Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Thanks to its unique terroir it is the centre of citrus cultivation in Mallorca for over a 1000 years and the valley is theoriginal home of the highly aromatic Canoneta orange, considered the "queen of oranges".
Carefully crafted by Antonio Nadal, Mallorca's oldest and most renown distillery, the Canoneta essence is blended with white wine and refined with a secret selection of herbs from our beautiful island.

This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.
Subtle sparkling with notes of pears, apples and peach, on a festival of light and very elegant bubbles. The palate is dry, notes of granny smith apples and hazelnut, built around a nice, ripe acidity. Delicious festive number !

The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Domaine Barmes Buecher Sands Pinot Blanc 2021The vines for this 2021 Pinot Blanc Clos Sand were planted in 2013. It was first vinified as a single vineyard in 2018. This is a granitic site, at 400m of altitude, enclosed by forest, looking south-east. Matured in a mix of stainless steel and used 300-liter barrel, because there was not enough wine to fill a foudre , this spent 11 months on gross lees. The nose is shy, with mere suspicions of lemon. The palate is sylph-like but wonderfully juicy and rounded in its concentrated slenderness. It has the richness of yeast and strikes a beautiful balance. Domaine Dirler-Cade Alsace Riesling 2022One reason I never miss a chance to visit Jean Dirler and his family is that the Dirler-Cadé estate in Bergholtz makes outstanding wines from several different Alsace varieties. Its Sylvaner, a grape often treated as an afterthought in Alsatian wine-production circles, is especially noteworthy. I do not feel that I am exaggerating when I describe it as a world-class wine the fact that it ages extremely well is an added bonus.
The Rieslings in particular are exceptionnal: impressive saline tension for the Kitterlé, all about vigor and smoky brightness for the finish, straight wine, sharp, profound, with an extraordinary persistence and intensity. The Kessler, offers a myriad of vibrant flavours, the finish is overflowing with energy and anise brightness. Santiago Ruiz Rosa Ruiz Albarino 2023A touch of skin contact and extended lees maturation gives this wine a stonier feel than the O Rosal bottling. Raised in small stainless-steel vessels to enrich the texture, it's a chiselled Albariño showing engaging purity, top notes of ripe lemon and sea spray, with plenty of surface and lingering traces of tangy acidity and chalk. Taking its cues from its granite soils, it is a cracking example of the grape and the region.

It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush.
