    STAGE 3  - FLAT MON - PLAISANCE > TURIN 230.8 KM

    Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.

    The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener.  Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

    Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

    30ml gin - Haymans is our choice
    30ml Turin Vermouth Drapo Vermouth Bianco 16% alc
    20ml Lillet Blanc
    15ml grapefruit juice, freshly squeezed
    1 grapefruit peel, for garnish

    Combine and stir gently but patiently in a rock glass then garnish with citrus peel

    Henriques & Henriques Madeira Sercial 10yo 500mL

    Sercial is the driest style of Madeira and this 10-year-old has vibrant acidity. A rich tawny colour with aromas of fruit cake, nuts, dried orange peel and citrus freshness. An initial figgy richness on the palate gives way to notes of fresh citrus, toasted almonds, walnuts and savoury umami notes. Finishes crisp and dry with a delicious salty tang. This type of Madeira won't improve with bottle age, but an open bottle can keep for several months. DECANTER

    100% Sercial grown on mixed volcanic soils and hand-harvested mid to late September. Fermented with some whole-clusters with skin maceration in lagares with native yeasts. Matured in canteiro; aged in balseiro (large cask) and pipas (pipes) for a minimum of 10 years. Winemaker: Humberto Jardím. Vegan. TA 5.8 g/l, pH 3.52, RS 55.1 g/l.

    The non-vintage 15-Year-Old Verdelho has a Baume of 1.9 degrees. It has a terse, orange rind, California raisin and dried apricot-scented bouquet with attractive resinous aromas emerging with aeration.     The vintage plays an inevitable role here, it is a gorgeous rendition of this wine, the white that accompanies Stephanes revered reds, and has the track record to back it up, as well as the mountains of press. This is the current release to Australia and the few years in the bottle have drawn out more of those robust, ripe and rich stone fruit notes. It's still essentially a pup but you see some move towards expansion on the palate and more nuance now on the nose. More clearly defined aromatics that offer up hedonistic and sweetly perfumed fruit, wild flowers, nectarine and a glass full of mixed citrus juice (only way I can think of describing that character). It leans in to sensuality in the mouth, there it caresses as it easily fills your palate with its delectable fruit salad like array of flavours. It is easy to miss the force behind it, almost, it really hits the finish hard with a burst of rocky minerality and an emphatic punch of intensity that leaves your palate feeling stained. For me this is where I would like to drink this wine. While both youthful enthusiasm and some richer elements are at play. There is no doubt in my mind that most fans of Condrieu will ignore that and throw this in the cellar for a decade. Don't get me wrong, the wine will be super then too. I just love the power that 19 brings with the vigour and liveliness of Stephane's style and I find this part of its life to be particularly enjoyable. It's a tremendous effort. ROSCOE

    Canonita! What is it? Think Aperol but better. Ok. Bold statement but this stuff is absolutely delicious. It's made from the best organic Canoneta oranges from Mallorca's Sóller Valley.

    The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Thanks to its unique terroir it is the centre of citrus cultivation in Mallorca for over  a  1000 years and the valley is theoriginal home of the highly aromatic Canoneta orange, considered the "queen of oranges".

    Carefully crafted by Antonio Nadal, Mallorca's oldest and most renown distillery, the Canoneta essence is blended with white wine and refined with a secret selection of herbs from our beautiful island.
    Its beautifully fragrant with fresh crushed orange, citrus peel, delicate sweet floral notes and a gentle bitterness of fresh cut herbs. This is perfect as a spritz or even with tonic but honestly we would happily drink it with ice and a dash soda as an apertif all summer long.

    Classic Victorian wines don't get much better than this. If you are unfamiliar with Bowerbird Wines (very little wine is made) then you're in for a real treat here. Mouth-coating, textural, full-flavoured wines that offer bountiful pleasure right to the very last drop.

    Kirilly Gordon is a quiet achiever. Her force is much greater than her stance. The humble Bowerbird Wines is the most underrated producer in the state. By day she's Denton in the Yarra and by night Bowerbird Wines soar. Kirilly's turning point in the wine industry was working at Bindi, where inspiration by Bill and Michael Dhillon came to the realisation that nurturing vines and grapes to create delicious quality wines is a pretty great way to live a full life. And I'm very glad about that.

    Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Ripe peach, honeysuckle and fresh nut characters alongside the Bowerbird silky finesse that holds everything together.  A serious wine jam-packed with flavour and refreshment. KAYLEEN REYNOLDS, pws

    Barrel fermented and matured for 10 months in large-format oak. A bright green gold. A hedonistic bouquet of ripe nectarines and apricots together with glacé ginger and honey. Textured but not overdone on the palate, which is gently saline and very nicely balanced.       Dolin Vermouths are notably lighter, drier and less pungent than their larger commercial counterparts. The particular mixture of plants found near Chambéry give a fresh, restrained and elegant nose, with a subtle, complex bittersweet palate. Even the Blanc and Rouge retain great balance, with the sugar never cloying, and just enough bitterness to whet the appetite. Each can be enjoyed as aperitif on ice, with a twist of citrus, or in a broad array of traditional cocktails.

    Planted at altitudes up to 400-metres located in the north of the island (Ponta Delgada and São Vincente), this late maturing grape is used to produce fruity, medium-dry styles. Considered a favourite amongst Madeira’s winemakers due to it’s ability to balance acidity, sugar and alcohol, at this level Verdelho produces a striking, off-dry wine that can also be served as an aperitif, with tapas dishes or more complex seafood dishes. With age, the wines grow in intensity, developing delicious honeyed depths and a creamy texture that is balanced by its racy acidity.

    Maidenii Roselle Bitter 750ml
    Roselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures . The residual sugar, from grapes only, is around 100 g/l, indicating a more Aperitivo style but it is very well suited as a Bitter, to the growing category of low sugar/low alcohol cocktail.
