Burgundy



The soils and vineyards of Burgundy have been very well defined thanks to the studious Monks a few hundred years ago - and the swathe of others who have picked up the baton since.

The Golden Slope (Cote D'or) is divided into two; the Cote du Nuit to the north and the Cote de Beaune to the south. Pinot noir dominates the Cote du Nuit as it loves the limestone nature of the soils and Chardonnay thrives in the heavier calcareous marl soils on the Cote de Beaune.

The essence of Burgundy comes down to the place where the vines are grown. The more definitive you can be (e.g. a single vineyard like Grand Cru or Premier Cru) then the higher the price you'll pay. A village wine, which will most likely be a blend of vineyards from within the village won't be as expensive as its origins are a little broader.

To the north, Chablis is an outpost. Lying closer to Champagne than the Cote d'Or, its marine fossil laden soils (Kimmeridgian clay) make scintillating renditions of chardonnay which age beautifully.
To the south the Cote Chalonnais, Maconnais and Beaujolais make wines that are easier on the pocket. There's some great value to be had here. A few different grapes are added to the mix including Gamay and Aligoté (as well as pinot noir and chardonnay).

Styles
The purity of chardonnay is on full display in a bottle of Chablis. Chiselled and tightly wound this is a crisp and salivating white. White Burgundy tends towards a riper heart but with spicy oak support.

The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.

The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.

In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

    Nectarines, grapefruits and lemon curd hint towards ripeness on the nose. The palate is a delicious mix of citrus and crisp orchard fruits threaded with a minerally inflections and ginger spice. There is fine mid-palate density to the delicious and lightly stony flavors that deliver fine length on the bone-dry and highly refreshing finale.     Very aromatic, some nice width to these aromas too. Juicy, easy, open, faintly saline accents in this complexity - just a modest suggestion of reduction in these flavours but it's a very drinkable, indeed delicious wine… BILL NANSON

    Celine Gueguen Brocard and Frederic Gueguen are a refreshing new voice amongst the mineral soils of Chablis. Though their experience runs deep. Celine is the daughter of Jean-Marc Brocard, the respected Chablis estate where she worked with her husband Frederic for over a decade.

    Winegrowing runs in Celine's blood. Plots from her great grandmother established in 1882 have been passed down the line to her. Her mother, also a wine grower instilled a strong work ethic in her daughter. To say wine ran in the family is an understatement.

    That classic stoney-Chablis-esq vibe here. Why do we mentione that because a warming climates and changing syle doesn't always present but here it does. Nice balance with the fresh white tree fruits cut by a saline line of acicidity and sprinkled with a little white pepper, quartzy thing going on. Nice little push of fruit out the back with loveley virbancy and purity offset with a little leesy funk.

    Makes you smile this wine. There's a generosity of aromatic that leads you through baked pastry, fresh cut stonefruits and then an invogorating punch of crushed stone minerality puffs into view. It's kind of like a Champagne letting it's hair down on the palate as well, genrosity of well-defined fruit is edged with minerality and oyster shell while the fine bead cinches and tucks in the effusive edges. Its got enough in it for the serious-minded fizz drinker but is also playful and generous enough to keep you pulling it out of the fridge for pretth much any pcassion. MICHAEL MCNAMARA

    This thing hits it out of the park in terms of delivering quality and value. It doesn’t hold back with packing in the flavour either. The fruit is present and accounted for, with a nice lick of minerality and some back end punch, but what is really striking is the yeasty, brioche, burnt toast mealy characters that immediately greet you as you take your first sniff. It has all the bells and whistles. As a Champagne nerd I love to see that in the wine, as distinctly different to my fetish for Grower Bubbles, give me some of that expressively yeasty goodness. Substantial length here too. This will be one hell of a crowd pleaser. ROSCOE

