    Cocchi Vermouth Di Torino (750ml)

    Unmistakably Cocchi in character, Vermouth di Torino is one of only two geographically protected AOC vermouths (the other being Chambery). This Storico Vermouth di Torino follows the regional tradition of using fine Moscato wine as its base, which is then infused with a secret recipe of local and exotic botanicals.

    This is a remarkably complex aperitif wine. On the nose you immediately find aromas of singed orange peel, vanilla and caramel. Over time, faint menthol notes develop into aromas reminiscent of dandelion and burdock. This vermouth is very full flavored, the palate immediately detecting a bitter, earthy character which is very well balanced against the sweeter notes of licorice, orange zest and sugar. A very bold, long finish, with the bitter/sweet balance staying with you to the end.

    Traditionally drunk on its own or over ice, this vermouth will also add another dimension when used as an ingredient in your classic cocktails.

    Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.

    The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener.  Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

    Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

    Now this is a Sicilian, family-run winery, and while we might make wry obs when we put the word ‘Sicilian’ together with the word ‘family’, and given that not too far inland is the town of Corleone… the real family story here is the remarkable and durable legacy of the founder, Vittorio Curatolo Arini. In 1875 ‘Vito’ decided to add Arini to his name in order to stand out, as he was about to embark on quite the gamble for a young man. Vito, a generational grape grower, founded his Marsala business by persuading the bank to support his proposal to build a full-on winery amidst the family vineyards on the outskirts of Marsala. Right from the start, Vito did things with care and style, including simpatico building design (rather than merely functional), signalling his serious intentions, and laying the foundations for today’s business. Not surprisingly, he and his Marsala wines did quite well!

    Packaged in its distinctive red label (red is for Riserva), the 2014 Barbaresco Riserva Asili represents a tremendous effort in a challenging but ultimately very rewarding vintage. This wine will be released in February 2019. The previous edition was 2011, and Bruna Giacosa tells me that it will be produced in 2016 and possibly 2017—although this has not yet been officially confirmed. In a normal vintage, production is 11,000 bottles strong, but because of reduced yields in 2014 we can expect some 8,000 bottles instead. Growing conditions in 2014 were cause for concern up until the end of August because of humidity and below average temperatures. Those conditions changed suddenly in the nick of time, bringing strong sunshine and warmth during the final stage of grape ripening. Ultimately, 2014 proved to be a long growing season with healthy fruit in reduced volume. The Rabajà cru sometimes shows a harder edge with more mineral definition. Asili, in comparison, offers gorgeous intensity and profound depth. This Riserva shows seamless integration of wild fruit, blue flower, spice, balsam herb and pencil shaving. This is a complete and complex expression with an enduring sense of dimension and structure.     The 2014 Barbaresco Riserva Asili is soft, layered and seductive, as wines from this site tend to be. Silky tannins and lifted aromatics lend finesse to this inviting Barbaresco from Giacosa. All the elements are very nicely balanced. I very much like elegance here, even if the inner sweetness Bruno Giacosa prized so much in his wines when he was alive, never materializes.     The south-facing Nervo vineyard is located at an altitude of over 300 metres, which may account for its elegance. Ernesto Dellapiana and his son Enrico produce wines with a light touch, and their Nervo is aged in concrete tanks as well as casks. The red-fruit nose is intense and pure, and the attack supple and silky. There's a taut structure here, and fine acidity that keeps it lively and peppery.     Established by Gabriele and Miriam Dalcanele in 2006, La Dama represents the new breed of winemakers in the region. Modern, fresh yet compelling wines coaxed from organically farmed vineyards in the fabled commune of Negrar. It's also pertinent to note that Gabriele spent some time making sparkling wine before starting LA Dama and is well-versed in the style. This is also no afterthought, pet nat either. He only uses the best molinara grapes off the property to make this incredibly delicious sparkling. 

