Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. A blend of grenache blanc, roussanne and a good dollop of viognier. Stone fruits, some quartz mineral notes that thread through the mid palate and sprinkle white pepper to finish. Casa Rojo Machoman Tierra de Murcia Monastrell 2020Big fan of Jumilla Monastrell, there's great Monastrell made in Spain, with a ton of character. The grapes are from 13 plots of Monastrell vineyards in La Raja (where the winery is located) between the mountain ranges of El Carche and La Pila. The vines range from 20 to 70 years old sitting at 800 metres, within the wine region D.O. Jumilla, in the south of Spain. Steel tank ferment with 5 months in small French oak.Red licorice, pastille fruits, and a hint of charry savouriness and scorched earth layered in with sweet, heady spice. Black cherry, black raspberry fruit paint the palate then slowly melt away to reveal spice box and savory herbs then rushes back in with plum, blackberry compote, blueberrie, and blackcurrant that bring the finale to a luxurious finish that trails off with some dark chocolate, and tobacco.

Casa Castillo La Tendida Monastrell 2021The 2021 La Tendida is the second vintage of this wine from young vines planted between 2006 and 2010 in an area where they are going to keep growing as they transition from the valley to more limestone-rich soils in other parts of the property. Raventos i Blanc Brut 'De Nit' Rosado Espumosa Cava 2021A dry pink style of sparkling, using the classic blend of xarel.lo, parellada and macabeu, along with monastrell to create an amazing pink hue to the wine. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.
Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess. Nice false sweetness on entry -the balance is ultimately off-dry, juicy and gentle, with high quality delicate bubbles underpinning the fruit, cutting the fruitiness and running on to a super-gently acid close.

Yeringberg Marsanne Roussanne 2022A blend of 60/40% marsanne/roussanne, picked three days apart, fermented together in tank, then aged in old barrels for 10 months. A bright green gold. Aromas of ripe pears and apricots sit alongside some lemon conserve, pink grapefruit and orange blossom scents. It’s a compelling mix that flows through onto the palate, which is gently textured, saline, and very well structured. I really like the touch of the grip on the finish too, and as good as this is now, this will age gracefully over the next five to seven years at least. Yeringberg Marsanne Rousanne 2016Marsanne 59%, Roussanne 41%. Our white Rhône blend is a subtle wine that displays restraint and quiet power. It starts subdued, with hints of pear, honeysuckle, lanolin and quince. With air it expands, building depth and breadth, showing notes of honey, lemon and jasmine. On the palate, it's both taut and well rounded, savoury and subtly pithy, but also spicy and gently viscous. It's a fabulous food wine that manages to complement both delicate and more fully flavoured dishes and, unusually, satisfies both white and red wine drinkers. Full of promise, the 2016 is certainly enjoyable now, and will continue to evolve over a number of years. SANDRA DE PURY
