Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

The NV Collection 244 is gorgeous. Bright and focused, with a lovely cut, the 244 is immediately captivating. Dried pear, chamomile, herbs, mint and crushed rocks abound. Based on the 2019 vintage with 36% perpetual reserve wines from vintages 2012-2018, this vibrant, wonderfully crystalline Champagne impresses from beginning to end. The first impression is as invigorating as a sea breeze. I love the interplay of mirabelle, grapefruit and lychee fruit with minty freshness and waxiness from lees contact. And all this is welded to a beautifully proportioned palate with plenty of structure, the acidity bright and the mousse animating. Very salty finish that pulls you back for more. A cuvee of 41% chardonnay, 33% pinot noir and 26% pinot meunier. Of these, 15% fermented in oak and 85% in stainless steel. A pale silver/straw hue, the NV Champagne Collection 244 has 2019 as its base, with 42% Chardonnay, 26% Meunier, and the rest Pinot Noir. Expressive on opening, it's fresh with a beautiful floral perfume and reveals pure notes of red berries, cherry, fresh peach, and a lovely fresh bit of primary fruit. It has a fine and refined mousse, and the palate is supple and inviting. Medium-bodied and elegant, with a ripe core, it has a delicate salinity to balance its freshness and has an attractive, lightly tannic feel while retaining a refined and precise profile. Laherte Freres Rose de Meunier NVThe NV Extra Brut Rosé de Meunier is very similar to the Ultradition version (the blend of vintages changes slightly) but bottled with 2.5 grams per liter of dosage. Lilbert Fils Extra BrutSTAFF PICKS 2024 - ALEX WILCOX
The Prince Wine Store team uncovered the Lilbert on a recent trip to France and we were very lucky to be given a small allocation for Australia. This tiny producer (3.5 hectare) is a great addition to our Champagne portfolio. For me this is what champagne is all about - pure fine and elegant with an underlying power - this is truly an anywhere, anytime great bottle of Champagne. If you haven't tried it, you really should.
Bertrand Lilbert's crafts his wines from 100% Chardonnay grown in the Northern part of the Cote du Blanc, the NV is a blend of 50% reserve wine and 50% from 2016 for this most recent bottling. As small grower Champagne prices continue to skyrocket this cuvee is great value for money and will stand up against many bigger name Blanc du Blanc. Elsewhere, these wines have a cult like following, something we hope to help build here. This will be a feature of my Christmas Day in Tamworth. ALEX WILCOX
Lilbert-Fils is a small, slightly under-the-radar grower in Cramant with a loyal following, and it's easy to see why. With 50% of the blend for the first wine of the house coming from a perpetual reserve of Cramant Chardonnay started in the 1990s by Bertrand Lilbert's father, this is an entry level that is anything but simple and youthful. The style is rather floral, with apricot and jasmine notes floating over a real hit of savour from the reserve and a bone dry, mineral presence. Deutz Brut Rose NVA blend of Premier Cru and Grand Cru Pinots Noir grapes from the terroirs of Aÿ, Mareuil-sur-Aÿ, Avenay, Bouzy, Ambonnay, Verzenay and Tauxières with a touch of Chardonnay from the Côte des Blancs -mainly Avize, Villeneuve-Renneville, Vertus- (respectively about 90% - 10%).
Its specific style and colour are the result of blending in about 8% red wine mainly from the vineyard plots in Aÿ (Pierre Robert, La Pelle) and Mareuil-sur-Aÿ (Cumaine, Vaularon, Mutry).
The vines are very well sited and belong to Deutz. The red wine is made by our cellar-master.

The NV Extra Brut Grande Vallée is a blend of 65% Pinot Noir, 20% Pinot Meuneir and 15% Chardonnay harvested in Mareuil-sur-Aÿ, Mutigny, Epernay, Avenay-Val-d'Or and Festigny, 45% of the blend is from the 2019 vintage, 30% from 2018, both aged in oak, and 25% reserve wines kept in foudre. Golden color leads onto an earthy, expansive nose that has an overtone of ripe red bell pepper and juicy plum, with an oxidative edge from wood ageing. The palate is lighter than either color or nose suggest, flowing with inherent juiciness on a body that has traction and Pinot structure, but also bright freshness. Individual and surprisingly light.