    Olivier Morin took over the family business in 1992, after a first life spent in the music world. The 14ha domaine is currently undergoing organic certification. When he took over, his parents were making just their three appellations: Aligoté, plus Chitryof both colours. The continuity of this approach is reflected in Olivier's 'Constance' cuvées, to which he has added an old-vine Bourgogne Chitry white called Olympe, after the original owner of the vines, and a single vineyard red, Vau de Puits.     Nathalie Theulot’s Côte Chalonnaise white is usually a domaine bottling drawn from vines in Mercurey. In 2022, hailstorms reduced yields by 60%, meaning this year’s wine includes a measure of purchased grapes. It’s a delicious, pulpy white that wafts from the glass with buttercup, fleshy stone fruit and citrus. The palate is attractively punchy and succulent, its’ satiny texture flecked with stone fruits, rock melon and sweet orange with a nip of reduction tying everything neatly together. The finish is bright and tangy with lingering grapefruit pith and smoky spice flavours. Value-conscious Burgundy hunters will find satisfaction here.

    From two leui dits - Les Clous Perrons, les Magnys - in Meursault with time on lees in barrel to bring weight and texture with 12 months and 10% new oak. From vines 50+ and 25+ years old. Again those beautifully handled lees add something to both the feel of the wine and its aromatic profile. That is one of the hallmarks of these wines and its great to see at this level. Ample roundness and generosity, but there is zip and pep too. Salty minerality here! Very good Bourgogne. Better than its classification.

    WORTH A SPECIAL SEARCH - An airy transparency to these top notes. Cool, the most mineral and incisive of these wines. Slowly building a floral perfume in the flavour and holding that floral perfume the longest in the finish. Also chalky finishing but seemingly with even finer texture.     FIVE STARS - A pale colour with some lime tints. Fresh apricot and pineapple but not disagreeably tropical. If you could have pineapple blossom it would be that.     Here's a nicely composed white Burgundy from several parcels of 40 year old vines on average, with pretty meadow flower aromatics mingled with ripe citrus and white and yellow-fleshed orchard fruit. The palate is broad and ample without any heaviness and the depth of flavour and length are impressive indeed. This is a wine "toute en finesse" as they say, but also with power and palate presence.     A slightly riper though still agreeably fresh nose combines notes of orange peel and various white orchard fruit scents. The delicious, fleshy and round flavors are quite supple while retaining good if not truly distinguished depth and length on the clean, dry and inviting finale.     On the nose this is quite pretty, but reserved with just a little meyer lemon, chalk dust and lemon drizzle cake type of feel. Take a sip though and it's a different story, this is bursting with energy and mouth-watering intensity. There's a spear of bristling, lemony acidity that whisks the wine across the palate at some pace, leaving behind it a lovely undercarriage of oily, mouth-coating texture which then gives way to a powdery, sparkling finish. It's screams for a plate stacked high with calamari dusted in semolina and flash fried in good olive oil. Such a charismatic wine. ALEX DOBSON, PWS

    Easily the best Ratafia I have ever tasted. Yes, the sample size is not large but it comes as no surprise knowing Vilmart's track record of making fine wines. Ratafia de Champenois AKA Champagne's vin de liqueur.

    100% chardonnay from premier cru sites in village Rilly-la-Montagne of Montagne de Reims. Fermentation is stopped before completion by adding young grape spirit resulting in a sweet, full-flavoured wine that is delicate and oh so elegant. A must have for the festive season alongside Nan's pavlova or a stinky wash rind cheese. (serve chilled)

    Candied apricots, lemon curd and cashew nut, instantly we know we are onto a great thing here! On tasting, we see wild honey on buttered toast with orange peel and white nectarine, all laced around stoney minerality.     From the Montagne de Cras, plot in Nantoux, the soils here is very varied, stony, but also full of clay. The 4-hectare plot is made up of 3 hectares of vines and 1 hectare of natural areas of great biodiversity: scree slopes, hedges, orchards, limestone grasslands with numerous orchids and even a few corm trees, which are extremely rare these days.

    In the winery, the fruit is whole bunch pressed into part barrel (25% new) and part small stainless barrels and left to sit on lees for up to 12 months.

    Rich and generous citrus fruits, honey and subtle floral notes, rounded out by a nice integration of oak and balanced acidity.
