      Dolin Vermouths are notably lighter, drier and less pungent than their larger commercial counterparts. The particular mixture of plants found near Chambéry give a fresh, restrained and elegant nose, with a subtle, complex bittersweet palate. Even the Blanc and Rouge retain great balance, with the sugar never cloying, and just enough bitterness to whet the appetite. Each can be enjoyed as aperitif on ice, with a twist of citrus, or in a broad array of traditional cocktails.

    Classic is red in colour with a much warmer spice range. It has loads more orange-peel flavour, again, cinnamon before cardamom and a sweet, almost strawberry, smell. It has a fuller mouth feel owing to more sugar, rich exotic elixir with a note of toffee. I also want this just on ice – maybe with some ginger beer thrown in. BEN KNIGHT, The Guardian

    The Apertif Vermouth uses fully fermented shiraz grapes. Prominent botanicals include orange zest, bay leaf and gentian root. This mix is designed to be savoured solo pre or post dinner, served over ice or chilled with a slice of orange. For a twist, it also works beautifully with Calvados.

An intense, lingering taste with fresh, fruity characteristics. This dry vermouth is extremely complex yet pleasing and elegant with notes of Iris Florentina and bitter orange.   4. Primitivo Quiles Vermouth Rojo 1L
    Primitivo Quiles Vermouth Rojo 1L

    A style first made by the Greeks in the time of Hippocrates, and flavoured by the Italian herb of the same name Vermouth. Primitivo Quiles have made this wine since the 1920s. It's bottled at 15% alcohol, which is 3% natural from fermentation, and 12% of fortification. 9 degrees of potential alcohol are unfermented, realising 150g/l of residual sugar. The wine base is Moscatel, flavoured with aromatic natural herbs - wormwood, sage, fennel, ginger, cardamom, and clove. This version is called 'Rojo' as the use of the Arrope (cooked sweet must) gives the vermouth a reddish hue. The Arrope also contributes to the sweetness of the wine.

    Bittersweet, soft and gently herbal with kola bitterness and perfume at back after a nice soft fruit winey middle. There's some fruit succulence, some tannin chew, and a textural progress from stony, through nutty to bitters. Great served straight up on tons of ice with citrus slices.

    Very much made in the pale, bitter and dry spectrum, this vermouth is a decent step up from the more traditional and commercial 'blending' vermouths. This is made from a base white wine of Cortese and Trebbiano with alcohol, sugar, water, an alcoholic infusion of herbs and roots, cardo gobbo di Nizza Monferrato and wormwood - the plant that defines Vermouth di Torino.

    Wonderfully golden yellow in colour with amber reflections, the aromas and palate are expressive and elegant, with marked herbaceous notes of absinthe, cardo gobbo, velvety vanilla and a touch of chamomile. We think it's best served chilled on ice. 16% alc.

    La Goya 'Goyesco' Manzanilla Vermut

    This Vermouth has been made from a selection of casks of Monteagudo Amontillado Solera, which have been used as cuvee for the production of this Goyesco Ambar Vermouth.

    After selecting the wine, we have combined it with various natural extracts picked by our Enologist in order to achieve a perfect balance in terms of colour, bouquet and taste. Some of these natural extracts are wormwood, gentian, bitter orange peel, sage and other aromatic plants that have been combined in the appropriate proportions to ensure a different character in our vermouth. All botanicals have been macerated separately to ensure an optimal extraction of flavours and scents.

    Barbadillo 'Ataman' Vermut 500ml

    Atamán is a traditional Barbadillo brand, which was once hugely popular, but got lost somewhere along the way. Thanks to Armando Guerra, Barbadillo’s ‘special projects’ guy, it has been rediscovered as a small batch production of Vermut (note, it’s not referred to as ‘Vermouth’ in Andalusia, but Vermut). It is made using a Manzanilla base, and blended with a small portion of incredibly concentrated old Vermouth and rare vinos quinados (Quinine wines), which have been ageing in the Barbadillo cellars for circa 50 years. Vinos quinados are typically bitter, aromatised aperitivos made from chinchona bark, the main source of Quinine, which became a wonder drug used to treat malaria, among other health dispositions, in the 18th century when it was introduced to Europe. Atamán Vermut is comprised of 20 different aromatics, locally sourced from Andalusia: quassia bark (amargo), absinth, rosemary, elderberry, and of course, the defining feature of Andalusia’s foodscape – the Seville orange.

    Atamán sits up on a high pedestal as THE ultimate dirty-martini vermut. The bitter charm and savoury glory of artichoke and green olive brine balance superbly with the juxtaposing muscovado sugar, sweet Seville orange peel, and eucalyptus. This Vermut is complex, elegant, and, in its own spectacularly bitter way, loaded with charisma. By all means, pour it on ice with a citrus garnish – delicious! - but if you are going to choose one way to drink this Vermut – it is with olives and (lots of) gin!

    Not already overworked enough with his full time role as chef and co-owner of Melbourne's Embla, Dave Verheul started making vermouth in his spare time.

    Initially made in tiny batches with seasonal botanicals to match with certain disheson his menus this project soon grew in popularity.There are many local vermouths out there, but few take their role in gastronomyas seriously as Saison, realised with the idea that vermouth can be brighter andfresher, built on singular, seasonal, ingredient-led flavour profiles. Already a modern cult classic and essential to any self-respecting almost-wine range, these vermouths are always a pleasure to drink for the short season that each release is around.

    It’s Vermouth, but not as we know it. Thanks Bryan Martin, you’ve amazed us with your creativity yet again. This is a place where vermouth-nerds and sherry-nuts can unite. The base is 100% Nebbiolo, which started life as rosé and was aged under flor (like sherries from Jerez). This oxidated wine style provided the base for a tincture of blood orange, cinchona, wormwood, coriander, juniper and pepperberry leaf (enter vermouth).

    This authentic Extra Dry Vermouth di Torino is produced according to the original recipe of the Chazalettes family, who in 1860 moved from Savoy to Turin and started the production of its Vermouths and spirits in 1876. It is based heavily on the original 1876 recipe and the modern reincarnation is made under the eye of Giovanni Chazelettes, the grandson of Chazalettes’ founder. Francesca Bava (who is spearheading the brand’s revival) says the Vermouth Extra Dry was central to the family’s decision to restart production, as the recipe is “completely different to all other Vermouths on the market”.

    Canonita! What is it? Think Aperol but better. Ok. Bold statement but this stuff is absolutely delicious. It's made from the best organic Canoneta oranges from Mallorca's Sóller Valley.

    The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Thanks to its unique terroir it is the centre of citrus cultivation in Mallorca for over  a  1000 years and the valley is theoriginal home of the highly aromatic Canoneta orange, considered the "queen of oranges".

    Carefully crafted by Antonio Nadal, Mallorca's oldest and most renown distillery, the Canoneta essence is blended with white wine and refined with a secret selection of herbs from our beautiful island.
    Its beautifully fragrant with fresh crushed orange, citrus peel, delicate sweet floral notes and a gentle bitterness of fresh cut herbs. This is perfect as a spritz or even with tonic but honestly we would happily drink it with ice and a dash soda as an apertif all summer long.
