    Guilhem Grosperrin to resurrected one of the greats houses of the of Cognac Mestreau Cognac. In 2010, he was given an opportunity to purchase 250 bottles of early nineteenth-century Cognacs from the personal collection of Abel Mestreau and with that Frederic Mestreau was reborn.

    Today the operation is based in the town of Saintes, located a little outside of Cognac and continues to produce some of the best value, highest quality cognacs of the region.

    This gin was originally the result of a conversation between Cameron (our distiller) and Jason (then Group Bars Manager at Keystone, and one of the World’s Top Ten Bartenders) back in 2014 - they wanted to create a gin specifically for the Negroni. Something to cut through the Campari and vermouth. And as the Negroni has always been a favourite at Four Pillars, Cameron jumped at the chance to make the first collaboration in our Bartender Series a tribute to the very definition of a perfectly balanced cocktail.

    Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters.  But although very powerful, the spice tends to glow rather than become hot.

    We also decided to use beautiful organic blood oranges in the botanical basket, as well as some ginger.  These wonderfully fragrant fresh botanicals help lift the spice to another level. Finally, we opened up the plates to add weight and intensity to the gin. fourpillarsgin.com.au

    Dark Matter Spiced Rum (700ml)
    This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.

    Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

    Chichibu Ichiro's Malt & Grain Whisky (700ml)
    Ichiro Akuto's most voluminous and accessible Whisky is, as it says on the label, a blend of Malt and Grain Whiskies. While the exact source of the material is not published, we know it's a blend of Japanese distilled material vatted with Whiskies sourced from around the world. In addition to Whisky from his own stocks--including, potentially, Hanyu and Karuizawa, as well as his own Chichibu--the blend contains spirits from Canada, the United States, Ireland and Scotland. The imported Whiskeys are 3-5-years-old, aged in their country of origin before being carefully blended with local Japanese material and matured a further 1-3 years at Chichibu. The Whisky is vatted in 2 x 5,000-litre wooden barrels built by French cooper Taransaud. Non-chill filtered, non-coloured.

    Originally designed as a homage to the best London Dry gins, Animus's Classic Dry took on a life of it's own when lemon myrtle and mountain pepper berry were added to the rich, juniper led base. These Australian natives add a subtle, citrus and piquant edge, while dialing up the aromatic complexity. You don't have to look hard to find the freshness provided by the ingredients harvested from the distillery's gin garden. These botanicals also add intensity and depth. We love the classic juniper, sappy freshness offset by the smooth texture and complexed by the deeper, spice driven undertones. Classic yet with a twist.

    Kings Straight Bourbon 375ml

    Kings County Distillery’s Straight Bourbon is made from New York State 80% organic corn and 20% English malted barley, is twice distilled in copper pot stills and then aged in new charred oak barrels. Rich in caramel, vanilla, and holiday spice, this bottle is cited frequently in lists of best non-Kentucky bourbons. Aged for at least two years, this is a precocious whiskey, surprisingly robust for its age.

    The Herno Gins are contemporary gind in a classic mould with some native botanical added. Meadowsweet is the most unique and has a somewhat subtle aroma reminiscent to almond. it is, most importantly, a traditional component of Scandinavian Meads as well as wines and preserves.

    Among other it has been awarded with IWSC World’s best London Dry Gin, World’s best Gin & Tonic and a Double Gold at the San Francisco Spirits competition.

    There is a sweet grassy/floral element with savoury coriander and juniper to the fore. The flavours ebb and flow on the palate gently pushing and pulling between savoury corriander/cassia bark and sweet vanilla. There is an almost confectioned element but it is soft and beautifully done. The flavours are long and lingering and there is a crunchy black pepper, green herb spice element on the close. PWS

    Like the Sloe Gin the Hernö Old Tom Gin is made from the same distilled gin as Hernö Gin, but with an extra amount of Meadowsweet added in the distillation and after diluting it down to 43% we add a touch of sugar. The sweetening lifts the floral notes, releases an array of juniper and makes the gin even smoother. This is a typical Old Tom with flavours amped a little higher on the scale but overall a smoother and richer result. Delicious stuff! PWS

    Hernö Old Tom Gin is full-bodied with woody spice. Followed by bright, juicy, juniper and floral notes. Super-smooth texture with a light sweetness and botanical notes.     Balcombe is the brain-child of Barney Flanders and Cam Marshal. A coastal inspired Gin from there home in the Mornington Peninsula. Barney is the man behind Garagiste Vitners and together with Cam have created one of Australia's best and most unique gin's.

    Balcombe is composed from 20 different botanicals and contains unique ingredients like foraged Samphire, Saltbush, Kelp, Wild Fennel, and Wild Fennel Pollen from the Mornington Peninsula to give a true coastal flavour.

    We have also included Java Long Pepper, Blood Orange, Lemon Verbena, two types of Coriander and Ginger for complexity with plenty of Juniper to balance all of those big coastal flavours.

    Grain Spirit base. Great neat, with tonic or in cocktails. We prefer to serve Balcombe with a drier tonic as the iodine and saline character tends to enhance the tonic's sweetness. It makes a drop-dead gorgeous Dirty Martini and it's one of the best matches we have found for a Dirty G & T, paired with Strange Love's Dirty

    Plenty of color, and the nose says it ain’t lying. Sharp warehouse oak aroma puts an edge on an authoritative nose of honey, Indian pudding, spicy hard candy, and old-fashioned root beer, the not-too-sugary kind. Fiery and bold on the tongue as oak roars from start to finish, but the sweetness builds sip-by-sip: cornbread, buckwheat honey, King syrup, and a teasy bit of citrus peel.     Tamnavulin Double Cask Single Malt 700ml

    This is the first release from the distillery since the 1990s. The distillery has changed hands over the last 20 years from Invergordon Distillers to Whyte & MacKay. For a period, it was closed and much of its single malt output was/is used in blends. There were a few sneaky barrels of special release over the years but now there is their own expression and it is delicious! Maturation is started in American oak barrels before a finishing period in Sherry casks - our favourite! What a drop for the money and puts many of the more expensive blends and single malts to shame.

    Its lush, rich and warm with plenty of deep malty, sweet flavour. Brown sugar, stewed apples and dusty cocoa, double cream on the nose. Plum and Christmas pudding with a lovely spiced rum and toffee finish. Perfect winter warmer. Myles, PWS

    We wanted to taste the Juniper. We wanted it to taste different to our Melbourne Dry Gin. We wanted it to taste amazing.

    The Single Shot is a gin made in a single distillation, unlike the MGC’s original Melbourne Dry Gin, in which botanicals are individually distilled then blended together. The result is a full flavoured gin, so much so it may louche (form a fine glazy mist) in a G&T or Martini, which MGC celebrates as a mark of distinction.

    Even before its release, Melbourne Gin Company has received major international accolades for Single Shot becoming the most awarded gin that no one has yet tasted.
