That said this is still very, very precise and fine with a rich mid palate for sure but then a precise, linear finish.     The nose of the Deutz Brut Millésimé 2016 reveals itself to us with a delicate medley of fruit and pastry notes (apricot and peach tarts) interwoven with white flowers and ground almonds. The palate is direct on entry and shows a lovely vibrant character. Discreet notes of perfectly ripe yellow fruit and flowers are in keeping with the aromas perceived on the nose. The mid-palate gains in complexity to reveal delicate aromas of lovely ripe almonds. The finish is beautifully fresh and mineral with an almost saline dimension to it.

The fermentation was a slow process, as we aimed for a “keeve”—a tricky technique that didn’t entirely go as planned, but still yielded some delightful results.

    The final cider offers a well-rounded apple flavour, complemented by a fresh finish, intriguing tannins, and a hint of funk that adds character. It’s a balanced and enjoyable cider with depth, perfect for those who appreciate a bit of complexity in their glass

    Beginning with the striking, pale copper color, this is very unconventional rosé champagne. Wonderful fruit aromas that range from cherry and wild strawberry to persimmon and candied orange with a touch of sushi ginger.     The NV Dame-Jane is 100% Pinot Noir vinified and aged in amphora. Bright and light on its feet, the Dame-Jane is brisk and yet also shows quite a bit of depth. Crushed red berry fruit, rose petal, mint, crushed rocks and hard candy all grace this super-expressive, mid-weight Rosé. This release is based on 2019, with 40% reserve wines.     Disgorged April 2022. For a number of vintages, Aurélien Laherte has been experimenting with a sans soufre (zero sulphur) cuvée. In 2018 he cracked it with two barrels of Côte des Blancs juice, drawn from two Premier Cru terroirs in Vertus and Voipreux. Laherte noted that the key factors to the stability of vinifying in the absence of any additions were zero dosage and full malolactic conversion.
    The third release of Laherte’s Nature de Craie is drawn from a single vintage (2020) drawn from parcels planted in 1960, 1965 and 1987. The word craie refers to the chalky soil of these terroirs, which lie on the lower slopes ensuring good exposure, in turn providing ripeness of fruit and no need for additional dosage. From hand-harvested and traditionally pressed fruit, this release was vinified in neutral oak barrels before aging on cork for 12 months. It was disgorged in April with no dosage. Bibendum

Exhibiting aromas of citrus oil, crisp green orchard fruit, nashi pear, macadamia nuts and nougat, it's medium to full-bodied, seamless and fleshy, with fine depth at the core, racy acids and a long, mineral finish.     Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties. JASON WILSON, Vinous

    Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Since then he has set about rescuing the ancient ‘heirloom’ varieties of pears and apples that produce tiny quantities and amazing flavour.

    Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet.  This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Cider simply doesn't get better than this !!

    Pomarina takes its name from the Latin word for apple; Poma. In autumn, organically-grown apples are carefully selected and harvested from El Gaitero's own orchards and local growers, which are regulated under the PDO Sidra de Asturias

    Golden with straw/yellow hue. It's floral, skinsy, deep and open in style. There are sweet, nutty, savoury and bitter elements. Abundant small bubbles add to the skin richness, mouthfeel and weight. The freshness of air-dried-apple granola in the cool of morning jostles with the perfume heft of a muggy wheat field after rain. Skins, then seeds and later, a touch of apple core bitterness gives rim to a mouthfeel of brilliant balance, which holds beautifully and releases with a delicate acetic rinse. Apple poetry!

    Tasted from magnum (the 750-milliliter bottle costs $285), the NV Brut (Gold) opens with lovely matured brioche, toast and ripe fruit flavors. Fresh, pure and elegant on the palate, with beautifully matured flavors and an elegant creaminess I don't find in the other cuvées, the "Gold" is a blend of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier as well as the vintages of 2009, 2010 and 2012. This cuvee was elaborated from 85% Chardonnay and 15% Pinot Noir coming from Premier and Grand Cru vineyards older than 40 years old. 2012 is regarded as the vintage of reference of the last decade.

    The NV Brut Rosé is flat-out delicious. The word 'balance' is so overused in wine, but I really can't think of a better way to describe the Brut Rosé. It is not nervy nor overly rich, but just impeccable in its poise and overall harmony. A healthy amount of Pinot lends volume and intensity to this Chardonnay-based Rosé.     80% Pinot Noir, 20% Chardonnay. In 1975 the domaine decided to introduce a ‘natural cuvée’, they didn't add the usual dosage. This resulted in a clear, lively Champagne that was ideal as an aperitif. At this time there were only three producers making this kind of Champagne, each had their own name for the wine: Brut 0, Brut Savage, and in the case of Jean Vesselle, Brut 100%. Today the wine - this wine - is named ‘Extra Brut’. It's very interesting considering the popularity of 'Extra Brut' and zero dosage wines today.     Disgorged December 2021. Les Longues Voyes translates as ‘the long way’, referring not only to the 25 kilometres that you need to travel from the Laherte estate to arrive at the vineyard, but also to the wine’s extended aging: 18 months in barrel and a further 18-20 months in bottle.

    The fruit is sourced from a single hectare of biodynamic vines in Chamery, Montagne de Reims, owned by a good friend of Aurélien Laherte’s. The 35-year-old vines are rooted in clay and silts over a limestone base. The wine was made from a single four-tonne press of grapes, which was naturally fermented and matured in old Clos des Epeneaux and Leroux barrels. There was no malolactic conversion and the dosage was 4 g/L. Bibendum
