Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

Pieropan Soave Classico 2023Leonildo ‘Nino’ Pieropan, who sadly passed away in 2018, was the first to show the world just how great Garganega, and Italian white wine, can be. He recognised the importance of terroir early on, acquiring various hillside vineyards (including Pigno, Becco, Boiolo, Tondo, Palestrello and La Santa) and expanding the prestigious Calvarino and La Rocca vineyards, first made as single vineyard crus in 1971 and 1978 respectively.
Today, sons Dario (winemaker) and Andrea (viticulturist) continue the family tradition. The brothers have converted all of their vineyards to organic and are overseeing the new winery being built amongst the vineyards just outside the village.
Mostly Garganega with about 10-15% Trebbiano di Soave, this is wonderfully aromatic - not a common feature of Soave - with floral notes (cherry blossom), citrus, stone fruit and almond. The palate is delicate and focussed, with excellent depth and lovely overall balance.

Gloriously perfumed and so enticing. You could wear this as a perfume. People would think you are nuts, but you would smell amazing! Big, super concentrated, it hits your mouth with intent, absolutely engulfing the palate with the same heady array of character that is suggested on the nose. So much weight and richness but there is the sweep of uplifting acidity that washes away any lingering sweetness and leaves your palate feeling refreshed and enlivened. Long and stimulating across its length with a final flourish of citrus like acidity and fine saline edge. This is a wonderful bottle of wine that had me coming back to it over 24 hours or more. Wow, is it salty or is it sweet? The 2017 Recioto di Soave Le Colombare lifts up with dusty yellow flowers, dried tangerine and orange zests complemented by crushed almonds and hints of confectioners' sugar. It's silky-smooth yet not weighty in feel, with zesty citrus and tropical fruits motivated by brilliant acidity. The balance here is unreal, as the 2017 hides its 120 grams of residual sugar very well, maybe too well, making it easy to like but also dangerously easy to drink. A rapier-like thread of acidity compresses quince, tangerine, tamarind, truffle, cardamon and glazed stone fruits into a ball of such tension and freshness that the finish is not only endless, but uncannily dry. Le Battistelle 'Battistelle' Soave Classico 2022Le Battistelle is simply one of the Soave Classico’s best producers. They have some of the most incredible hand tended terrace vineyards with vines up to 130 years old. There are records of the Battistelle vineyard going back to 1644. Fantastic volcanic subsoils plus the estate is classified “Viticoltura Eroica” or Heroic Viticulture which appears on the label of the Battistelle cuvee. It stands for the hard work that production of these wines requires.
Owned by Gelmino and Cristina Dal Bosco who after working for larger co-operatives in the region passionately wanted their estate, and started in 2002 under the Le Batistelle label. They own just over 9 hectares (100% Garganega) divided across four small plots all situated in the hills of Brognoligo.
The 2022 Soave Classico Eroica lifts from the glass with a savory blend of dried peaches and apricots, complemented by hints of fresh mint and crushed stone. It’s soothingly round in character, resonating with ripe orchard fruits and citrus-tinged inner florals over a core of tantalizing acidity. Its minerality comes forward through the close, as this plays out a sweet-and-sour act on the palate and hints of candied lime slowly fade. Yeringberg Marsanne Roussanne 2022A blend of 60/40% marsanne/roussanne, picked three days apart, fermented together in tank, then aged in old barrels for 10 months. A bright green gold. Aromas of ripe pears and apricots sit alongside some lemon conserve, pink grapefruit and orange blossom scents. It’s a compelling mix that flows through onto the palate, which is gently textured, saline, and very well structured. I really like the touch of the grip on the finish too, and as good as this is now, this will age gracefully over the next five to seven years at least. Yeringberg Marsanne Rousanne 2016Marsanne 59%, Roussanne 41%. Our white Rhône blend is a subtle wine that displays restraint and quiet power. It starts subdued, with hints of pear, honeysuckle, lanolin and quince. With air it expands, building depth and breadth, showing notes of honey, lemon and jasmine. On the palate, it's both taut and well rounded, savoury and subtly pithy, but also spicy and gently viscous. It's a fabulous food wine that manages to complement both delicate and more fully flavoured dishes and, unusually, satisfies both white and red wine drinkers. Full of promise, the 2016 is certainly enjoyable now, and will continue to evolve over a number of years. SANDRA DE PURY

Suavia Soave Massifitti 2020The Suavia winery has captured my attention over the last few years. Run by three sisters and located within Soave Classico, Suavia produces a portfolio of terroir-driven wines that impress for their depth and undeniable elegance. Year after year, I find the Monte Carbonare to be one of the best interpretations of this vineyard. This is also one of the few estates producing a varietal Trebbiano di Soave in the region. The Massifitti is the first wine here that caught my attention.
Wickedly fresh, the 2020 Trebbiano Massifitti bursts from the glass with a mix of savory herbs, dried flowers, gingery spice and dried peaches. It’s round and soothing, with a salty core of minerality and depths of tart orchard fruits and citrus tones, all guided by brisk acidity. The Massifitti finishes long, leaving a lemony concentration that puckers the cheeks—wonderfully balanced and begging for further cellaring. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
