Laherte Freres Nature de Craie NVDisgorged April 2022. For a number of vintages, Aurélien Laherte has been experimenting with a sans soufre (zero sulphur) cuvée. In 2018 he cracked it with two barrels of Côte des Blancs juice, drawn from two Premier Cru terroirs in Vertus and Voipreux. Laherte noted that the key factors to the stability of vinifying in the absence of any additions were zero dosage and full malolactic conversion.
The third release of Laherte’s Nature de Craie is drawn from a single vintage (2020) drawn from parcels planted in 1960, 1965 and 1987. The word craie refers to the chalky soil of these terroirs, which lie on the lower slopes ensuring good exposure, in turn providing ripeness of fruit and no need for additional dosage. From hand-harvested and traditionally pressed fruit, this release was vinified in neutral oak barrels before aging on cork for 12 months. It was disgorged in April with no dosage. Maidenii Roselle Bitter 750mlRoselle is the common name for Hibiscus Sabdariffa. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures . Francois Chidaine Vin de France Moelleux (Vouvray) 2018Again this moelleux cuvée has a very gentle residual sugar, with just 25 g/l. Unsurprisingly it feels very pure and fresh on the nose, with a very focused style, with scents of peach leaf and some lightly honeyed orchard fruit. The palate is pure, fresh and bright, mixing a pithy substance of both orchard and citrus fruits, fresh and pure, with a very fine acid backbone. This is quite striking in the finish, where it is long and cleansed with wonderful vibrancy. Very good potential here but it needs time.”

Chidaine does not release a Moelleux from his Vouvray vineyards every year—the balance has to be just so—and so you can be sure that when he does it is worth seeking out. It's drawn from the clay-limestone vineyards (of Le Bouchet, L’Espagnole, L’Homme, La Chatterie et al.) and made in the same fashion as Les Tuffeaux. Laherte Freres Les Longues Voyes Blanc de Noirs 2018Disgorged December 2021. Les Longues Voyes translates as ‘the long way’, referring not only to the 25 kilometres that you need to travel from the Laherte estate to arrive at the vineyard, but also to the wine’s extended aging: 18 months in barrel and a further 18-20 months in bottle.
The fruit is sourced from a single hectare of biodynamic vines in Chamery, Montagne de Reims, owned by a good friend of Aurélien Laherte’s. The 35-year-old vines are rooted in clay and silts over a limestone base. The wine was made from a single four-tonne press of grapes, which was naturally fermented and matured in old Clos des Epeneaux and Leroux barrels.
