Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Ronchi di Cialla Collio Friulano DOC 2022This really is one of the most fascinating, inspiring, and singular estates of Italy. An incredible history that spans centuries and that in just over a quarter century has become a benchmark producer for some of the rarest wines in the world. A noble and impressive feat.
The property with its steep terraces surrounded by chestnut, oak and wild cherry trees dates back to the Paiarchte of Aquiuleia and the Republic of Venice. This small gem in the heart of Collio was established in 1989 by highly respected oenologist Fabio Coser. Fabio’s career as a consulting oenologist allowed him privileged knowledge of the area’s terroir so that by the time he chose a property of his own, he already knew the Collio like the back of his hand. Ronco dei Tassi was named after the population of badgers (tassi) on the estate, which like to carry out some grape selection of their own and steal the sweetest bunches. Of what’s left, Fabio and son Enrico craft into stylish, elegant and characterful wines. From fifty year old vines, this is aged mostly in stainless steel with a small portion going through malolactic in old barriques. Straw yellow with green highlights, the nose displays acacia flowers and the palate is distinctly varietal with citrus fruit, pear, liquorice & almond.

This must be one of Australia’s top sauvignon blanc wines. And the value is pretty epic.It’s got exceptional energy and persistence, a major feature is the tension in the wine, the torque of powdery pucker and the core of briny minerality. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis.
