Based on the 2019 vintage, but with a preponderance of reserve wines from 2018, Agrapart's NV Extra Brut Blanc de Blancs Grand Cru Terroirs delivers notes of citrus oil, white flowers, freshly baked bread and hazelnuts, followed by a medium to full-bodied, creamy and satiny palate that's bright, lively and chalky. The NV Extra Brut Blanc de Blancs Terroirs Grand Cru is another terrific wine in the lineup this year. Chalk, white pepper, sage and mint meld into a core of lemon peel and crushed rocks. All the elements are so well balanced. An equal blend of 2019 and 2018 juice from 100% Grand Cru sites in Avize, Oger, Cramant and Oiry, the Terroirs saw natural fermentation and 100% malolactic fermentation. Dosage is 5 grams per liter. The NV Brut Grand Cellier is fabulous. Rich, ample and creamy, the Grand Cellier is so alluring from the very first taste. All the Vilmart signatures - most notably uncommon elegance - come through loud and clear. Baked apple tart, pear, spice and a hint off butter add nuance, but it is the wine's overall feel that impresses most. Readers will have a hard time keeping their hands off this seductive Champagne from Vilmart. ANTONIO GALLONI

Light,bright gold. Heady, complex scents of poached pear, vanilla, anise and pungent flowers. Fleshy but focused and pure, offering vanilla-accented orchard fruit and lemon curd underscored by chalky minerality. Finishes long and toasty, with lingering florality and noteworthy clarity. A blend of 30% pinot noir and 70% chardonnay, this has a complex and sophisticated nose that delivers peach fruits and citrus, plus some bolder yellow plum fruits too. The NV Brut Grand Réserve Grand Cru is a pure Pinot Noir from Bouzy. It's pure, fresh, fine and aromatic on the nose and round and delicate on the palate. The fruit-intense finish is chalky-mineral and stimulatingly fresh in its salty finesse and elegant yeastiness. Nice lemon juice flavors give an extra kick of refreshment. The latest release of André Clouet's NV Brut Grand Réserve Grand Cru is showing well, exhibiting a nicely integrated bouquet of red apple, ripe citrus fruit, honeycomb and blanched almonds, followed by a medium to full-bodied, enveloping palate with a fine mousse, ripe but racy acids and an elegant, understated profile, concluding with a well-defined finish. Pale gold. Fresh peach, pear and nectarine on the nose, with a complicating note of white flowers. Fleshy, plush and ripe, with strong peach and ripe pear flavors in a more powerful and less restrained style than last year's release. Firms up on the finish, picking up a mineral note and showing very good balance and length. STEPHEN TANZER

A complex, reliable Champagne that would show well in all occasions thanks to its freshness and class. Drawing on all three grapes (chardonnay, pinot noir and pinot meunier), this has a complex grilled-nut and autolysis character overlayed across red berries and citrus fruits. Definitely a lot of reserve wine character here. The palate delivers lemons, grapefruit, peaches and mangoes in a refreshingly pure, fleshy style. One of the great signatures of the region, its calligraphy flowing with elegance, panache and balance, the last reflected in the equal proportions of the three great varieties of Champagne. A flamboyant straw gold lustre, and an immediately seductive nose, encyclopaedic in its indulgence. Nougat, praline, white pepper, spice and nectarine were first to the page for this taster, but there is much more behind that, the sugar discrete yet edifying, the long yeast ageing responsible for a happy and altogether luminous marriage of power and finesse. the wine wafts from the glass with an alluring bouquet of green apple, brioche, pastry cream and buttered toast. On the palate, it's medium to full-bodied, impressively layered and complete, with a crisp but fleshy core of fruit, a youthfully frothy mousse and bright acids, concluding with a delicately chalky finish. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. It is a lovely entry to the range to enjoy now or over the next 6-8 years, and I love this as an aperitif style. JEB DUNNUCK

