Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

With hillsides terraced by pretty apple orchards, the dazzling Dolomites and its sun soaked mountain slopes, the Alto-Adige is an alpine paradise. A bilingual province, its well heeled neighbours from Switzerland, Austria and Germany flock to spend holidays here rock climbing, dining in mountain lodges and taking long alpine walks.
Red or white?
Whites are the shining light in this region but the lesser known reds from regional specialties are marvellous medium bodied expressions.
If classy, crisp and racy white wine is your thing, these wines should be part of your regular drinking plans. Lead by its sophisticated cooperative producers, Pinot Grigio is king, though ably backed up by Pinot Bianco and less well known treasures like Sylvaner and Kerner.
Premium white blends add Chardonnay to the mix, giving glorious texture and fuller bodied whites.
Smart refreshing medium bodied reds with juicy pomegranate fruit and a touch of tannin, come in the form of Schiava and Lagrein.

ELM Bomba Rosso 2022Emerging winemaker Madeleine Marson has launched her first wines under the ELM label. ELM wines pay tribute to the upbringing Madeleine and her two sisters, Emily and Laura (together ELM), had in the Yarra Valley and Heathcote, where winemaking and the traditions of the Italian family table were strongly held. A long (official and unofficial) apprenticeship under the instruction of her father, Mario Marson, followed, and together they now run Vinea Marson in Heathcote. There, Madeleine got her hands on some parcels of fruit from Heathcote and the Alpine Valleys and crafted these playful takes on Italian family favourites.
ELM ‘Bomba Rosso’ takes an Australian approach to Friulian blends, with Heathcote Shiraz’s bright fruit concentration married with the enticing savouriness of Nebbiolo. A complex nose of red berries, blackcurrants, liquorice and dried herbs is followed by a rich and intense palate with dry and chewy tannins typical of the Nebbiolo variety.

The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Franz Haas Lepus Pinot Bianco Lepus 2021The vines here reflect the challenging extremes of viticulture. Surrounded by mountains, winters arev long and freezing and the short summer months scorching hot, with nearby Bolzano often recording Italy’s hottest temperatures. Breezes from nearby Lago di Garda provide a moderating influence and there is a dramatic difference between day and night temperatures, especially at the vineyards over 500 metres. The wines are characterized by crisp fruit and refreshing acidity with real personality and ageing potential.
From vineyards between 600-800 metres with soils with a high content of clay and lime, this is fermented off skins at controlled temperature, mostly in stainless steel with 20% in old barriques and aged on lees for a few months for a fuller body and complexity. About one third of the wine also goes through malolactic fermentation. On the nose there are floral notes, ripe apples, almond and fresh bread crust. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish.
