Champagne



The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.

The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.

In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

    Proving superior Blanc de Blancs is quite possible in the Aube's Pinot Noir paradise, this opens with lemon cream and persistent white chocolate and nougat through the palate. Details of white flowers, peach and almond. Very gourmand and complex, and quite a counterpoint to the more austere Chardonnay Champagnes from further north. 100% Chardonnay. Single parcel.     50% pinot noir, 50% chardonnay
    The 2015 Brut Nature Les Blanchiens is a 50/50 blend of Pinot Noir and Chardonnay picked in the eponymous mid-slope parcel in Mareuil-sur-Aÿ. It was aged for 12 months in oak before tirage, then aged for five years in bottle. A deep golden color moves on to a nose that opens with an initial tone of white lilies, followed by melted butter suffused with white pepper. Creamy mousse on the palate accentuates the essential saltiness and highlights the rye crumb and fresh brioche autolysis. This is rich and generous, from ripe and expressive grapes, from oak vinification but also from 2015. The salty verve in the background, however, provides ample balance and freshness.     80% Chardonnay, 20% Pinot Noir from vines averaging 60 years old, the wine spends nearly 6 years on lees. Most importantly only the heart of the pressing is taken - 1400 litres instead of the usual 2100 litres, hence the name 'coeur de cuvee.'
    The 2015 Brut Coeur de Cuvée is a pretty dense wine that belies its deceptively mid-weight structure. What surprises me most about the 2015 is how closed it is. In most years, especially warm years, Coeur de Cuvée is quite a bit more open and voluptuous, but the 2015 does not come across like that at all. Rather, it is super-classic in bearing, with tons of gravitas from the 60-year-old vines just waiting to emerge. There are none of the awkward herbal notes that penalize so many wines. Bright saline notes extend the finish effortlessly. The 2015 is a brilliant Coeur de Cuvée. ANTONIO GALLONI

Brisk acids wrap it all together in style. The 2016 needs a few years to be at its most expressive, as it is pretty reserved today. Even so, all the elements are impeccably put together.     Notes of honeysuckle and lime blossoms, blood orange peel, anise and cardamom are a fragrant overtone heralding this fresh Champagne, which shows good tension and drive.     Since the Larmandiers felt they had picked a touch too early to produce their emblematic rosé in the 2015 vintage, they elected instead to produce the 2015 Extra-Brut Blanc de Noirs, an attractively pillowy, racy, medium to full-bodied Champagne redolent of freshly baked bread, orchard fruit and buttery pastry.     The 2015 Brut Nature Blanc de Noirs 1er Cru is a new wine in this range that emerges from the deeper clay soils found in the southern part of Vertus. A brawny, potent Champagne, the Blanc de Noirs is endowed with tons of depth and some angularity that needs time to soften. It will be interesting to see where this goes in more favorable years.     The 2017 Extra-Brut Cramant Grand Cru is a rich, textured wine. Lemon confit, marzipan, spice and a whole range of tropical accents are dialed up in this exuberant, open-knit Champagne. This is an especially flamboyant style, but it works nicely. The mousse is especially fine, giving the Cramant a decidedly vinous feel. This is tremendous showing in a very hard year that was better in the Côtes des Blancs than in the Marne Valley, where rot was especially problematic. Dosage is 3 grams per liter.     The 2015 Extra Brut Les Chemins d'Avize Blanc de Blancs Grand Cru is a broad, ample Champagne that reflects both vinification in wood and time on the lees. Lemon confit, marzipan, dried flowers, chamomile, sage and spice build in the glass. Powerful and resonant, with no hard edges, the 2015 is terrific. It's also a throwback to the style of the time, and one I must say I like a lot. This is a fine effort for the year. Dosage is 2 grams per liter. ANTONIO GALLONI

    The 2015 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d'Avize opens in the glass with aromas of citrus oil, verbena, fresh pasty, vanilla pod and fresh herbs. Medium to full-bodied, pillowy and chalky, with a vinous, rather concentrated profile and bright acids, it's a little compact out of the gates but appears to be built to age with grace.     The Larmandier family excelled in this cooler vintage, so it's unsurprising that the 2013 Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant has turned out beautifully. Wafting from the glass with notes of crisp yellow orchard fruit, brioche, white flowers, oyster shell and honeycomb, it's medium to full-bodied, deep, layered and incisive, with a tangy spine of acidity, terrific tension and a long, racy finish.     The 2013 Extra Brut Vieille Vigne de Levant Grand Cru is a Champagne of real breadth and substance that captures the essence of these 50-70-year-old vines. Apricot, chamomile, dried flowers and a kiss of oak are all amplified. Vinous and creamy, the 2013 builds beautifully with time in the glass, showing tremendous character and pedigree. The 2013 was fermented and aged in a combination of neutral barrique and foudre. It's a super-classic Larmandier-Bernier Champagne. Dosage is 2 grams per liter. ANTONIO GALLONI