    Wonderful cassis and cranberry fruit all punchy, bright, and layered with a delicate spice and chalky top note. Gentle bubbles caress with a fine film that carries pristine red fruits along. Lovely balance with a freshness and nervy energy that you expect from the style but so often don’t receive. Honestly, this is a masterclass in what pet-nat should look like – bright, crunchy, and full of life with a purity of fruit at its core.

    Nonino Amaro is made by using a blend of UE (whole grape grappa) aged in oak for five years while being infused with mountain herbs. This is unctuous, round and ripe at first but just when it's needed that tart Barbera acidity comes to the rescue, freshening the palate and propelling the wine forward revealing a lovely mineral tingle and foundation of ripe tannin in its wake.     Wonderfully mid weight, fragrant, perfumed, spiced, fruitful wine where the slightly gritty tannins tell a story that is both varietal and regional. As does the more savoury elements and those just slightly herbaceous notes that will make any Cab Franc fan smile and anyone who loves Crifra positively beam, that is the sales pitch here. This is a wine of pure pleasure, serious, yeah, but that isn't really important here. For me it is all about enjoyment with Crifra and if you love to eat and drink then this needs to be in your life. Drinking this with the right food will decrease your stress and stress is a killer, so, drinking Cifra will help you live longer. A veritable ambrosia. ROSCOE

    From a vineyard located across from Gavarini Chiniera, this is a slightly more robust and concentrated wine. The 2018 Barolo Ginestra Casa Maté sources its fruit from a position at a slightly lower elevation with a bigger component of clay in the soils. The south and southeast-facing hillside is also more open to the horizon. These conditions give the Ginestra Casa Maté a broad texture and rich flavors of black and purple fruits.     The Gavarini Chiniera vineyard is shaped like an amphitheater with thick forests at the back (which protects from cold air currents) and sandy chalk soil at 380 meters in elevation. This is a special site, and the Elio Grasso 2018 Barolo Gavarini Chiniera is always one of Grasso's most easily recognized wines. This vintage is exceptionally bright and vibrant with lifted tones of cherry, plum, blue flower and sweet blood orange. Those primary notes are framed by sensations of dusty white mineral.     The Correggia family are a small yet formidable force in the sandy soils of Roero, just west of the Tanaro River in Piedmont. After the tragic death of her husband, Ornella with help from friends propelled the wines of Matteo Correggia to even greater heights. She is now flanked by her children Giovanni and Brigitta and the wines have never looked better.

    Fragrant aromas of white flowers, citrus and pear on the nose lead into a finely textured palate. Hints of sweet almond arise. Its fresh and tingly finish with a fine phenolic chew carrying the orchard fruits into a long gentle close. GABRIELLE POY, PWS

Vigna Grande Cerzito is characterized by refined flavours of cherry, plum and chocolate and by a full and delicate structure.     Showing more oak rendering and depth, the 2019 Barbera d'Alba Vittoria (with 4,500 bottles made) exhibits a much bigger and broader style compared to the estate's steel-aged Barbera. This wine sees 18 months in barrique, with about one-third new oak. The aging process serves to flesh out the dark fruit, dark cherry and plum. It creates a wine of bigger structure too, opening it up to more food-pairing possibilities, from meat lasagna to grilled steak. MONICA LARNER

    With fruit from La Morra, the mid-weight 2018 Barolo Brunate shows a pretty softness and a delicate side with dried rose, lilac and blue flower. The wine completes malolactic fermentation in barrique and is later moved into large oak casks for aging. This dual oak treatment is part of Vietti's secret recipe for producing the silky tannins and fine texture you taste here.     The 2018 Barolo Lazzarito represents Vietti's interpretation of Serralunga d'Alba, the village often associated with the most powerful wines in the appellation. The Lazzarito completes its secondary fermentation in barrique over three months and is then racked into large oak botti for an additional two years of aging. With some 8,000 bottles produced in this smaller vintage, the wine is very indicative of its geographic origins with tight black fruit, rusty nail, blood orange and earth.     The 2018 Barolo Lazzarito is tense, vibrant and very much closed in on itself. Searing tannins and Serralunga structure dominate today. Crushed rocks, gravel, red fruit, rose petal, lavender and sage all run though this sculpted, vibrant Serralunga Barolo.     Tasting this Vigna Rionda is such a sensual experience, with the complexity you’d expect from the top-level Barolo, showing hints of iodine, dark mussels, walnuts, dark stones to the fleshy dark cherries and plums. Then it turns a little “bloody,” minty and tarry on the nose. “Dark” and full-bodied with a massive amount of small-grained tannins seamlessly knitting the fruit on the palate, driving it to a very long, mineral finish. Very tight and powerful now, yet seductively rich and full of flesh, too. Shows lots of potential ahead. Much better from 2025. It should hold well for the next 20+ years. JAMES SUCKLING

