Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Dicey Bannockburn Pinot Noir 2021James is the grower, Matt the caretaker and they are the Dicey brothers. They are also neighbours with all the fruit for Dicey is sourced from the family's vineyards in the Bannockburn sub region of Central Otago. All sustainable and all about showing place.
Nice perfumed aromatics with soft violet, ripe dark cherries, anise and dark plum all interspersed with spicy cedar and delicate woodlands notes. That Otago rich dark cherry is on show but this doesn't feel too big or bulky like some others can. A touch of anise, that same dark plum all pile in there giving this plenty of push and depth. Its supple and soft with a lovely flow that carries the palate to a long finish that seems to unfold dark fruits, savoury spice, cedar and foresty notes layer by layer.

The 2022 Home Vineyard Pinot Noir is possessed of a most exciting display of red fruits and ductile tannin in concert. The tannins have a much closer, more densely packed feeling than the unfurling/spooling Olearia. There’s pomegranate, red and black cherry, licorice, star anise and even a hint of cumin seed. It's a wonderful wine that I know from experience benefits from a decant, which allows the fruit to stretch its legs, so to speak. Supple, throaty and full but not big. the wine wafts from the glass with an alluring bouquet of green apple, brioche, pastry cream and buttered toast. On the palate, it's medium to full-bodied, impressively layered and complete, with a crisp but fleshy core of fruit, a youthfully frothy mousse and bright acids, concluding with a delicately chalky finish. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. This shows wonderful nuance and depth all the way through to the long finish, with bright aromas and flavors but less of the toastiness than some of the house's other wines.
