Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

Ca D'Gal Moscato D'asti DOCG Vite Vecchia 2016
As the name implies, Boido’s Vite Vecchia is drawn from old vines, a single parcel on just one hectare of the steeper, limestone-rich slopes of the Valdivilla hillside. Sandro's grandfather planted it with the old Moscato cultivar Canelli Moscato some 60 years ago. The wines are stored on cork for later release in large wooden boxes packed with sand. This is a traditional method of bottle maturation once used in the area, moderating temperature and moisture and blocking out all light.
This is a unique and compelling version of Piemonte’s famous sweet wine. Thanks to the vine age, south-facing exposure and unique blue tufa (clay/limestone soils), the vines here produce intensely flavoured, golden bunches of grapes that, in turn, gift a gloriously deep yet vibrant Moscato with greater textural depth and vinosity than you could have otherwise imagined possible from the grape. An earthy/smoky/mineral impact and complex development might remind you of a Riesling or even an aged Sancerre.

Ca D'Gal Moscato D'Asti DOCG Sant Ilario 2020This wine is simply a revelation. It’s drawn from a single hectare of 70-year-old vines, some 10 kilometres from Boido’s winery in Cassinasco, on a south-facing hillside with limestone-rich soils. Cassinasco is one of only 19 villages (out of a total of 52 in the Moscato DOCG) included in the newly ratified Canelli DOCG. Moscato fruit from this subzone surrounding the town of Canelli has been grown since the 13th century and has always been associated with greatness. It is in the heart of the region, where the chalky soils and high altitude are perfect for Moscato.
It’s a mould-breaking wine of cut-glass purity and restraint, with a fine chalky texture and mineral zeal. The perfume offers gentle notes of grapefruit and lemon sherbet, while the palate is so fine, buoyant yet restrained, shot through with white peach, nectarine and lemon zest. Everything is in its place. It has salty, crystalline freshness, an intense, chalky finish and a length of flavour that is in class of its own. At the Ca’ d’Gal ristoro they match this with everything from cured meats, cured fish and foie gras, through to Brös—the tangy ricotta and grappa specialty of the region. This can age extremely well, developing deeper lime and aged Riesling notes. It opens with a spice-box bouquet that takes all the confections of Autumn and Christmas blended with dried apricots, peaches and cedar shavings. It's silky smooth yet lifted and decidedly savory, with a burst of ground ginger and sour citrus complicating its remnants of tart orchard fruit. The 1988 Marsala Vergine Riserva mixes amber with red hues, lifting up dusty and savory with notes of cave-aged gouda, quince, baked apple and clove. With time in the glass, it gains in volume, evolving to show rich dark chocolates and dried roses. There are depths of texture here, yet it's wonderfully balanced by vibrant acidity as salted caramel and exotic spices wash across the palate, leaving a coating of mineral-drenched orchard fruits under an air of burnt sugar and tobacco. The experience goes on and on, as minutes can go by, and you're still not just tasting but feeling the 1988's glycerol heft lingering incredibly long. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