Showing the power and the determination of Serralunga d'Alba, the wine is redolent of dried berry, lots of rusty earth and fragrant red rose. These are the typical aromas of this vineyard, and this wine presents them with impeccable integration.     From the fanatical attention to his biodynamic principals (which pre-date most in the area) to his commitment to all things sustainable - a solar farm here, a passive house there. He doesn't offer any of this information with bombastic bluster, he and his partner Valeria Vigano, mention them in passing with understatement and humility. All this is starting to get me itchy to taste the wines because, there's lots of sustainably run estates in the world these days who make mediocre juice, so I'm hoping Le Cinciole the excitement from the vineyard translates to the wines. They certainly do, they are brilliant!!

    Sangiovese (70%), Merlot and Syrah. Ripe, crunchy fruit, red currants a touch of black cherry, red plums and a little white pepper spice sprinkled throughout. Lush fruits lead you in with their sweet embrace while the whole thing stays super fresh. Soft, supple tannins add real interest and give it a lovely backbone. At once completely smashable and serious enough to keep die hard Tuscan red fans very happy.

    It's beautifully perfumed, floral with bright red fruits and woodsy spice. There's a wonderful succulence to the palate with dark red fruits, cola and a touch of camphor. There's good depth, but I don't see the freshness of the best years, while the volatile acidity is problematic.     Elio Ottin is the rising star of Valle d'Aosta, the smallest of Italy's regions located in the Alps bordering France and Switzerland. Until 2007 Elio, a passionate farmer, was selling his fruit to the local cooperative, which is common in these parts due to the small land holdings and the intense labour required to work the terraced hillsides.

    Fumin is a native Valdostan variety, first recorded in 1711. It is widely grown in the upper and central parts of the valley and thrives in the cold climate. Elio dries his Fumin for one week before the wine is fermented and the grapes aren't pressed into cask for ageing until the end of January. Full bodied with intense fruit aromas of marasca cherry, blackberries and blackcurrants with hints of spice, chocolate and cigar box.

    Selva Capuzza, located at the southern edge of Lago di Garda, is a place of both incredible beauty and history. Lake Garda was a glacial formation and the surrounding area has clay soils with lots of stones and mineral salts. It is one the northernmost regions to have a nearly Mediterranean climate, where lemon trees and olive groves abound.

    Selva Capuzza takes its name from ‘Silvae’ (meaning wild place) and the Formetini family have been nurturing and protecting this wild place for over 100 years. They regard this land as a unique eco system and farm sustainably, and then some. They place enormous emphasis on the biodiversity of their land to encourage flora and fauna to flourish and no herbicides have been used since 2010. They were amongst the first wineries to track their Co2 emissions and, in the cantina, power is supplied from certified renewable sources and they only use recycled materials and lightweight bottles.

    Turbiana is the regions name for the grape that is the same as Trebbiano di Soave and the Marche’s Verdicchio. This is a classic Lugana in its most traditional interpretation: delicate, floral and fruity with notes of hay, grass, citrus and apple with a crisp, fresh finish.

    A terrific value option, the Rizzi 2020 Langhe Nebbiolo has a little spice, a little ripe fruit and a lot of easy-drinking personality. It shows cherry, sweet peach and candied licorice.
