    This sake is classic Tengumai, made using Yamahai method. 'Jikomi' means 'procedure' or 'method'. This Junmai sake has been matured in tank more than 12 months. It has slight golden color, and full of flavour, complexity and good acidity.Yamahai is a very old and traditonal technique, and Tengumai have mastered this technique and it is reflected in this sake. Lots of spices, tumeric and even aged chese aromas. Rich and complex on the palate, with savoury, creamy, citrus characters, it has an incredibly long finish.

    It's like a Bordelaise immigrant in Friuli. I don't mean these varieties (merlot, cabernet franc, cabernet sauvignon) are new to the area, in fact the cabernet family have been planted up here for centuries, I mean the style of the wine blends classical cabernet production - modern vinification and small oak elevage - with a local fruit spectrum which offer something different to their spirit home in France. 

    Middle weight. Dark cherry. dark berry and leafy aromatic with a touch of earl grey tea. Palate is clean and pure, sweetly fruited but also lithe and direct. Dark chocolate and oak splice are woven into the core of the wine. It's a lovely example, the main feature for me being that it holds excellent ripeness but is also mid-weight and cool fruited. Excellent luncheon merlot cab blend that will age and improve for 10-15 years. MICHAEL MCNAMARA

    Even the entry-level white 2020 Candea Blanco, a regional blend of equal parts of Dona Blanca, Verdello and Treixadura fermented and kept with lees in stainless steel for one year, shows character, cleanliness, precision and freshness beyond the price point, and it transcends appellation and vintage and is offered with some time in bottle. It has only 12.5% alcohol and an expressive nose of herbs and flowers, and it is balanced, harmonious and elegant and finishes dry and long with a tasty and salty twist.     Casa da Passarella A Descoberta Dao Tinto 2020

    Made in stone lagars and aged in cement tanks along with some large old wooden vats, it's a very typical Dão blend of Touriga Nacional, Tinta Roriz (elsewhere, Tempranillo), Alfrocheiro and Jaen (aka Mencia).

    A Descoberta means 'to be discovered' and the somewhat mystical label, a box tagged 1942 is a folkloric reference to an early version of a time capsule a box hidden in the stone walls of the house of Passarella containing a will to be opened 50 years hence and directing the riches of the box be re-distributed to the poor. The box was empty. Enrichment comes from the intangible not the material, it seems ...

    A lovely wine supple, fleshy and spicy, with extra delicate tannin and oak. From lead-off, the cherry-chocolate fruit really shows the Dao granite, and is laden with wiry dark herbs. In the mouth, it's fleshy-meaty and mineral fresh - round with good movement and fruit-earth interplay. It has excellent presence in the mouth but is not reliant on weight for the show. Wonderfully composed, it sits and radiates, effortless in affect. Gorgeous delicate tannin is the frame, rimming the mouth and allowing the fruit and spicy acid to radiate delicately. A wonderful advertisement for varietal blends.

    100% made from the queen white grape variety of the region, Encruzado, this emblematic Portuguese grape variety was born in the Dão region. When well crafted in the vineyard and winery, it presents delicate aromas such as notes of yellowfleshed fruit, light citrus notes, a little resin, with a great balance, little extraction, moderate alcohol content, no wood, very fresh, easy to drink and Above all, very gastronomic. The vineyards are between 30 and 50 years old and are mainly located in the sub-region of the mountain of Terras de Senhorim, the most balanced sub-region for whites, naturally producing elegant and fresh wines.

    We were a bit chuffed to get this wine when trying it recently particularly given that you don't see a lot of jacquere wines out of Savoie at the price. The chateau is based in the Chatillon castle, a Roman watch tower built 70AD to signal the regiments along the Rhone River. It's pretty striking stuff in the hills there and the high-altitude vineyards lend a lovely racy edge to the wines.

    Light bodied and crisp with a clean, steely minerality and light floral blossom accents on top of waxy citrus and green apple fruit. On the palate it races through cutting with mandarin and lemon peel apple/pear flavours and plenty of energetic acidity that drives a clean, mineral finish spiked with qartz and white pepper. Great stuff!

    Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml

    Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end. 

    Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Natural co-ferment and maturation in a Pozvek foudré for 9 months on full lees. 100% malolactic fermentation. Bottled in January 2024 unfined and unfiltered.

    Amber hue in the glass, this wine is complex and highly aromatic with scents of fresh apricot, musk and lychee. Peach, beeswax and subtle smoky notes. A creamy mid palate with a refreshing saline finish.

    Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. These are some of the top white wines being made in the world today, like cool-mountain air and liquid stone encapsulated in a bottle, yet with rich textural complexities that boggle the mind.

    Crushed rocks and dried flowers give way to peach skins and chamomile as the 2019 Vitovska blossoms in the glass. This is pure and lifted in style, graceful and finessed, quickly gaining a salty tension as young pit fruits and lemon nuances mingle. A salty flourish and flinty sensation come forward through the finale, adding a savory flair as the 2019 finishes with lasting concentration. Medium to full body. It shows honey, malt and nuts on nose. High in Umami and acidity. Texture is smooth and mouth coating warmth. Rich and complex on the palate with a crisp long finish.

    A blend of vineyards in Clare Valley blending cabernet sauvignon, malbec, sangiovese and grenache. Clever. Their own ‘classico’. The new label reversed the colours on this one, more black on black with white font, and it looks sexy as.

    Gorgeous wine. Supple, succulent, lush with dark fruit character, new leather, tobacco, mint and sage leaf characters with a fine, graphite minerally character through it all. It feels warm-hearted and kind of generous but keeps to the medium weight brief. It rolls with flavour, energy and tension of refined tannins through a long, mouth-watering finish.     Vintages don't necessarily follow in chronological order here, so from the 2014 I tasted last year (which is just being released now!), we jump to the 2018 Gorvia Blanco. This plot had normal yields in 2018, as the development was quite early and the fruit setting was before the problems showed up. This is the first year that has a little Godello, as Mateo replaced the dead vines and regrafted some rows with Godello, so it has a very small percentage (perhaps 5%). This is sharp, austere, mineral and incredibly young, and it finishes with a clean, sharp and precise salty note. This follows the textural direction of the Fisterra, or the wine he bottled for Matador. This should develop in bottle for a long time. He thinks 2014 is starting to show well now, almost six years after the harvest. I think this wine can be enjoyed young, but it will improve and develop a lot in bottle.     Paolo Vidopivec Vitovska Classica 2017
    Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.

    This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
