy, deep and open in style. There are sweet, nutty, savoury and bitter elements. Abundant small bubbles add to the skin richness, mouthfeel and weight. The freshness of air-dried-apple granola in the cool of morning jostles with the perfume heft of a muggy wheat field after rain. Skins, then seeds and later, a touch of apple core bitterness gives rim to a mouthfeel of brilliant balance, which holds beautifully and releases with a delicate acetic rinse. Apple poetry!

    These days the free run juice is allowed to oxidise and is fermented mostly in large old oak, with a small proportion in tank and inoculated with approximately 5 per cent of the recommended dose of QA23 (a vinho verde isolate, which produces a delightful tang). The low dose is used so that we get a long slow fermentation with a large number of generations of yeast. In this way, the yeast begins to find the ethanol toxic and produces mucyl polyproteins and gucyl polyglycerides.

    Kate Goodman assisted with the pressing cycle, which we still use. The early vintages were tank fermented using EC1118 (safe yeast). The dry wine was sent to small old oak with no added sulphur to go through malolactic fermentation.The components in larger old oak are inoculated with small amounts of fermenting juice from the tank fermentation. They run a ‘solera’ of sparkling base in large old-oak, which contains wine from each vintage going back to 2OO7. This gives important complexity to the final product.

    Jansz is part of the Hill Smith Family Vineyards (YALUMBA) and was one of the early sparkilng wine labels in Tasmania, stemming from a short lived relationship between Heemskerk and Louis Roederer. JAMES HALLIDAY\n\nNatalie Fryer is the winemaker here and for the Dalrymple wines. She is in Tasmanian to oversee the vintage. The grapes are crushed in Tasmania but the fermentation and finishing of all the wines is completed back in Anguston. PWS\n

    Luscious and sumptuous, the inviting bouquet shows dried fruit, toffee and potpourri aromas with a good seasoning of cake spice. The palate delivers creamy mouthfeel with seductive sweetness, well framed by juicy acidity, finishing delicious and immensely satisfying. Aged using a Solera system with an average age of 7 years.     Christmas in a glass! Rich and intense with apricot and marmalade characters. This fortified Pedro Ximénez was made from grapes grown in one of the last remaining Pedro plantings in the Barossa Valley. Amazing!

    This is a bit of a staff favourite too. A few of us sweet tooths are big fans of this bad boy and this is a very cool interpretation that isn't quite as intense concentrated as its orginators in Spain but is all the better for it. A little lighter on its feet and that's the way we like it.

    Third generation vignerons, the Pinons have 25 hectares in Vernou-sur-Brenne. 50% of their production is sparkling and 50% still wine with nothing sold off to the négoce.

    We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.

    Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean  but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

    Canonita! What is it? Think Aperol but better. Ok. Bold statement but this stuff is absolutely delicious. It's made from the best organic Canoneta oranges from Mallorca's Sóller Valley.

    The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Thanks to its unique terroir it is the centre of citrus cultivation in Mallorca for over  a  1000 years and the valley is theoriginal home of the highly aromatic Canoneta orange, considered the "queen of oranges".

    Carefully crafted by Antonio Nadal, Mallorca's oldest and most renown distillery, the Canoneta essence is blended with white wine and refined with a secret selection of herbs from our beautiful island.

    Siren song aromatics of strawberries and cream, a little tarragon and mineral and maybe a little vanilla lead you head first into the glass. So enticing and welcoming and it continues on the palate with the same ebullient fruit held within a soft and pillowy mousse creating an almost sensual decadent impression. Alongside that though is real energy and vigour elevating the fruit and spice (and a little sage) element in the wine. It's so beuatiuflly put together this wine and would leave a number of it's Champagne cousins for dead and ashamed of their pricing. Gorgeous sparkling. MICHAEL MCNAMARA   


    One of the crew called this “soft and mellow” I can see where that comes from, it certainly has a lovely mouth filling quality and all those billowing soft bubbles provide such a sensual cushioning effect, but the wine lacks nothing for racy energy either. I don't think its soft, I think it's lush!
    Also, I love the fine chalkiness that punctuates the fruit. Like its BdB sibling the lights are flashing and the sirens are cranked up, they don’t shy away from the winemaking and let’s be honest, that’s what makes Champa… sparkling wines like this so exciting. Even with that distinct autolytic creaminess the wines overall impression is one of flirtatious elegance. It is my pick of the two, but only just, and it pips its sibling on refinement if not substance. ROSCOE

    This is a stripped-down version of the classic Italian Amaretto, but with an Australian twist. It was a blast to try the Naked Amaretto from White Possums spirits with the guys at Mind & Spirts Co. I have always been a fan of Amaretto and this is a delicious and fresh version that is perfect for sipping or in a bright and cheery Amaretto sour. The best thing about this product is it is all local. The crew at White Possum being Amaretto fans themselves decided it was time to make their own. Sourced from peaches on the NSW boarder they smash apart Australian grown bitter almonds then cook and infuse them in spirit for weeks. Just a pinch of wild Strawberry Gum leaves, harvested from outback NSW, adds an extra floral boost and a lovely lift. This is wickedly good stuff and we are hoping to grab the full range of White Possum spirits in store as soon as we can.MYLES, PWS

    Mittnacht Freres have been producing biodynamic wines for quite some time and are well known for their refined wines. They own some parcels in the Grand Crus like "Rosaker" or "Osterberg". We are looking forward to introducing more of their range some time soon.

    This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.

    Subtle sparkling with notes of pears, apples and peach, on a festival of light and very elegant bubbles. The palate is dry, notes of granny smith apples and hazelnut, built around a nice, ripe acidity. Delicious festive number !
