Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. The vintage plays an inevitable role here, it is a gorgeous rendition of this wine, the white that accompanies Stephanes revered reds, and has the track record to back it up, as well as the mountains of press. This is the current release to Australia and the few years in the bottle have drawn out more of those robust, ripe and rich stone fruit notes. It's still essentially a pup but you see some move towards expansion on the palate and more nuance now on the nose. More clearly defined aromatics that offer up hedonistic and sweetly perfumed fruit, wild flowers, nectarine and a glass full of mixed citrus juice (only way I can think of describing that character). It leans in to sensuality in the mouth, there it caresses as it easily fills your palate with its delectable fruit salad like array of flavours. It is easy to miss the force behind it, almost, it really hits the finish hard with a burst of rocky minerality and an emphatic punch of intensity that leaves your palate feeling stained. For me this is where I would like to drink this wine. While both youthful enthusiasm and some richer elements are at play. There is no doubt in my mind that most fans of Condrieu will ignore that and throw this in the cellar for a decade. Don't get me wrong, the wine will be super then too. I just love the power that 19 brings with the vigour and liveliness of Stephane's style and I find this part of its life to be particularly enjoyable. It's a tremendous effort. ROSCOE

Kirilly's turning point in the wine industry was working at Bindi, where inspiration by Bill and Michael Dhillon came to the realisation that nurturing vines and grapes to create delicious quality wines is a pretty great way to live a full life. Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Ripe peach, honeysuckle and fresh nut characters alongside the Bowerbird silky finesse that holds everything together. Yeringberg Viognier 2022Barrel fermented and matured for 10 months in large-format oak. A bright green gold. A hedonistic bouquet of ripe nectarines and apricots together with glacé ginger and honey. Textured but not overdone on the palate, which is gently saline and very nicely balanced. It’s delicious now, but this has enough of everything to still be looking good three to four years from now too. A truly lovely example. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
