Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Petilia Le Sepaie Irpinia Aglianico 2018100% Aglianico from clay and limestone soil in the Taurasi and Paternopoli production zones of southern Italy. The wine is aged in barriques and tonneaux for 12 months.
A complex nose of great depth, intensity and persistent flavours. There are hints of violet, cherry and wild strawberry. The palate shows great structure with enveloping warmth and smooth intense aromas of red fruit with delicate spicy notes.

Elena Fucci 'SCEG' Aglianico del Vulture 2019The 2019 Aglianico del Vulture SCEG needs a good decant or coaxing in the glass to blow off some smoky youthful reduction. Beneath awaits a wild mix of peppery herbs, blackberries, dried citrus and hints of animal musk. It’s soft and enveloping, yet quickly takes on a zesty and energetic flair, with tart wild berries and cooling mineral tones motivated by a bolt of nervous acidity. The 2019 finishes with tension and lightly-structured, leaving the palate drenched in primary concentration, as tart black currants are pleasantly offset by a hint of sweet lavender. This is only the second vintage for the SCEG, and it really shows the potential of the fruit sources that Elena Fucci is using. Granbazan Ambar 2023Etiqueta Ambar uses grapes from vineyards that are over 40 years' old, mostly in Cambados and Meao in the Salnas Valley on sand and granite soils. The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else.
