This is a bit of a staff favourite too. A few of us sweet tooths are big fans of this bad boy and this is a very cool interpretation that isn't quite as intense concentrated as its orginators in Spain but is all the better for it. A little lighter on its feet and that's the way we like it.

Made from 30 year old material this Pedro Ximinez is produced in an amontillado style. Dry with
hints of walnut and pecan nuts, tea leaf and crème brulee. Barri Alto Aranza Palomino Vino de Pagos 2022‘Aranzá’ is Rafa’s sub-vineyard name for a small portion he selects from Viña La Palma. La Palma itself is a small vineyard, 3 hectares of 60 year-old Palomino growing in Albariza tosca cerrada. The term ‘Aranzá’ is a short-hand for the local measure of land area, an Aranzáda – depending upon the colloquy involved (the measure is different in each town and possibly grower-to-grower!), it’s roughly a half hectare.
Pickled hay, buttery chalk and the cold steel smell of yesterday’s Tea Billy. Savoury, earthen, edged and filled with pickles and spice. Dandelion, a nice rim of diatom (blue oceanic fossil minerality), pickled cucumber, a sapid buzz in the cheeks and corners of the tongue. A round and savoury style, the cereal-inflected Palomino is mid-weight with an understated, lovely finish of bitters on the point of the tongue. Incredible volume and textural satisfaction at such low ABV.

Santadi Onilos Cannonau 2022Cantina Santadi, form Sardinia’s southwestern coastal region known as Sulcis, was founded in 1960 as a cooperative of local growers. Under the guidance of Antonello Pilloni, Santadi has become one of Sardinia’s, and Italy’s, finest wineries, with more than 200 growers farming 600 hectares. In the early 1980’s, Antonello called on the late Giacomo Tachis to consult for Santadi. Creator of Sassicaia, Tachis would go on to become the man behind Italian wine’s worldwide renaissance. The Sulcis peninsula is, geologically, Sardinia's most ancient area, rich in archaeological sites, and offers an astonishing palette of variations and contrasts, with coastal sand dunes, gentle hills and inlets, narrow strips of flatland and inland mountains, rugged cliffs overhanging the sea interspersed with silky-smooth white beaches, pine trees, junipers and vineyards. In these sandy soils, pre-phylloxera vines continue to survive and thrive.
This is a stunning little number, ruby-red wine from the island of Sardinia, Italy. Made from 100% Cannonau grapes, it offers up a vibrant and subtely complex bouquet of ripe red fruits, spices and fresh leather. This bucks the trend of many cannonau wines from the island who often come across as soupy and overblown but here we have a wonderfuly light on its feet version with tons of crunchy freshness and pure fruits. It really is a bit of fresh air and we would love to see more of these wines go this way embracing levity and energy over gaudy fruit profiles. Bodega Barrero Gabriela Manzanilla 375mlI love Manzanilla, and I often drink it when I’m out and about… Salty, nutty, chamomile, sourdough bread before it hits the oven, a light honey and mint thing too, lemon zest and green olives. It’s dry and nutty, distinctly saline, fine chalky texture, green olive brine and pistachio, with a tangy, zesty and nutty finish of excellent length. It’s fresh and sharp, (as it should be), but also a little wild, and gee, it’s a very good expression of Manzanilla. The crunch on the finish seals it. Yes.
