The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Dockyard Gin 500mlWe were first introduced to the distillery by Melbourne (and San Sebastian) bar owner, Gerald Diffey. He was fairly passionate about this range of gins he'd seen on a trip back to the UK and urged us to import some. We knew Gerald knew his stuff so we were interested but wary given the number of Gins in the market, but once we delved deeper into the operation and then tasted the range we were sold.
The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. Stephane Aviron Beaujolais Fleurie 2022From old vines located on the steep slopes of the highly regarded La Madone vineyard. An outstanding Fleurie that captures the beauty and elegance of the appellation and pairs it with some real depth and dimension. The floral lift amidst the black fruits gives this away as Fleurie, but on the palate the flavours expand further to reveal sage, black tea and turned earth. Daniel Bouland Morgon Corcelette 2022The "regular" bottling of 2022 Corcelette from Monsieur Bouland is another lovely example of this very strong vintage. It is deep, bright and sappy, offering up a nose of red and black cherries, sweet cranberries, vinesmoke, gamebird, a dollop of fresh thyme and a very pretty base of soil tones. On the palate the wine is vibrant, full-bodied and deep at the core, with a fine foundation of soil, bright acids, moderate tannins and great focus and grip on the long, complex and beautifully balanced finish. Of all of Daniel's outstanding 2022s, this is certainly the first cuvée I would be reaching for to drink now, as it has a sense of wide open generosity that is not evident with most of his other, more structured wines from this vintage. This is not to say that it will not also age long and gracefully, but the regular Corcelette is not going to demand cellaring time before it gives up the goods. 2024-2060. Stephane Aviron Beaujolais Village 2023Stephane's family has been wheeling and dealing in Beaujolais for generations. Pierre Marie Chermette Beaujolais Les Griottes Beaujolais 2023 375mlThis mouthwatering crowd-pleaser is named after a grove of cherry trees that flank the vineyard. The fruit is drawn from 30- to 40-year-old Gamay vines, grown in dark granite soils around the Chermette homestead in Saint-Vérand, southern Beaujolais. In contrast to his age-worthy Crus from Moulin-à-Vent and Fleurie et al., Chermette aims to produce something light-to-medium-bodied, bright and cherry-fruited with reach-for-another-glass charm.
The winemaking has remained unchanged for decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks still the order of the day. The nose is so exuberant you could be tasting out of barrel, flush with easy-going, lip-smacking red fruit flecked by red floral notes. The palate tells the same story through waves of vibrant, tangy berries and cherrystone fruit. As always, it is a delicious, moreish wine and fabulous value.
