Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Casa Rojo Machoman Tierra de Murcia Monastrell 2020Big fan of Jumilla Monastrell, there's great Monastrell made in Spain, with a ton of character. The grapes are from 13 plots of Monastrell vineyards in La Raja (where the winery is located) between the mountain ranges of El Carche and La Pila. The vines range from 20 to 70 years old sitting at 800 metres, within the wine region D.O. Jumilla, in the south of Spain. Steel tank ferment with 5 months in small French oak.Red licorice, pastille fruits, and a hint of charry savouriness and scorched earth layered in with sweet, heady spice. Black cherry, black raspberry fruit paint the palate then slowly melt away to reveal spice box and savory herbs then rushes back in with plum, blackberry compote, blueberrie, and blackcurrant that bring the finale to a luxurious finish that trails off with some dark chocolate, and tobacco.

Gewurtztraminer can be often misunderstood with low quality examples from the and 80's and 90's still in the minds and on the palates. This is a great wine to help change that mindset. Floral notes with honeysuckle leap from the glass with a hint of white pepper and the traditional spiciness. Due to an drier than normal vintage the alcohol is lower than usual and coming in at less than 1g residual sugar, there is a mineral freshness not often seen from this varietal. The palate follows the nose but brings in elements of stone fruit and sweet spice. If you haven't had a Gewurtztraminer in a hot minute, this is perfect. RICH
Hard as it may be to believe, this gewurz has stacks of yellow rose and star fruit aromas, but is only medium-bodied and tastes so bright. Casa Castillo La Tendida Monastrell 2021The 2021 La Tendida is the second vintage of this wine from young vines planted between 2006 and 2010 in an area where they are going to keep growing as they transition from the valley to more limestone-rich soils in other parts of the property. Raventos i Blanc Brut 'De Nit' Rosado Espumosa Cava 2021A dry pink style of sparkling, using the classic blend of xarel.lo, parellada and macabeu, along with monastrell to create an amazing pink hue to the wine. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.
Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess. Nice false sweetness on entry -the balance is ultimately off-dry, juicy and gentle, with high quality delicate bubbles underpinning the fruit, cutting the fruitiness and running on to a super-gently acid close.
