This Junmai sake has been matured in tank more than 12 months. Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720mlOka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Daosa Rose 2021A blend of 88/8/4% pinot noir/chardonnay/pinot meunier. A couple of years on lees for added complexity. An unusual brightness, almost zingy, saline and briny, with a lift of white balsamic friskiness and strong red cherry and rosehip tea characters. Good stuff, from the get-go. It's fragrant and pretty, a good deal of energy on the palate with a tartness and pleasing bitterness despite the ascendence of red fruits and sweet spice. Vallformosa MVSA Brut NVThe 'MVSA' is made from the tradition Cava varieties Macabeo, Xarello and Parellada at the respective ratio's of 35:30:35%, the wine has seen 24 months of lees ageing and bears 9.5 g/l of residual sugar, but has the acidity to clean up the tail; it is a stylish and satisfying wine of great value. It is pale in colour with plenty of bubbles showing aromas of apples and pears, toasty bread and white flowers balancing the right amount of bubbles and acid. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