    The 172ème édition, based around the 2016 vintage, is a delicate, floral and saline Grande Cuvée at this early stage in its life. The palate it taut, tightly wound, gradually unfurling into toasted fruit bread, rye bread and roasted nuts, wrapped around an intricate and taut lemon core. It's exceptionally long, spicy, rounded and spherical in shape. Notes of sweet unsalted butter round out the finish, which has such length, elegance and balance. 58% of the wine is from the 2016 vintage, which saw a lot of rain in the spring and close to flowering, with 42% from reserve wines. The blend is made up of 146 separately vinified wines from 11 different years, and the oldest wine in the blend is from the 1998 vintage. (97) NATALIE EARL, DECANTER

    Beautiful notes of dried citrus fruit, lemon curd and dried apples with hints of spices, dried flowers and subtle brioche. I like the polished and caressing texture and steady, refreshing acidity. It's fresh and even austere, with notes of ground spices. So vertical and firm. Structured and long.  (97) JAMES SUCKLING

    Gentle, creamy, pure citrus aroma and ever so subtly toasty. Clementine, jasmine. So many gorgeous layers. Hint of ginger. This is intense and piercing. Not bone dry, and the sweetness shows a little on the finish at the moment even if it is perfectly balanced. More perfumed as it opens in the glass but the autolytic character is gentle.     The 2007 Brut Blanc de Blancs Blanc des Millénaires is the seventh opus of this vintage after the 1983, 1985, 1990, 1995, 2004 and 2006 vintages. This 100% Chardonnay exhales aromas of candied lemon, lemon oil, spring flowers, ripe orchard fruits and hints of pastry.     “The nose is very subtle, has glimpses of oyster shell and lemon. The palate is taut, bright, super-fresh, linear, lemony and just incredibly youthful. The new Blanc des Millénaires presents the very best of the 2007 vintage, one that shows an intense, bristling kind of energy for Chardonnay. A compressed, tight core of chalky, pure flavours – green plum, charred peel, white flowers – with a lick of sea salt. Tasted again in November 2022, this cuvée showed richer sourdough and butter profile, suggesting it is opening up fairly obligingly.     If the 2014 vintage was especially open and demonstrative, the 2015 Cristal is going to require more patience. Unwinding in the glass with aromas of citrus oil, crisp stone fruits, white flowers, crushed mint and subtle hints of buttery pastry, it's medium to full-bodied, deep and layered, with a deep, concentrated and rather introverted core of fruit framed by chalky extract and animated by a pretty pinpoint mousse.     The 2015 Brut Cuvée Sir Winston Churchill shows off the savory side of the vintage to great effect. Hints of dried pear, sage, mint, dried flowers, lemon oil and chamomile open gradually in this mid-weight, lithe edition of Pol Roger's tête de cuvée. The 2015 unfolds nicely with time in the glass, but I wouldn't think of opening a bottle anytime soon. Readers will find a nervy Winston Churchill marked by notable freshness and vigor more than size.     A strong effort in a less-acclaimed vintage, Pol Roger's newly released 2015 Cuvée Sir Winston Churchill opens in the glass with aromas of confit citrus, ripe orchard fruits and dried white flowers mingled with hints of honeycomb, freshly baked bread and anise. Medium to full-bodied, vinous and concentrated, with bright acids, chalky structuring extract and a pinpoint mousse, this inherently rather rich, gastronomic Champagne is quite tightly wound out of the gates and will reward a bit of bottle age.     Subtle and restrained pastry nuances with a hint of mushroom. Lots of seriousness and generosity of fruit but in a more restrained, quiet style.     The MV 18 is a classic Giraud Champagne. Apricot jam, tangerine peel, spice, honey and hazelnut give this mid-weight, classy Champagne tons of complexity and nuance. Readers will find a Champagne of notable purity and finesse. There's plenty of Giraud intensity, but in a mid-weight style that is hugely appealing. The blend is 80% Pinot Noir and 20% Chardonnay, all from Aÿ, based on 2018, with a blend of reserve wines that span vintages 1990 through 2017. Disgorged: November 14, 2022. ANTONIO GALLONI

    This is the bottled essence of Henri Giraud, with the unmissable stamp of Aÿ Pinot Noir. Child of the ripe, voluminous yet fine 2018 vintage, this is replenished with wine from the house's famous perpetual reserve, created in 1990, and is loaded with promise. On the nose, the generous and bold fruitiness is seamlessly integrated into the soft, smoky oaky tones. Dried apricots and sweet nectarines meet exotic spices and candied orange.     Tasted from magnum (the 750-milliliter bottle costs $285), the NV Brut (Gold) opens with lovely matured brioche, toast and ripe fruit flavors. Fresh, pure and elegant on the palate, with beautifully matured flavors and an elegant creaminess I don't find in the other cuvées, the "Gold" is a blend of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier as well as the vintages of 2009, 2010 and 2012.     A blend of the 2016 and 2015 vintages, the NV Brut Blanc de Noirs Grand Cru Les Crayères is an especially good rendition of this almost routinely sublime bottling. Unwinding in the glass with notes of pear, wild berries, clear honey, white flowers, praline and freshly baked bread, it's medium to full-bodied, beautifully layered and textural, with a taut, concentrated core, racy acids and a long, mineral finish.
