Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. The 2021 The Farm Single Vineyard Cabernet Malbec is a singularly impressive wine: it is juicy and vibrant, but it is also layered with spice, rose petals, leaf/bramble and black tea nuance. The wine is detailed, incredibly so for the price (approximately $35AUD), and is possessed of the Clare Valley regional leafiness that so defines the Cabernets (and, to a certain extent, the Malbecs) from here. Victoria Ordonez Camarolos tinto 2018Wine has been part of Victoria Ordóñez’s life for as long as she can remember. Her father, José María Ordóñez, was a pioneer of the Spanish wine industry, distributing fine wines across the Province of Malaga since the ’50s. Although Victoria’s own professional career took off in a different direction – she studied to be a doctor and has a PhD in Medicine – in 2004 she decided to enter the wine business, initially combining it with her work as a health service administrator.
Victoria admits that she owes everything to the Austrian oenologist Alois Kracher, with whom she worked side by side making Málaga wines until his death in 2007. It was at this point that her career took a fresh turn as she decided to focus exclusively on what had become her passion – the world of wine.
Tasting: Bright red fruits, fennel, and other Mediterranean herbs, chocolate, and violet aromas. Maroon color and fine tannins lend a pleasing structure. Vibrant with red berries and spicy flavors, the wine is at once concentrated and fresh. Beautiful silkiness and great finesse with a very fresh finish.

It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures .
