Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

Pierre Marie Chermette Beaujolais Les Griottes Beaujolais 2023 375mlThis mouthwatering crowd-pleaser is named after a grove of cherry trees that flank the vineyard. The fruit is drawn from 30- to 40-year-old Gamay vines, grown in dark granite soils around the Chermette homestead in Saint-Vérand, southern Beaujolais. In contrast to his age-worthy Crus from Moulin-à-Vent and Fleurie et al., Chermette aims to produce something light-to-medium-bodied, bright and cherry-fruited with reach-for-another-glass charm.
The winemaking has remained unchanged for decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks still the order of the day. The nose is so exuberant you could be tasting out of barrel, flush with easy-going, lip-smacking red fruit flecked by red floral notes. The palate tells the same story through waves of vibrant, tangy berries and cherrystone fruit. As always, it is a delicious, moreish wine and fabulous value.

Pavillon de Chavannes Cote de Brouilly Ambassades 2022The history of Pavillon de Chavannes is deeply intertwined with that of Château Thivin, another esteemed estate in Côte de Brouilly. In 1861, the Jambon-Chanrion family acquired the estate. The pivotal moment came after World War I, when Yvonne Chanrion married Claude Geoffray, heir to Château Thivin. Yvonne brought with her one-third of her family’s prized vineyards and later acquired another third from her sister. While Yvonne and Claude expanded Thivin’s holdings together, they never had children. Daniel Bouland Morgon Corcelette 2022The "regular" bottling of 2022 Corcelette from Monsieur Bouland is another lovely example of this very strong vintage. It is deep, bright and sappy, offering up a nose of red and black cherries, sweet cranberries, vinesmoke, gamebird, a dollop of fresh thyme and a very pretty base of soil tones. On the palate the wine is vibrant, full-bodied and deep at the core, with a fine foundation of soil, bright acids, moderate tannins and great focus and grip on the long, complex and beautifully balanced finish. Of all of Daniel's outstanding 2022s, this is certainly the first cuvée I would be reaching for to drink now, as it has a sense of wide open generosity that is not evident with most of his other, more structured wines from this vintage. Gregoire Hoppenot Fleurie Les Moriers 2021Hoppenot farms almost three-hectares of this imposing east-facing terroir overlooking the famous windmill of Moulin-a-Vent. Les Moriers shares a border with Poncié, Les Roches and Les Garants and the vines at the top of the vineyard lie a stone’s throw from the winery.
Vine age varies from 35 to 90 years. Rising from 260 metres on the Moulin-a-Vent border to 340 metres at the top of the slope, this steep hillside contains two mineral rich soil types: the vines at the top of the slope are on very poor soils of shallow granitic sand; then it becomes heavier in the Bas de Moriers with increasing clay concentration over the granite bedrock.
