    Developed in collaboration with Mörk chocolate brewhouse in Melbourne, we’ve designed a pure and sweet chapter of a tale many times told. A refined, non-creamy chocolate martini using 100% Venezuelan chocolate––cold vacuum distilled to isolate an authentic flavour. In its cleanest version the chocolate was then blended with dry vermouth and gin to create a full flavoured, elegant chocolate martini. Not heavy, not sticky.

    To serve: Chill in the freezer for an hour prior to serving. Pour into a chilled glass, garnish with a lemon peel.

    (vat/casks) dark red; the nose has a salted tone, with a hint of violets and gently aromatic black fruit on the inside, a touch of charry oak. The palate serves comfortable content with a tasty centre, bonny juice in the fruit with a ripe level of tannin accompanying it. It’s a well organised, gourmand Lirac rouge, has southern virtues of round, textured appeal, the fruit lasting well. The oak on the finish needs to drop back, so leave until mid-2024.     A deeply hued and surprisingly concentrated 2021, the 2021 Lirac has lots of ripe cherry and Provençal herb and spice notes to go with a medium-bodied, layered, elegant style on the palate. It's a terrific 2021 that readers will love. JEB DUNNUCK 

    70 % Grenache, 20 % Syrah and 10 % Mourvèdre totally de-stemmed with ferment up to 3 weeks and aged 2/3 in tank and 1/3 in barrel for 18 months before assembling and bottling and ageing another 4 months under cork before sale. These vineyards were purchased in 1997.

    A voluptuous, well-balanced and charming Lirac red with aromas of dark cherries, plums, warm spices and wet stones on the nose. It’s medium- to full-bodied with fine tannins. Juicy center palate with pulpy dark cherries and a refreshing core of purple berries. Well-driven and focused with a flavorful finish. From biodynamically grown grapes with Demeter certification.     48 % Grenache, 35 % Mourvèdre and 17 % Syrah from very low yields of 15 hl/ha, at Domaine du Joncier on the pebble terroir of the Vallongues plateau. Certified Biodynamic, Joncier was acquired by Mont-Redon in 2022 and the wine remains Joncier-labelled. 100 % destemmed with gentle extraction via pumpover. Matured for 15 months in 228 litre Burgundy barrels (Syrah) and stainless steel (Grenache, Mourvèdre). Unfined, unfiltered.

    This wine is incredibly impressive with great energy and intensity while remaining very supple, elegant and fresh. A remarkable success and a great addition to the already outstanding Château Mont-Redon Lirac (one-third of which is from these vineyards at Joncier).

    The 2022 Châteauneuf Du Pape Blanc is Grenache Blanc, Clairette, and smaller amounts of Roussanne, Picpoul, and Bourboulenc. Ripe citrus, crushed stone, white flowers, and even a kiss of brioche all emerge on the nose, and it's medium-bodied, with a pure, elegant mouthfeel, good acidity, and a great finish. It's going to evolve for 10-12 years, if not longer, if well stored. JEB DUNNUCK

    Incredibly mineral and saline with astonishing focus and precision for this very warm location. Great lemon aromas ranging from blossoms to the peel. Great concentration, but no less vitality.     Certified organic. Chèvrefeuilles (pronounced ‘shev-ruh-foy’) is French for honeysuckle, the perfume of which you cannot escape during springtime in the Southern Rhône. Olivier is a sucker for the character and freshness of old-vine Clairette, which now accounts for half the blend in his delightful citrus- and white-plum-scented Les Chèvrefeuilles Blanc, with the remainder made up of 25% Roussanne and 25% Grenache Blanc. The fruit grows on the domaine’s cooler, east-facing sites, where limestone helps to preserve freshness.

    A blend of 90% Grenache (sourced on galets roulés) and 10% Mourvèdre on sandy soils, the 2022 Châteauneuf-du-Pape Piedlong is a stunning wine. Evoking aromas of rose, violets, spices, garrigue and red berries, it’s medium to full-bodied, round and structured with bright acids, a long, delicate core of fruit and a mouthwatering mineral finish.

    Taking its name from the lieu-dit Piedlong, this Brunier family project spotlights Grenache Noir cultivated on sandy soils and galets roulés that define the La Crau plateau. The typical blend for Piedlong comprises 90% Grenache from le Pied Long and 10% Mourvèdre from Pignan. This results in a lighter-hued wine that is more refined in expressing Grenache and Châteauneuf-du-Pape yet retains considerable aging potential. The 2021 vintage stands out as particularly successful despite the challenging conditions, tending toward an earlier drinking window, while the 2022 release represents a superb effort by the Brunier family within the vintage’s context.     Distilled using locally grown barley and Kentish water, this is as fresh and bright as a sunny spring day in the countryside.     The wine of the vintage is the Perrins' 2012 Châteauneuf du Pape Hommage A Jacques Perrin, which has a classic, sexy, accessible style yet is also going to age beautifully. Massive amounts of smoked black fruits, ground pepper, iodine, truffle, and bloody meat all emerge from this inky colored behemoth. With full body, building tannins, no hard edges, and a rock star of a finish, it’s primary and youthful, but incredible.      The same can be said for the 2013 Châteauneuf du Pape Hommage A Jacques Perrin, as this insanely impressive barrel sample transcends the vintage. Full-bodied, decadent and layered, with massive concentration and purity, it’s loaded with black and blue fruits, violets, truffle, licorice and assorted floral notes. This cuvee always shows fabulous fruit in its youth, and it doesn’t start to gain its hallmark gaminess until after a few years in bottle. In addition, this cooler vintage, with its ample moisture and autumn summer, produced Mourvedre with off-the-charts aromatic purity and perfect ripeness.     Extremely aromatic with blueberries, blackberries, and flowers. Full- bodied, dense, and rich yet agile and exciting. The tannins are seamless and beautiful. The finish shows stones and spices.     Described as a "cask-finished English grain spirit" because it hasn't spent enough time in barrel to be designated as whisky (there is a whisky in the works, due for release this year), this has just the faintest hint of pale golden colour and is bursting with ethereal aromas of sweet, freshly milled malted barley, a touch of honey, some lightly toasted linseed and sesame.
