Cognac Tesseron Composition 700mlComposition is this producer’s first non-XO release, yet even here Tesseron have aimed to make something very special for its level. It pours a bright, light amber colour and offers aromatics of spiced autumn fruit, white flowers and fresh plum, while on the palate there is that classic Tesseron texture and vinous, fruity complexity—ensuring this Cognac’s sipping credentials. Important to note that there is no added colour, it is the older material in this blend that brings the hue and depth. At the bar, we have found the spirit mixes beautifully, adding finesse and lift to a wide range of stirred and shaken drinks. This makes sense, Tesseron told us that they had comprehensively tested the Composition in a number of classic cocktails before the final blend was signed off. Brash Higgins CINS Cinsault 2022From the neighbouring Lennon Vineyard, this spent two weeks on skins in an open fermenter before pressing to ‘veteran’ French oak to mature for seven months. A variety that delivers grace and vibrancy in warm conditions, this leans into those proclivities, and perhaps more so given the cooler year. Cherries – red, black and sour – peppery spicing and raspberry-leaf tea across a wine that ticks under mid-weight, lacy, fine tannins and lively acidity upping the verve. Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Cool and fresh. Lively and bright. A chillable, slurpy, crunchy red emerges. Red cherry, raspberry, cranberry, alpine herbs, some menthol-like lift, aniseed and pepper, a touch of white chocolate.
