Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Pieropan Soave Classico 2023Leonildo ‘Nino’ Pieropan, who sadly passed away in 2018, was the first to show the world just how great Garganega, and Italian white wine, can be. He recognised the importance of terroir early on, acquiring various hillside vineyards (including Pigno, Becco, Boiolo, Tondo, Palestrello and La Santa) and expanding the prestigious Calvarino and La Rocca vineyards, first made as single vineyard crus in 1971 and 1978 respectively.
Today, sons Dario (winemaker) and Andrea (viticulturist) continue the family tradition. The brothers have converted all of their vineyards to organic and are overseeing the new winery being built amongst the vineyards just outside the village.
Mostly Garganega with about 10-15% Trebbiano di Soave, this is wonderfully aromatic - not a common feature of Soave - with floral notes (cherry blossom), citrus, stone fruit and almond. The palate is delicate and focussed, with excellent depth and lovely overall balance.

Domaine de Chatillon Jacquere 2020We were a bit chuffed to get this wine when trying it recently particularly given that you don't see a lot of jacquere wines out of Savoie at the price. The chateau is based in the Chatillon castle, a Roman watch tower built 70AD to signal the regiments along the Rhone River. It's pretty striking stuff in the hills there and the high-altitude vineyards lend a lovely racy edge to the wines.
Light bodied and crisp with a clean, steely minerality and light floral blossom accents on top of waxy citrus and green apple fruit. On the palate it races through cutting with mandarin and lemon peel apple/pear flavours and plenty of energetic acidity that drives a clean, mineral finish spiked with qartz and white pepper. Great stuff!

Pieropan Recioto Le Colombare 2020 500mlA deeply coloured wine that exhibits a dazzling array of wildly exotic fruits and herbs as well as the usual stone fruit that I expect from the style. Gloriously perfumed and so enticing. You could wear this as a perfume. People would think you are nuts, but you would smell amazing! Big, super concentrated, it hits your mouth with intent, absolutely engulfing the palate with the same heady array of character that is suggested on the nose. So much weight and richness but there is the sweep of uplifting acidity that washes away any lingering sweetness and leaves your palate feeling refreshed and enlivened. Long and stimulating across its length with a final flourish of citrus like acidity and fine saline edge. This is a wonderful bottle of wine that had me coming back to it over 24 hours or more. Wow, is it salty or is it sweet? The 2017 Recioto di Soave Le Colombare lifts up with dusty yellow flowers, dried tangerine and orange zests complemented by crushed almonds and hints of confectioners' sugar. It's silky-smooth yet not weighty in feel, with zesty citrus and tropical fruits motivated by brilliant acidity. The balance here is unreal, as the 2017 hides its 120 grams of residual sugar very well, maybe too well, making it easy to like but also dangerously easy to drink. A rapier-like thread of acidity compresses quince, tangerine, tamarind, truffle, cardamon and glazed stone fruits into a ball of such tension and freshness that the finish is not only endless, but uncannily dry. Le Battistelle 'Battistelle' Soave Classico 2022Le Battistelle is simply one of the Soave Classico’s best producers. They have some of the most incredible hand tended terrace vineyards with vines up to 130 years old. There are records of the Battistelle vineyard going back to 1644. Fantastic volcanic subsoils plus the estate is classified “Viticoltura Eroica” or Heroic Viticulture which appears on the label of the Battistelle cuvee. It stands for the hard work that production of these wines requires.
Owned by Gelmino and Cristina Dal Bosco who after working for larger co-operatives in the region passionately wanted their estate, and started in 2002 under the Le Batistelle label. They own just over 9 hectares (100% Garganega) divided across four small plots all situated in the hills of Brognoligo.
The 2022 Soave Classico Eroica lifts from the glass with a savory blend of dried peaches and apricots, complemented by hints of fresh mint and crushed stone. It’s soothingly round in character, resonating with ripe orchard fruits and citrus-tinged inner florals over a core of tantalizing acidity. Its minerality comes forward through the close, as this plays out a sweet-and-sour act on the palate and hints of candied lime slowly fade. Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. These are some of the top white wines being made in the world today, like cool-mountain air and liquid stone encapsulated in a bottle, yet with rich textural complexities that boggle the mind.
Crushed rocks and dried flowers give way to peach skins and chamomile as the 2019 Vitovska blossoms in the glass. Suavia Soave Massifitti 2020The Suavia winery has captured my attention over the last few years. Run by three sisters and located within Soave Classico, Suavia produces a portfolio of terroir-driven wines that impress for their depth and undeniable elegance. Year after year, I find the Monte Carbonare to be one of the best interpretations of this vineyard. This is also one of the few estates producing a varietal Trebbiano di Soave in the region. The Massifitti is the first wine here that caught my attention.
Wickedly fresh, the 2020 Trebbiano Massifitti bursts from the glass with a mix of savory herbs, dried flowers, gingery spice and dried peaches. It’s round and soothing, with a salty core of minerality and depths of tart orchard fruits and citrus tones, all guided by brisk acidity. The Massifitti finishes long, leaving a lemony concentration that puckers the cheeks—wonderfully balanced and begging for further cellaring. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures . Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
