Drapo Vermouth BiancoSTAGE 3 - FLAT MON - PLAISANCE > TURIN 230.8 KM
Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

Stephane Aviron Beaujolais Fleurie 2022From old vines located on the steep slopes of the highly regarded La Madone vineyard. An outstanding Fleurie that captures the beauty and elegance of the appellation and pairs it with some real depth and dimension. The floral lift amidst the black fruits gives this away as Fleurie, but on the palate the flavours expand further to reveal sage, black tea and turned earth. Daniel Bouland Morgon Corcelette 2022The "regular" bottling of 2022 Corcelette from Monsieur Bouland is another lovely example of this very strong vintage. It is deep, bright and sappy, offering up a nose of red and black cherries, sweet cranberries, vinesmoke, gamebird, a dollop of fresh thyme and a very pretty base of soil tones. On the palate the wine is vibrant, full-bodied and deep at the core, with a fine foundation of soil, bright acids, moderate tannins and great focus and grip on the long, complex and beautifully balanced finish. Of all of Daniel's outstanding 2022s, this is certainly the first cuvée I would be reaching for to drink now, as it has a sense of wide open generosity that is not evident with most of his other, more structured wines from this vintage. Gewurtztraminer can be often misunderstood with low quality examples from the and 80's and 90's still in the minds and on the palates. This is a great wine to help change that mindset. Floral notes with honeysuckle leap from the glass with a hint of white pepper and the traditional spiciness. Due to an drier than normal vintage the alcohol is lower than usual and coming in at less than 1g residual sugar, there is a mineral freshness not often seen from this varietal. The palate follows the nose but brings in elements of stone fruit and sweet spice. If you haven't had a Gewurtztraminer in a hot minute, this is perfect. RICH
Hard as it may be to believe, this gewurz has stacks of yellow rose and star fruit aromas, but is only medium-bodied and tastes so bright. Pierre Marie Chermette Beaujolais Les Griottes Beaujolais 2023 375mlThis mouthwatering crowd-pleaser is named after a grove of cherry trees that flank the vineyard. The fruit is drawn from 30- to 40-year-old Gamay vines, grown in dark granite soils around the Chermette homestead in Saint-Vérand, southern Beaujolais. In contrast to his age-worthy Crus from Moulin-à-Vent and Fleurie et al., Chermette aims to produce something light-to-medium-bodied, bright and cherry-fruited with reach-for-another-glass charm.
The winemaking has remained unchanged for decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks still the order of the day. The nose is so exuberant you could be tasting out of barrel, flush with easy-going, lip-smacking red fruit flecked by red floral notes. The palate tells the same story through waves of vibrant, tangy berries and cherrystone fruit. As always, it is a delicious, moreish wine and fabulous value.
