Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

The vintage plays an inevitable role here, it is a gorgeous rendition of this wine, the white that accompanies Stephanes revered reds, and has the track record to back it up, as well as the mountains of press. This is the current release to Australia and the few years in the bottle have drawn out more of those robust, ripe and rich stone fruit notes. It's still essentially a pup but you see some move towards expansion on the palate and more nuance now on the nose. More clearly defined aromatics that offer up hedonistic and sweetly perfumed fruit, wild flowers, nectarine and a glass full of mixed citrus juice (only way I can think of describing that character). It leans in to sensuality in the mouth, there it caresses as it easily fills your palate with its delectable fruit salad like array of flavours. It is easy to miss the force behind it, almost, it really hits the finish hard with a burst of rocky minerality and an emphatic punch of intensity that leaves your palate feeling stained. For me this is where I would like to drink this wine. While both youthful enthusiasm and some richer elements are at play. There is no doubt in my mind that most fans of Condrieu will ignore that and throw this in the cellar for a decade. Don't get me wrong, the wine will be super then too. I just love the power that 19 brings with the vigour and liveliness of Stephane's style and I find this part of its life to be particularly enjoyable. It's a tremendous effort. ROSCOE

Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Ripe peach, honeysuckle and fresh nut characters alongside the Bowerbird silky finesse that holds everything together. The 1988 Marsala Vergine Riserva mixes amber with red hues, lifting up dusty and savory with notes of cave-aged gouda, quince, baked apple and clove. With time in the glass, it gains in volume, evolving to show rich dark chocolates and dried roses. There are depths of texture here, yet it's wonderfully balanced by vibrant acidity as salted caramel and exotic spices wash across the palate, leaving a coating of mineral-drenched orchard fruits under an air of burnt sugar and tobacco. The experience goes on and on, as minutes can go by, and you're still not just tasting but feeling the 1988's glycerol heft lingering incredibly long. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
