An exceptional fortified wine with plenty of depth and multiple layers that are long on the palate and deep down the throat. Walnuts, Sichuan spice, cloves, dates, tamarind and bitter red cherries with a touch of rancio. The acidity complements the fruit and extract, imparting a sense of true profundity. With an average age over 25 years, the NV Rare Topaque Rutherglen (2024 release) is an old and ethereal beauty. Waves of old furniture, leather, roasted nuts, orange peel and cold tea are all beautifully integrated. A deeply coloured wine that exhibits a dazzling array of wildly exotic fruits and herbs as well as the usual stone fruit that I expect from the style. Gloriously perfumed and so enticing. You could wear this as a perfume. People would think you are nuts, but you would smell amazing! Big, super concentrated, it hits your mouth with intent, absolutely engulfing the palate with the same heady array of character that is suggested on the nose. So much weight and richness but there is the sweep of uplifting acidity that washes away any lingering sweetness and leaves your palate feeling refreshed and enlivened. Long and stimulating across its length with a final flourish of citrus like acidity and fine saline edge. This is a wonderful bottle of wine that had me coming back to it over 24 hours or more. Wow, is it salty or is it sweet? The 2017 Recioto di Soave Le Colombare lifts up with dusty yellow flowers, dried tangerine and orange zests complemented by crushed almonds and hints of confectioners' sugar. It's silky-smooth yet not weighty in feel, with zesty citrus and tropical fruits motivated by brilliant acidity. The balance here is unreal, as the 2017 hides its 120 grams of residual sugar very well, maybe too well, making it easy to like but also dangerously easy to drink. A bitter twang of citrus rinds and hints of ginger spice linger. ANTONIO GALLONI

Sublime. A rapier-like thread of acidity compresses quince, tangerine, tamarind, truffle, cardamon and glazed stone fruits into a ball of such tension and freshness that the finish is not only endless, but uncannily dry. Coffee Cocktail: Tonka Bean . Vanilla . Coffee . Orange

Iconic 80s model asked Soho Brasserie bartender, Dick Bradsell to make her a cocktail to “wake me up & f***k me up". A shot of espresso into a Black Russian recipe, created the ‘EspressoMartini’. Ours, tonka bean & fresh vanilla––think almond & baked goods–– gently supported by fragrant orange, & cold brew coffee––to wake your senses (not f**k them up).

To serve: Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

Panettone Cocktail: The 2024 Panettone Cocktail pulls together some of our favourite Melbourne small-batch producers.

Through meticulous experimentation and refinement, we have curated an elevated recipe that incorporates the exquisite flavours of Jimmy Rum, Marionette Orange liqueur, and Pennyweight Fortified wine, infused with the essence of Panettone's delectable baked notes. The harmonious blend of citrus and baked goods in this cocktail is guaranteed to add a touch of sophistication to your festivities.

This year, we have taken a fresh approach by creating a cocktail that does not include milk, unlike our previous milk punches editions. This new concoction not only caters to a wider audience but also offers a more versatile option for all to enjoy.

The product is a perfectly clear, full-bodied, baked goods & candied fruit bomb.

Store at room temperature. Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

An exotic fruit extravaganza! Luscious and seductive. This remains totally straight, all thanks to the vibrant acidity and the purity of the flavors. Right through the very long clean finish. Textured and subtly sweet on entry there are saline notes together with a little phenolic grip on the finish, adding up to a wine with terrific cut and thrust. Amazingly, it’s almost bone dry by the time you have swallowed your first sip! A beautifully balanced and delicious wine that would work with a wide range of food from cheeses (like Comte and Ossau-Iraty) to grilled pork chops, glazed chicken or even Thai coconut curries.

The colour tells a big part of the story: deep, dark amber brown. The scent is complex, sweet and pure with walnut, honeyed fruitcake, treacle, coffee bean and vanilla. Falls like velvet on the tongue; seamless. This classification is the domain of the expert blender and the choices she makes to convey house style (elegant, fine), complexity and, importantly, freshness. Deep amber in appearance. The nose is incredibly complex and concentrated, with aromas of burnt oranges, roasted walnuts, sandalwood, dried fruit and dark chocolate coated coffee beans. The brooding and immaculate NV Rare Muscat Rutherglen (2024 release) is superbly pitched and mesmerizing, with its aged coffee grounds, roasted nut, old spice and cocoa tones brightened by cherry compote. Sanlúcar de Barrameda sits on the estuary of the Guadalquivir river with Atlantic breezes coming off the ocean. Its microclimate impregnates the yeasts growing on the surface of the Manzanilla with a rare sea salt character. Selected for its delicacy, this Manzanilla is aged under “flor” in American oak casks for five years and bottled without any treatment. LUSTAU
