Champagne

The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

Lino Ramble Dot to Dot Arinto 2023SPECIAL VALUE
A Portuguese transplant, arinto is looking like it will settle into McLaren Vale with some ease. This, a case in point. Free run, a little of the light pressings, and wild fermented in steel. Pear and dried apple lashed with brine, savoury-spiked with parsley seed and fennel frond, a water-splashed-concrete mineral note accenting. Acidity is e lifeblood of all the wines we drink, and in the warmer reaches of Australia, finding varieties that hold on to that natural acidity in hot, dry seasons is vital for success. Wirra Wirra Farmer's Heart Grenache 2023This came off mainly old vines, with 74% 95 years of age or more; matured in older oak. Ripe, but a product of the cool year, this drinks towards mid-weight, with strawberry, wild raspberry, sour cherry, damson, pomegranate and medicinal herbs coiled into a thoughtful and intricate warp and weft of tannin. There's a pleasing sour-fruited tension to this, which complements the grip, the combination aching for food. The ripeness is à point, the structure bravely savoury and compelling. Always a very nice wine, and great value too.
Cherry, almond, aniseed, a smattering of dried herbs, maybe lavender. It’s medium-bodied, kind of juicy, kind of savoury, there’s some strawberry in with cherry, some grainy grip to tannin, slightly ferrous, gently bitter with amaro, and the finish is fresh and pretty long. It’s maybe a little more crunchy and herbal than some vintages, and yet, it still lays on the charm. Nice. I do like a wine that doesn’t try too hard to be anything other than a great drink. So much ozone, or petrichor, here, which is so appealing. Red berries, a little liquorice and spice. Medium-bodied, at most, fresh and crisp, slightly earthy, hazelnuts, spiced poached strawberry and red cherry, emery board tannin, a distinct ‘mineral’ feel, and a cool spicy/savoury finish of brightness and excellent length. Bondar Fiano 2024SPECIAL BUY - This comes from two sites owned and farmed by Ben Lacey, in Aldinga and Seaview. Mainly steel. Pressed firmly but with no sulphur, dropping out harsh phenolics and keeping finer ones. The result is a wine of startling clarity and purity, effortless in the way it unfurls pear and lemon notes scented with orchard blossom, soft herbs and sea spray. The palate, too, has this unforced quality, with subtle, thoughtful detail – it’s a Bondar thing. There’s acid tension, texture, ultrafine savoury pithiness and a soaringly long trail of fresh flavour. For me, it’s their best yet. Mutual Promise Arneis 2023Mutual Promise are wines made by Even Milne and comes from the Latin Compr Missum or compromise. The compromise being that he doesn't farm the fruit and nor does he have full control over the creative process making the wines with friends in their Beechworth wineries. The Mutual Promise in essence being that they trust in others to create as they would with the aim of quality at the forefront. The wines champion some of their favourite varieties sourced from the King and Alpine Valleys in Victoria's spectacular North East. Varietal and regional purity is the heart of these wines.
A summers afternoon, an Autumn evening, neither seem complete without a glass of refreshing dry white wine and this wine is inspired by the dry whites of Northern Italy which are home to some of the all time great refreshing dry whites. Whole bunch pressed, racked and fined to tank for cool fermentation with 50% aged in white oak for complexity. Pear skin, lemon and almond blossom and that little green nutty thing that arneis does. A little bit slippery with green peach and some light herbal notes that expand out to more fleshy tree fruits on the finish. Aphelion Welkin Grenache 2023
Sourced from a range of Vale sites, this is at the ‘vin de soif’ end of the Aphelion grenache roster. Grenache in this zone can be juicy and jubey, but not this. It’s a thread that runs through the Welkin range, with fruitful pleasure in a mid-weight zone tempered by savoury structure. Macerated strawberries and tart raspberries, redcurrant, red licorice, rhubarb and orange, pink peppercorn and a seasoning of dusty spice. Seems like my brilliant treatise on whelks fell on deaf ears. Oh well, sometimes it feels like I’m feeding strawberries to pigs here. And speaking of strawberries…Poached strawberry, raspberry, lemon thyme and rosemary perfume, hazelnut, candied orange peel and mint. Juicy, strawberry, kind of sweet and succulent, but also has a little savoury stony stuff, nutty things and solid length too, and gee it’s a fun little wine. Nice. Kind of like a big rosato in a way. Mutual Promise Gamay 2024
Given the small volume this is fully de-stem as opposed to the typical 50% de-stemmed and 50% whole cluster for carbonic. Wine was fermented with ambient yeast on skins for 2 weeks and pressed to 2 x 6 year old Bossuet 500 Lt Puncheons. No adds other than a small organic yeast hulls to aid fermentation and a small amount of So2 pre bottling.
Gentle spice, herbaceous alpine edge brings freshness, cranberry and bright cherry fruits. Red spectrum rather than blue black of the spiritual home of Gamay but delicious and dangerously drinkable none the less.

