Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Dockyard Gin 500mlWe were first introduced to the distillery by Melbourne (and San Sebastian) bar owner, Gerald Diffey. He was fairly passionate about this range of gins he'd seen on a trip back to the UK and urged us to import some. We knew Gerald knew his stuff so we were interested but wary given the number of Gins in the market, but once we delved deeper into the operation and then tasted the range we were sold.
The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. Cosse Maisonneuve Cahors Solis 2019Matthieu Cosse and Catherine Maisonneuve created Domaine Cosse Maisonneuve in 1999 after taking over the 5-hectare estate in the small region of Prayssac, near Cahors in the south west of France. The property was planted with 40-year-old Malbec (locally known as 'Cot') and they have now moved towards Certified organic and work with some biodynamic principles. Everything is by hand here and the wines are uncommonly elegant and round compared to the more rustic versions we are used to seeing.
No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Ronco dei Tassi Rosso Cjarandon Riserva 2018It's like a Bordelaise immigrant in Friuli. I don't mean these varieties (merlot, cabernet franc, cabernet sauvignon) are new to the area, in fact the cabernet family have been planted up here for centuries, I mean the style of the wine blends classical cabernet production - modern vinification and small oak elevage - with a local fruit spectrum which offer something different to their spirit home in France.
Middle weight. Dark cherry. dark berry and leafy aromatic with a touch of earl grey tea. Palate is clean and pure, sweetly fruited but also lithe and direct. Dark chocolate and oak splice are woven into the core of the wine. It's a lovely example, the main feature for me being that it holds excellent ripeness but is also mid-weight and cool fruited. Really delivers as you might expect from this excellent concentrated and powerfully frame vintage in Margaret River. It’s dominant cabernet with smaller portions of merlot, cabernet franc and malbec. Typical of this wine since switching to biodynamics, it is bright and brilliant with a nervy tense energy to drive the palate. The succulent fruit is harness by fine chalky tannins and neatly played oak of which 55% was new. A wine of extraordinary elegance and poise with a few of many decades. (98) RAY JORDAN
Needless to say, Margaret River enjoyed another superb vintage with the 2022 season. Slightly cooler, Cullen report that it was a vintage of “immense perfume and texture”. The wine is a wonderfully vibrant purple in colour. The nose gives up plums, cassis, spices including nutmeg, chocolate, mocha, bay leaves, cigar box notes – think a freshly opened box of Cohiba Siglo VI – and near perfect oak integration. This is finely balanced and exhibiting immense length on a palate that sees the emergence of aniseed, mulberries and coffee beans. An alluringly supple texture with the silkiest of tannins, though plenty of them – there really is some grip here. This will easily sail through fifteen to twenty years in a good cellar. A Descoberta means 'to be discovered' and the somewhat mystical label, a box tagged 1942 is a folkloric reference to an early version of a time capsule a box hidden in the stone walls of the house of Passarella containing a will to be opened 50 years hence and directing the riches of the box be re-distributed to the poor. A lovely wine supple, fleshy and spicy, with extra delicate tannin and oak. From lead-off, the cherry-chocolate fruit really shows the Dao granite, and is laden with wiry dark herbs. In the mouth, it's fleshy-meaty and mineral fresh - round with good movement and fruit-earth interplay. It has excellent presence in the mouth but is not reliant on weight for the show. Wonderfully composed, it sits and radiates, effortless in affect. Gorgeous delicate tannin is the frame, rimming the mouth and allowing the fruit and spicy acid to radiate delicately. A wonderful advertisement for varietal blends.
