This is 100% merlot from a 1.5 hectare vineyard located in Montravel, a sub-region of Bergerac.
The grapes are hand harvested in small lug boxes, in the cellar the bunches are destemmed and the fruits selected one by one by hand. The must is then macerated in micro oxygenated tanks, pump over every six hours, alcoholic and malolactic fermentations done in temperature controlled tanks. Aged for fourteen months on fine lees in 1/3 new and 2/3 one year old oak barrels.

This is terrific Merlot - there is even greater vibrancy and verve to the 2017 then the 2016. the fruit is pure and ripe with fresh picked plum and red cherry fruit. Some classy oak wraps gently around some pretty and lifted violet notes. and red fruits. This has plenty of fleshy fruit but in a compact and vibrant frame. There aint much merlo like this in Aus. PWS

We were first introduced to the distillery by Melbourne (and San Sebastian) bar owner, Gerald Diffey. He was fairly passionate about this range of gins he'd seen on a trip back to the UK and urged us to import some. We knew Gerald knew his stuff so we were interested but wary given the number of Gins in the market, but once we delved deeper into the operation and then tasted the range we were sold.

The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. The 2020 Ausone is stellar. Usually a showier wine, Ausone is packed with bright acids, deep fruit and tons of supporting structure. Dark red fruit, blood orange, pomegranate, rose petal, mocha and dried herbs all race out of the glass. Deep and layered, with magnificent finesse, Ausone is lights out in 2020. What a wine. Deep bright purple-red colour leading into a stylish bouquet of sweet mulberry and other berry fruits, violets and cassis, succulent and mouth-filling, with masses of fine emery-like tannins that run the length of the palate adding authority, structure, length and refreshment to the aftertaste. Really delivers as you might expect from this excellent concentrated and powerfully frame vintage in Margaret River. It’s dominant cabernet with smaller portions of merlot, cabernet franc and malbec. Typical of this wine since switching to biodynamics, it is bright and brilliant with a nervy tense energy to drive the palate. The succulent fruit is harness by fine chalky tannins and neatly played oak of which 55% was new. A wine of extraordinary elegance and poise with a few of many decades. (98) RAY JORDAN

Needless to say, Margaret River enjoyed another superb vintage with the 2022 season. Slightly cooler, Cullen report that it was a vintage of “immense perfume and texture”. The wine is a wonderfully vibrant purple in colour. The nose gives up plums, cassis, spices including nutmeg, chocolate, mocha, bay leaves, cigar box notes – think a freshly opened box of Cohiba Siglo VI – and near perfect oak integration. This is finely balanced and exhibiting immense length on a palate that sees the emergence of aniseed, mulberries and coffee beans. An alluringly supple texture with the silkiest of tannins, though plenty of them – there really is some grip here. This will easily sail through fifteen to twenty years in a good cellar. 60% Syrah 25% Cabernet Sauvignon 15% Grenache, They say “perfect with your favourite wood-fired pizza (hold the pineapple)”,  though I like pineapple on pizza. Gino D’Acampo would have conniptions.

Plenty of flavour of red and blue fruits, bay leaf, a dusting of spice. Medium-bodied, quite fleshy, some earthy/sooty tannin sweeps through it, with a soft and supple finish of blue fruits and spice. Length is moderate, but OK. Good wine. Easy to like. GARY WALSH, The Wine Front

2023 was a brilliant year for Cabernet Sauvignon and proved perfect ripening for Cabernet Sauvignon and merlot and Cullen vineyard. Made from 100% bio-dynamically certified fruit a blend of 87% Cabernet Sauvignon, 11% Merlot,1% Cabernet Franc, and 1% Malbec has created a wine of great depth supported by delicious fine grained tannins.

The wine was matured in barriques of which 20% were new. CULLEN

Sauvignon Blanc of the Year. Score awarded by the Halliday tasting team at the annual Awards judging. SW writes: Fermented in stainless steel tank (52%) and older oak (48%). Aged on full lees with no battonage. Pineapple, guava, perfectly ripe mango skin and lilikoi. Driving and elegant natural acidity and a wash of juicy tropical fruit with hints of glacé ginger and nutmeg spice. A fuzz of nettle texture and the wine finishes quite full bodied. It's a sauvignon blanc made with care, attention to detail and purity of fruit. (97) WINE COMPANION TASTING PANEL
 
This must be one of Australia’s top sauvignon blanc wines. And the value is pretty epic.

