Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

Made from 100% Malbec including fruit grown by local producers that Pascal consults to. About 70% is lighter and finer material from the limestone plateau (the causses) and 30% richer and denser fruit from the iron-rich gravelly terraces of the Lot River valley. The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. Everything is by hand here and the wines are uncommonly elegant and round compared to the more rustic versions we are used to seeing.
No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

The Tradition is made of Pinot Noir (80%), Chardonnay (10%) and Pinot Blanc (10%) grapes from vineyards planted on clay-calcareous soil near Celles-sur-Ource. 2018 vintage reserve wine makes up the dominant base, while 30% comes from different réserve vintages. The juice was fermented in oak (15%) and stainless steel (85%) at controlled temperature. The wine then spent 4 months in stainless steel, and it was aged on lees for 2.5 years. It has 6g/l of dosage.
A flattering nose dominated by the Pinot Noir. Good harmony in the mouth, strength associated with freshness but not heavy accompanied by a slightly mentholated finish. Ripe citrus. Unctuous mousse. Chalky, mineral and saline and mouth coating. Generous autolitic notes.

Thierry Fournier Blanc de Blanc NVJulien explains that the Marne Valley vines sit in clay limestone soils, often giving richer Chardonnay notes than fruit from the Cote de Blancs. Anyone who thinks that dry riesling is always lean and austere should dive into this deep pool of ripe peach and apricot to discover the grape's sensual side. Gaisberg is often spectral, as if its flavors were placed in your hands by a ghost dressed as a bride. Part of that is present here, but there's also a quantum concentration of mineral, catapulted upward by a slingshot of acidity. The wine is so amazing it borders on the implausible.
The grip and the mere impact on the physical palate are impossible to resist. Yet there a higher octave of flavor that wisps up into the air like the vapors from frozen nitrogen. It's a concatenation of lemons and freesia; it alludes to basmati; it alludes, hauntingly, to white peaches and to blueberries, part of an incipience of sweetness that turns it from prose into music.
It's introverted but passionate, classical but not stodgy, and it is in every way wonderful. It almost isn't "Riesling" any more. It's just Gaisberg; I know it from Gobelsburg and Hirsch, and this site is quite particular, spectral and subtle; it whispers its strange tongue and you feel an opiate tingle - What is this wine doing to me? Veuve Clicquot Yellow Label NVTasted blind. Came 11th out of 12 in the tasting. Pale straw gold. Light, complex nose. Good savour. Some smokiness. Really neat and tight. Lots of potential. Some appley acidity and really clean on the end. Very complex on the end. Full of vitality. One of the most youthful wines in this dozen. Delicate bead. This resulted in a clear, lively Champagne that was ideal as an aperitif. At this time there were only three producers making this kind of Champagne, each had their own name for the wine: Brut 0, Brut Savage, and in the case of Jean Vesselle, Brut 100%. Today the wine - this wine - is named ‘Extra Brut’. It's very interesting considering the popularity of 'Extra Brut' and zero dosage wines today. Brimoncourt Blanc de Blanc NVChampagne house based in Ay with notably smart packaging. Very tight, steady, tiny bead. Light but taught nose. The back label promises this is peu dose (lightly dosed with sugar) but actually it tastes pretty ripe and full to me before tightening up like a lemon mousse on the finish. Ambitious. Bonnaire Grand Cru Blanc de Blancs NVThe NV Blanc de Blancs Grand Cru Brut is a clear, fresh and chalky Chardonnay from Cramant in the Côte des Blancs that opens with lovely intense and soft white fruit aromas. It is a mouth-filling, very elegant and finessed Cramant with highly digestible balance and stimulating lightness in alcohol (12%). The finish is charmingly round and fruity but also has the typical chalky texture that gives it perfect balance. This is an excellent cuvée with a delicate, salty, well-structured finish. I didn't see a lot number on the label nor on the bottle, but this should be a pretty fresh disgorgement and is mainly based on the 2013 vintage, as Jean-Emmanuel Bonnaire told me.
