Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Domaine de Chatillon Jacquere 2020We were a bit chuffed to get this wine when trying it recently particularly given that you don't see a lot of jacquere wines out of Savoie at the price. The chateau is based in the Chatillon castle, a Roman watch tower built 70AD to signal the regiments along the Rhone River. It's pretty striking stuff in the hills there and the high-altitude vineyards lend a lovely racy edge to the wines.
Light bodied and crisp with a clean, steely minerality and light floral blossom accents on top of waxy citrus and green apple fruit. On the palate it races through cutting with mandarin and lemon peel apple/pear flavours and plenty of energetic acidity that drives a clean, mineral finish spiked with qartz and white pepper. Great stuff!

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. These are some of the top white wines being made in the world today, like cool-mountain air and liquid stone encapsulated in a bottle, yet with rich textural complexities that boggle the mind.
Crushed rocks and dried flowers give way to peach skins and chamomile as the 2019 Vitovska blossoms in the glass. Ca D'Gal Moscato D'asti DOCG Vite Vecchia 2016As the name implies, Boido’s Vite Vecchia is drawn from old vines, a single parcel on just one hectare of the steeper, limestone-rich slopes of the Valdivilla hillside. Sandro's grandfather planted it with the old Moscato cultivar Canelli Moscato some 60 years ago. The wines are stored on cork for later release in large wooden boxes packed with sand. This is a traditional method of bottle maturation once used in the area, moderating temperature and moisture and blocking out all light.
This is a unique and compelling version of Piemonte’s famous sweet wine. Thanks to the vine age, south-facing exposure and unique blue tufa (clay/limestone soils), the vines here produce intensely flavoured, golden bunches of grapes that, in turn, gift a gloriously deep yet vibrant Moscato with greater textural depth and vinosity than you could have otherwise imagined possible from the grape. An earthy/smoky/mineral impact and complex development might remind you of a Riesling or even an aged Sancerre.

Ca D'Gal Moscato D'Asti DOCG Sant Ilario 2020This wine is simply a revelation. It’s drawn from a single hectare of 70-year-old vines, some 10 kilometres from Boido’s winery in Cassinasco, on a south-facing hillside with limestone-rich soils. Cassinasco is one of only 19 villages (out of a total of 52 in the Moscato DOCG) included in the newly ratified Canelli DOCG. Moscato fruit from this subzone surrounding the town of Canelli has been grown since the 13th century and has always been associated with greatness. It is in the heart of the region, where the chalky soils and high altitude are perfect for Moscato.
It’s a mould-breaking wine of cut-glass purity and restraint, with a fine chalky texture and mineral zeal. The perfume offers gentle notes of grapefruit and lemon sherbet, while the palate is so fine, buoyant yet restrained, shot through with white peach, nectarine and lemon zest. Everything is in its place. It has salty, crystalline freshness, an intense, chalky finish and a length of flavour that is in class of its own. At the Ca’ d’Gal ristoro they match this with everything from cured meats, cured fish and foie gras, through to Brös—the tangy ricotta and grappa specialty of the region. This can age extremely well, developing deeper lime and aged Riesling notes. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures . Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
