    This sake is classic Tengumai, made using Yamahai method. 'Jikomi' means 'procedure' or 'method'. This Junmai sake has been matured in tank more than 12 months. It has slight golden color, and full of flavour, complexity and good acidity.Yamahai is a very old and traditonal technique, and Tengumai have mastered this technique and it is reflected in this sake. Lots of spices, tumeric and even aged chese aromas. Rich and complex on the palate, with savoury, creamy, citrus characters, it has an incredibly long finish.

    Umeshu is produced by infusing Ume fruit into Shochu. Green Tea flavour is added to achieve  refreshing character. The texture is smooth and is has well balanced sweetness and delicate  green tea tannin. Finishing is crisp and clean. It is refreshing to have chilled Umeshu straight or  over ice, or cold spring water. Or you can create any kind of beautiful Umeshu cocktail

    A beauty, offering a more fruit-forward, sexy, supple style as well as textbook peach, white flowers, and honeysuckle aromas and flavors. Textured and balanced, with a great finish, it's ideal for drinking over the coming 4-6 years. JEB DUNNUCK

    The vintage plays an inevitable role here, it is a gorgeous rendition of this wine, the white that accompanies Stephanes revered reds, and has the track record to back it up, as well as the mountains of press. This is the current release to Australia and the few years in the bottle have drawn out more of those robust, ripe and rich stone fruit notes. It's still essentially a pup but you see some move towards expansion on the palate and more nuance now on the nose. More clearly defined aromatics that offer up hedonistic and sweetly perfumed fruit, wild flowers, nectarine and a glass full of mixed citrus juice (only way I can think of describing that character). It leans in to sensuality in the mouth, there it caresses as it easily fills your palate with its delectable fruit salad like array of flavours. It is easy to miss the force behind it, almost, it really hits the finish hard with a burst of rocky minerality and an emphatic punch of intensity that leaves your palate feeling stained. For me this is where I would like to drink this wine. While both youthful enthusiasm and some richer elements are at play. There is no doubt in my mind that most fans of Condrieu will ignore that and throw this in the cellar for a decade. Don't get me wrong, the wine will be super then too. I just love the power that 19 brings with the vigour and liveliness of Stephane's style and I find this part of its life to be particularly enjoyable. It's a tremendous effort. ROSCOE

    Black tea and Umeshu blended. Ume and tropical notes on the nose with almond character. Medium body Umeshu with a creamy texture, the palate shows clean sweetness and good quality black tea, tannin and clean acidity. The finish is clean.     Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml

    Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end. 

    Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

    Produced by the highly regarded Kitajima Sake Brewery. This Yuzushu uses all natural ingrediens and is made with Sake, sea salt and four times the the yuzu of of most regular yuzushu. It's rich and luxurious, concenetrated but wonderfully fresh and so distinctive. A PWS favourite!

    Classic Victorian wines don't get much better than this. If you are unfamiliar with Bowerbird Wines (very little wine is made) then you're in for a real treat here. Mouth-coating, textural, full-flavoured wines that offer bountiful pleasure right to the very last drop.

    Kirilly Gordon is a quiet achiever. Her force is much greater than her stance. The humble Bowerbird Wines is the most underrated producer in the state. By day she's Denton in the Yarra and by night Bowerbird Wines soar. Kirilly's turning point in the wine industry was working at Bindi, where inspiration by Bill and Michael Dhillon came to the realisation that nurturing vines and grapes to create delicious quality wines is a pretty great way to live a full life. And I'm very glad about that.

    Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Ripe peach, honeysuckle and fresh nut characters alongside the Bowerbird silky finesse that holds everything together.  A serious wine jam-packed with flavour and refreshment. KAYLEEN REYNOLDS, pws

    Barrel fermented and matured for 10 months in large-format oak. A bright green gold. A hedonistic bouquet of ripe nectarines and apricots together with glacé ginger and honey. Textured but not overdone on the palate, which is gently saline and very nicely balanced.     Kenbishi is very classic – keeping same Sake making methods which involve Yamahai method and wild yeast. King of Sake rice ‘Yamadanishiki’ 100% used. ‘Mizuho’ means ‘ear of rice’, but in this case, Kenbishi meant it is ‘Junmai’. Blends of 2 YO to 8 YO tank aged Sake. Distinctive golden colour. Medium to full body. It shows honey, malt and nuts on nose. High in Umami and acidity. Texture is smooth and mouth coating warmth. Rich and complex on the palate with a crisp long finish.
