Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.

Domaine de Chatillon Jacquere 2020We were a bit chuffed to get this wine when trying it recently particularly given that you don't see a lot of jacquere wines out of Savoie at the price. The chateau is based in the Chatillon castle, a Roman watch tower built 70AD to signal the regiments along the Rhone River. It's pretty striking stuff in the hills there and the high-altitude vineyards lend a lovely racy edge to the wines.
Light bodied and crisp with a clean, steely minerality and light floral blossom accents on top of waxy citrus and green apple fruit. On the palate it races through cutting with mandarin and lemon peel apple/pear flavours and plenty of energetic acidity that drives a clean, mineral finish spiked with qartz and white pepper. Great stuff!

Domaine Barmes Buecher Sands Pinot Blanc 2021The vines for this 2021 Pinot Blanc Clos Sand were planted in 2013. It was first vinified as a single vineyard in 2018. This is a granitic site, at 400m of altitude, enclosed by forest, looking south-east. Matured in a mix of stainless steel and used 300-liter barrel, because there was not enough wine to fill a foudre , this spent 11 months on gross lees. The nose is shy, with mere suspicions of lemon. The palate is sylph-like but wonderfully juicy and rounded in its concentrated slenderness. It has the richness of yeast and strikes a beautiful balance. Domaine Dirler-Cade Alsace Riesling 2022One reason I never miss a chance to visit Jean Dirler and his family is that the Dirler-Cadé estate in Bergholtz makes outstanding wines from several different Alsace varieties. Its Sylvaner, a grape often treated as an afterthought in Alsatian wine-production circles, is especially noteworthy. I do not feel that I am exaggerating when I describe it as a world-class wine the fact that it ages extremely well is an added bonus.
The Rieslings in particular are exceptionnal: impressive saline tension for the Kitterlé, all about vigor and smoky brightness for the finish, straight wine, sharp, profound, with an extraordinary persistence and intensity. Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
