Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

March Premium 6-pack 2021 - Italy: North vs SouthIt's a battle royal of North vs South for our second premium pack where the only winner is going to be you! From the warm southern coast to the rolling hills of the verdant north, Italy's multitude of breathtaking terroir and incredible indigenous varieties is one to impress.
This is an exciting little pack, something a little different with some cracking little wines brand new to the country, some Prince Wine Store classics and a couple of wines, we know, you will be happily and wonderfully surprised by.
From the north we start with one of the best new wines we have seen in a while. The Battiselle le Battiselle Soave is such a beautiful Soave. This is the second vintage of this to hit our shores and we missed the tiny allocation last time but certainly won't this time. You are in for a treat as we think this is one of best Soave's, if not, best white wine from Italy in some time.
Next up is the La Dama Vini Superiore. A nuanced and pretty style Valpolicella from a modern and thoughtful producer. Also relatively new to the country this see's the skins of the Amarone ferment added to the Valpolicella to add an extra depth and richness that you do not normally see from the Classico versions.
Last is the king of red wine in Italy and the Mauro Veglio Barolo Gattera. Both the vineyard and the vintage favour this release with so much immediate appeal straight our of the gate. Veglio is turning back the use of oak and we are reaping the benefits for the change in tack. All the generosity is still there of the house style but with even more clarity and verve.
From the south we start with the Petila Greco di Tufo. This is another family estate that has only relatively recently started to bottle under their own label. This come from an elevated plot of old vines and see's some extended ageing and subtle barrel work. The zingy greco grape keeps it liveliness while the extra time in bottle has built and layered the wine.
We would be hard pressed not to include an Etna Rosso in the pack and we are so lucky that our choices here in Aus are so exceptional. Giuseppe Tornatore spent much of the early 2000s sourcing some of the regions best plots which has proved to be an insightful move with, now some of the most highly sought after vineyards in his holding and what seems like an unstoppable thirst for his wines.
The last wine of the list is a real treat and was such a surprise for us in a recent tasting. This hails from foothills of Mt Vesuvias and in fact the vineyards overlook the famous ruins of Pompei. Unsurprisingly the wine reflects in origins and is an intriguing blend of piedirosso and aglianico that greets you with its smokey and charred fruit overlayed with dried and broody fruits.

Quintodecimo Taurasi Riserva Vigna Quintodecimo 2017The soil is made up of expandable clay rocks very rich in limestone. Quintodecimo Taurasi Riserva Vigna Grande Cerzito 2017The soil, created by ashes and pumices, is volcanic, without limestone, well drained, deep and with rough texture. These conditions allow an elevated availability of oxygen for the roots. The vineyard, situated at 440 metres of altitude with a slope of 15%, has a density of 5.000 plants per hectar and is cultivated with a cordon spur training system. Vigna Grande Cerzito is characterized by refined flavours of cherry, plum and chocolate and by a full and delicate structure. Great longevity, it becomes even more delicate and elegant with the passing of the years complementing with fresh notes of mint, eucalyptus and incense. Chalmers Aglianico 2019Destemmed, wild fermented, left 30 days on skins, pressed to chestnut botte. The classic southern Italian red grape is incredibly well suited to the climate and soils of Heathcote. Each vintage re-affirms that. A complex, fleshy expression of the grape is wrapped in black cherry, white pepper, allspice, dark chocolate, licorice and a gentle savouriness. Very cool wine. Almond oil and citrus pith on the nose slowly open to reveal orange blossom, green mandarin and saline notes. Some lovely phenolic grip add texture webbing the pristine fruits on the palate together nicely. It starts tangy and fresh with an array of citrus interspersed with rocky notes and green apple fruit. Super refreshing with a long palate that sizzles along to a long supple close.

Petilia Le Sepaie Irpinia Aglianico 2018100% Aglianico from clay and limestone soil in the Taurasi and Paternopoli production zones of southern Italy. The wine is aged in barriques and tonneaux for 12 months.
A complex nose of great depth, intensity and persistent flavours. There are hints of violet, cherry and wild strawberry. The palate shows great structure with enveloping warmth and smooth intense aromas of red fruit with delicate spicy notes.

Petilia Quattro Venti Greco di Tufo Riserva 2020Quite a different beast to the 'entry' Greco offering. There's a palpable intensity, structure and savouriness to the wine. Peach, lemon curd and a refreshing saline grapefruit acidity all in the mix along with a little nutty nuance. The texture starts of creamy and round but is quickly usurped by a wall of drying, pithy tannin which draws everything in at the back leaving dry and lightly bitter, pleasing finish. Elena Fucci 'SCEG' Aglianico del Vulture 2019The 2019 Aglianico del Vulture SCEG needs a good decant or coaxing in the glass to blow off some smoky youthful reduction. Beneath awaits a wild mix of peppery herbs, blackberries, dried citrus and hints of animal musk. It’s soft and enveloping, yet quickly takes on a zesty and energetic flair, with tart wild berries and cooling mineral tones motivated by a bolt of nervous acidity. The 2019 finishes with tension and lightly-structured, leaving the palate drenched in primary concentration, as tart black currants are pleasantly offset by a hint of sweet lavender. This is only the second vintage for the SCEG, and it really shows the potential of the fruit sources that Elena Fucci is using. Quintodecimo Aglianico Terra d'Eclano 2021The 2021 Terra D'Eclano is remarkably expressive, with a vivid blend of wild strawberries, violets, lavender and hints of wet stone. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
