Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. The Valley is located on Mallorca's northwest coast and sheltered by the Tramuntana mountains is a magic place. Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

Raventos i Blanc 'Blanc de Blancs' Espumoso 2021Raventós i Blanc is a small, family-owned concern, based on 90 hectares at Sant Sadurní d’Anoia, which has been in the family since 1659, and has been a wine-growing estate since 1497. Their 'Blanc de Blancs' is a blend of Xarel.lo, Macabeu and Parellada, the varieties are fermented separately then blended before second fermentation. Minimum lees aging is 18 months and dosage is kept to a minimum, keeping it extra brut in style.
Typical of the Raventos i Blanc house style, this is a supremely elegant and delicately textured premium sparkler, featuring fresh apple and fine sand earthiness. Nestled into the characteristic fine bead are twinkles of seaspray, white nectarine and green pear; it’s deft, delicious and has lovely flavor and mouthfeel as well as crunch and race. Outstanding wine for the price.

Raventos i Blanc Brut 'De Nit' Rosado Espumosa Cava 2021A dry pink style of sparkling, using the classic blend of xarel.lo, parellada and macabeu, along with monastrell to create an amazing pink hue to the wine. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.
Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess. Nice false sweetness on entry -the balance is ultimately off-dry, juicy and gentle, with high quality delicate bubbles underpinning the fruit, cutting the fruitiness and running on to a super-gently acid close.

Ca D'Gal Moscato D'asti DOCG Vite Vecchia 2016As the name implies, Boido’s Vite Vecchia is drawn from old vines, a single parcel on just one hectare of the steeper, limestone-rich slopes of the Valdivilla hillside. Sandro's grandfather planted it with the old Moscato cultivar Canelli Moscato some 60 years ago. The wines are stored on cork for later release in large wooden boxes packed with sand. This is a traditional method of bottle maturation once used in the area, moderating temperature and moisture and blocking out all light.
This is a unique and compelling version of Piemonte’s famous sweet wine. Thanks to the vine age, south-facing exposure and unique blue tufa (clay/limestone soils), the vines here produce intensely flavoured, golden bunches of grapes that, in turn, gift a gloriously deep yet vibrant Moscato with greater textural depth and vinosity than you could have otherwise imagined possible from the grape. An earthy/smoky/mineral impact and complex development might remind you of a Riesling or even an aged Sancerre.

Ca D'Gal Moscato D'Asti DOCG Sant Ilario 2020This wine is simply a revelation. It’s drawn from a single hectare of 70-year-old vines, some 10 kilometres from Boido’s winery in Cassinasco, on a south-facing hillside with limestone-rich soils. Cassinasco is one of only 19 villages (out of a total of 52 in the Moscato DOCG) included in the newly ratified Canelli DOCG. Moscato fruit from this subzone surrounding the town of Canelli has been grown since the 13th century and has always been associated with greatness. It is in the heart of the region, where the chalky soils and high altitude are perfect for Moscato.
It’s a mould-breaking wine of cut-glass purity and restraint, with a fine chalky texture and mineral zeal. The perfume offers gentle notes of grapefruit and lemon sherbet, while the palate is so fine, buoyant yet restrained, shot through with white peach, nectarine and lemon zest. Everything is in its place. It has salty, crystalline freshness, an intense, chalky finish and a length of flavour that is in class of its own. At the Ca’ d’Gal ristoro they match this with everything from cured meats, cured fish and foie gras, through to Brös—the tangy ricotta and grappa specialty of the region. This can age extremely well, developing deeper lime and aged Riesling notes. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