Clouet's rose epitomises elegance and focus, while flamboyantly celebrating the generous red cherry, strawberry, watermelon and pink pepper fruit of Bouzy.  It encapsulates that wonderful talent of pinot noir to build and rise on the finish, all the while retaining graceful precision as delicate as rose petal perfume.  Structure is fine and elegant, driven both by chalk minerality of the village and a very finely executed tannin presence.  It finishes with great length and poise of exquisite red cherry fruit.  A pristine and enticingly priced rose. The NV Brut Rosé No 3 Grand Cru is a pure Bouzy Pinot Noir that gets its beautiful intense onion-skin color from the addition of 8% red wine. The nose is rich and complex but at the same time pure and refined, with a nice chalky layer and vinous fruit intensity. Round and rich but fresh and vital on the pure and elegant palate, this is a full-bodied, pretty intense and persistent rosé to be served with main courses. Jean-Francois Clouet's zero-dosage ideal is realised with magnificent clarity here.  Such is the concentration and richness of his pinot noir that it has absolutely no need for any sweetness.  The bouquet is delightfully fresh, lifted, pure and expressive, with lemon zest, yellow mirabelle plums and red apple fruits.  The palate follows impeccably, showcasing the concentration of Bouzy with exceptional purity and focus.  Its barrel work blends impeccably contributing nuances of nougat, brioche and honey.  Succulent yellow summer fruits pull seamlessly into a crunchy finish of red apple and lemon zest, concluding long and refined, with refreshingly taut acidity and soft, chalky minerality.  Classic Bouzy of the finest order. Light yellow-gold. A highly aromatic nose displays lemon zest, fig, pear and ginger, with a bright mineral overtone. Tangy and precise, offering a complex blend of lime, white flowers, quinine and dusty minerals. Juicy, tightly focused Champagne, with nervy acidity adding cut to a long, sappy finish. The NV Brut Nature Silver is naturally a very focused, driven wine given the no-dosage style. This shows wonderful nuance and depth all the way through to the long finish, with bright aromas and flavors but less of the toastiness than some of the house's other wines. Unmistakably Cocchi in character, Vermouth di Torino is one of only two geographically protected AOC vermouths (the other being Chambery). This Storico Vermouth di Torino follows the regional tradition of using fine Moscato wine as its base, which is then infused with a secret recipe of local and exotic botanicals.

This is a remarkably complex aperitif wine. On the nose you immediately find aromas of singed orange peel, vanilla and caramel. Over time, faint menthol notes develop into aromas reminiscent of dandelion and burdock. This vermouth is very full flavored, the palate immediately detecting a bitter, earthy character which is very well balanced against the sweeter notes of licorice, orange zest and sugar. A very bold, long finish, with the bitter/sweet balance staying with you to the end.

Traditionally drunk on its own or over ice, this vermouth will also add another dimension when used as an ingredient in your classic cocktails.

Based on the 2020 vintage and disgorged in November 2022, the new release of Larmandier's NV Extra-Brut Blanc de Blancs Premier Cru Longitude wafts from the glass with aromas of sweet citrus fruit, fresh pastry, green apple and flowers. Medium to full-bodied, fleshy and enveloping, its satiny attack segues into a racy, broad-shouldered mid-palate, concluding with a chalky finish. WILLIAM KELLEY

The NV Extra Brut Blanc de Blancs Longitude 1er Cru is a powerful, ample wine. The Longitude builds beautifully in the glass, creamy and textured, with tons of resonance. Pear, white pepper, dried flowers, mint and chalk are all delineated in a Champagne that blends power and tension. This is all class. Dosage is 3 grams per liter. ANTONIO GALLONI

The NV Brut Rosé Cuvée Rubis is absolutely gorgeous. Fresh, vibrant and pulsing with energy, the Rubis has much to offer. Cranberry, white pepper and chalk add to the wine's tense, nervous personality. As always, the Rubis is a Champagne of precision and feminine grace. ANTONIO GALLONI

Bouzy and Ambonnay are the epicentre of pinot noir in Champagne, and the Clouet family is the priviledged custodian of eight hectares of estate vines in the best middle slopes of both villages.  These are rich and concentrated expressions of pinot noir, wines of deep complexity, multi faceted interest and engaging character, yet with remarkable restraint and sense of control.  Recent tastings confirm my impression that this small and relatively unknown grower ranks high among Champagne's finest practitioners of pinot noir - and expresses one of the best value of all.

STAGE 3  - FLAT MON - PLAISANCE > TURIN 230.8 KM

Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.

The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener.  Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

30ml Turin Vermouth Drapo Vermouth Bianco 16% alc
20ml Lillet Blanc
15ml grapefruit juice, freshly squeezed
1 grapefruit peel, for garnish

Combine and stir gently but patiently in a rock glass then garnish with citrus peel