MMAD Chenin Blanc 2023 375ml
I cut my teeth on chenin blanc, McLaren Vale chenin at that, but the wines I was drinking in the late 1980s didn’t bear a great deal of resemblance to this majestic offering.
I’m a bit blown away. Instead of being the steak knives in the range this vies for top spot. It has flavour and texture but it’s the way brine and smoky, reductive characters play in with the fruit that really gets you in. This is a sophisticated white wine. It’s all river stones and nashi pear, apple and cedar, though it’s defined by its smoke/salt/stone characters. It’s also exceptionally poised, dry and tense, all of which suggest that it has a seriously good future ahead of it. (96) CAMPBELL MATTINSON, The Wine Front

Gant & Co Touriga Nacional 2024Black almost to the rim with vibrant purple edging. Almost overwhelmingly intense aroma that is pure Touriga with a touch of oak: black, tangy fruit, perfumed with bergamot (Earl Gray tea) and opening up to violets and a sprinkle of sweet spice. The tannins have that thick, almost chocolatey character of the variety, so different from Cabernet's more upright posture. Juicy and aromatic and nicely dry on the finish. From a small trial block on the property in Karridale . Single cane. Shoot and fruit thinned. One bunch per shoot. Dry grown. 10 months sur lie in hogsheads and barriques. The crew at Gant & Co. making Touriga Nacional in Australia (Barossa, McLaren Vale and now Margaret River) since 2002 so there is a bit of affinity there for it and it shows in this very authentic verison. They believe this is the best expression yet.

Chateau du Cedre Cahors 'Heritage' 2020“The 24-ha estate of Pascal and Jean-Marie Verhaeghe has done as much as any to improve the recent quality of Cahors and provide the challenge it should be giving to the most profound Malbecs of Argentina - and some of the other great wines of France. Not only does the Domaine lead by example, but Pascal Verhaeghe has also been the driving force behind the Cahors ‘Quality Charter.' ANDREW JEFFORD The New France.
Made from 100% Malbec including fruit grown by local producers that Pascal consults to. About 70% is lighter and finer material from the limestone plateau (the causses) and 30% richer and denser fruit from the iron-rich gravelly terraces of the Lot River valley. The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. Brash Higgins Ripple 2023This wine, the 2023, is made from freshly picked, whole bunch Nero d’Avola grapes which were engulfed with direct pressed Cabernet Sauvignon, as fortold. All the Cab juice covered the Nero grapes and their stems, submerging the clusters completely. The idea is that the sugar in the Nero berries, starved of oxygen, will ferment inside their little berry bodies and create a lighter, slightly confectionary flavour profile. From grower and estate vines with whole berry and whole bunch carbonic maceration, extended time on skins (four to five weeks), with one grenache parcel at 25 weeks; maturation in 3500 and 5000L foudre, eggs and puncheons. Tempranillo leads with cherry, anise, cola and black plum accented by spicy stem and skin notes; the grenache percolates up with wild raspberry and rosehip notes while giving the palate a more open feel, moderating its partner’s tannins through the middle, cleaning up the tail and giving this real gastronomic purpose. Aphelion The Confluence Grenache 2023Blewitt Springs fruit off 85-year-old bush vines, fermented with 30% whole bunches, some extended skin contact, raised in puncheons, demi-muids and a 2,400-litre cask. This is all charm, but with a distinctly sophisticated elegance of delivery, with all the expected pops of red fruit – raspberry, red cherry, redcurrant, some pomegranate – conveyed with vibrancy but never confection, florals, white pepper, musk and a hint of orange peel accenting. Colour and cloudiness, straw and nuts. This wine is wild with flavour. Citrus, saline, honey and handfuls of nuts. Lots of zip but lots of give/texture/flavour. Food-friendly and sit-and-ponder friendly. Dry and grippy on the finish, an attractive squeakiness there, and no shortage of length. It’s a ripper, really. Brash Higgins RSM Semillon Riesling 2022From 1975 plantings in Blewitt Spring, riesling (70%) and semillon (30%) are picked together, kept on skins for a couple of days, then basket pressed for co-ferment in old barrels and one steel vat. This is a fuller-bodied expression of two varieties that are often represented in more trim form. Lightly oily and saline of feel, this still has zest and verve, with pungent lime oil, stone fruit, lemon pith, mint, fresh fenugreek and a bitter tonic note. It's an engagingly eccentric blend. Matthieu Cosse and Catherine Maisonneuve created Domaine Cosse Maisonneuve in 1999 after taking over the 5-hectare estate in the small region of Prayssac, near Cahors in the south west of France. The property was planted with 40-year-old Malbec (locally known as 'Cot') and they have now moved towards Certified organic and work with some biodynamic principles. Everything is by hand here and the wines are uncommonly elegant and round compared to the more rustic versions we are used to seeing.
No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.