It’s got exceptional energy and persistence, a major feature is the tension in the wine, the torque of powdery pucker and the core of briny minerality. Around this, preserved lemon, a faint ginger lift, almond, attractive parmesan cheese characters, salt bush and gentle white pepper. It’s a compact and yet flavoursome white, refreshing as it is interesting and intellectual for the fanciers of fine sauvignon blanc. Cellar some too. MIKE BENNIE, Wine Front

This is a very good release. Cherry, fresh strawberry, almost a liquorice root perfume, flowering herbs. It runs tighter on the palate, with some pink grapefruit in with pale red fruits, a saline character, fine dusty peppery texture, with a finish that offers crunch and perfume, and good length. ... its straight Sancerre Blanc, a blend of parcels (limestone 45%, flint 45% and 10% marl), is fermented in tank after being hand harvested. It is a stellar ‘entry’ wine to their range.VINOUS

Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .

Flinty sparks mix with  fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. It slithers along, finishing with a mouth watering saline finish. It’s a refined and stylish Sancerre, so very damn delicious. GABRIELLE POY

This product is essentially Spring Break for your mouth, without the criminal charges and lifelong consequences.

Let’s be honest - cellos sound kinda nice and we all pretend to love them if we are on a  first date, but most of the time: BORING. Not any more. This cello is a disturbed, unhinged, raging hot mess of a drink. How, you ask? We infused zesty Australian blood orange peels with the dried husks of ancho chilli. It’s smokey, vibrant, zesty, bitter and sour.

It’s everything you ever wanted in a drink but were too self-concious and idiotic to ask for. So top it with Prosecco, top up your Negroni or drink it like a heathen - because this little number is music for your mouth. A symphony for your senses. A tango for your tastebuds. You get the drift....drink it.

Coffee Cocktail: Tonka Bean . Vanilla . Coffee . Orange

Iconic 80s model asked Soho Brasserie bartender, Dick Bradsell to make her a cocktail to “wake me up & f***k me up". A shot of espresso into a Black Russian recipe, created the ‘EspressoMartini’. Ours, tonka bean & fresh vanilla––think almond & baked goods–– gently supported by fragrant orange, & cold brew coffee––to wake your senses (not f**k them up).

To serve: Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

The 2021 Galatrona is a fine follow-up to the 2020. In most vintages, Galatrona is very showy right out of the gate. That is not at all the case with the 2021, a wine that is going to need a number of years to be at its finest. Black cherry, plum, mocha, leather, licorice and incense infuse the 2021 with tremendous complexity. More than anything else, I admire a feeling of vertical, explosive energy that catapults the 2021 into the stratosphere. This is a tremendous wine by any measure. (98) ANTONIO GALLONI

The 2021 Val d'Arno di Sopra Galatrona shows extremely focused aromas, but very generous ones all the while, with soft mint, cherry and stracciatella over a full-bodied texture with soft layers of spice and cedarwood. The wine boasts an elegantly chalky quality to the tannins, but the mouthfeel is so generous, everything irons out beautifully over the palate. It ages in a combination of new and used barrique. The aromas here are very distinct with dried flowers such as lavender and violets. Some sage as well. Black berries and black olive skin. Full-bodied yet linear and energetic with very fine tannins and fantastic length. Fresh and lively in the finish. (98) JAMES SUCKLING

The nose showcases a vast world of savory aromas, from sanguine to metallic to woody to earthy, with cranberries, currants and dark berries providing sweet contrast. A lively palate runs with the warmth of earth and just-ripened fruit, alongside austere tannins that promise ageworthiness. An absolutely acrobatic feat in Merlot. (97) WINE ENTHUSIAST

Vivid purple in the glass, gorgeous black cherry and blackcurrant aromas with touches of florality - this 100% Merlot smells wonderfully scented and inviting. Smooth, ample, really quite seductive on the palate, sensual almost in the silky but gripping tannins, beautifully ripe blackcurrant and cherry fruit and crunchy, crisp acidity that is not too sharp or too obvious but lifts the palate and gives a thrill and wonderful freshness to the overall expression. Beautifully presented, harmonious, balanced and totally enjoyable from the first to last sip. A gorgeous wine, intense yet energetic, full of flavour and textural nuance. Totally unputdownable, although with lots of potential for improvement over ageing. (97) DECANTER

The 2022 Ausone, which was the earliest-picked ever on September 5 (although that is later than Cheval Blanc) has another very intense bouquet with layers of plush blackberry, blueberry, crushed violet and incense aromas that are beautifully entwined with the 100% new oak. Hints of blood orange emerge with a few minutes in the glass. The palate is medium-bodied with silky tannins and perfectly pitched acidity. The slightly higher proportion of Cabernet Franc imparts a touch more pepperiness toward the finish. You can feel this on your tongue long after it has departed. There is a surfeit of freshness on the finish. This is an outstanding Ausone that can look forward to a very long future. (98) NEAL MARTIN, Vinous.com

Distilled using locally grown barley and Kentish water, this is as fresh and bright as a sunny spring day in the countryside. Elegant and refined gin, with a lovely, half floral, half herbal lift. I tasted it before learning what botanicals had been used in its production, and suspect its fragrant quality comes from the local elderflowers. MAX ALLEN
