Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.

This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

Enlists all of grigio's strongest varietal trademarks from the gentle blush colour and scents of pear, honeysuckle and apple to the savoury nod on the palate, crisp acid flow and touch of salty almond to close. Made by sommelier-come-Italian wine rep-come Italian wine tragic, James Scaresbrook, his renditions of Italian varietals are some of the most convincing you will find. That's not to say I like them because they're mimicking the Italians. Nup, not at all, and in fact the fruit spectrum generally shows it's antipodean origin. Through intelligent winemaking techniques (often observed in his own travel in Italy) he brings texture and aromatic complexity to these varieties. It's a recognition of how these varieties work with food and transports them from dry white and red wines to something with altogether more interest.

A recent appointment trying through his range only highlighted what good things James is doing. His wines are all on point with thougtful winemaking inspired their homes in Italy but not dogmatically so. James is happy to changed tact here or there if he sees something not working or vice versa if a wine is expressing itself in a way he likes but moves away from his original idea hes is not afraid to let it do its thing.

Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Deliciously intense fruit on palate with a touch more dimension than the Quealy pinot grigios. It's truly more than the sum of its parts. How do you make a melange of fruity, bitter and salty so perfectly? So easygoing, delivering the goods, not stingy on flavour, not pushy with perfume. Just right. Iconic 80s model asked Soho Brasserie bartender, Dick Bradsell to make her a cocktail to “wake me up & f***k me up". A shot of espresso into a Black Russian recipe, created the ‘EspressoMartini’. Ours, tonka bean & fresh vanilla––think almond & baked goods–– gently supported by fragrant orange, & cold brew coffee––to wake your senses (not f**k them up).

To serve: Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Members of the Pooley family have been actively involved in the business for three generations. Their longstanding passion and commitment to fine wine are your assurance of un-compromising quality.

Comes mostly from the family vineyards in Richmond and Campania, Coal River Valley. The fruit was chilled to 5 degrees then whole-bunch pressed to tank. Cold settled and racked to tank for ferment. 3 months on fine lees with a total ferment time of 14 days. Alcohol: 13.3 PH: 3.1 TA:  9.0 T/Ha Bottle Date: 2th August 2023. Residual Sugar: 0 g/L.

‘A vibrant aroma of citrus blossom, candy apple and yuzu on the nose. Bright characters of white peach and apricot follow on the palate with subtle notes of green apple and beeswax. Strong acid and persistent length finish this lovely wine.’ Anna Pooley, Winemaker.

The world has enough bad gin. What it doesn't have is perfectly-balanced Australian craft gin blended with Yuzu juice imported directly from the Japanese highlands. Let’s be honest - cellos sound kinda nice and we all pretend to love them if we are on a  first date, but most of the time: BORING. Not any more. This cello is a disturbed, unhinged, raging hot mess of a drink. How, you ask? We infused zesty Australian blood orange peels with the dried husks of ancho chilli. It’s smokey, vibrant, zesty, bitter and sour.

It’s everything you ever wanted in a drink but were too self-concious and idiotic to ask for. So top it with Prosecco, top up your Negroni or drink it like a heathen - because this little number is music for your mouth. A symphony for your senses. A tango for your tastebuds. You get the drift....drink it.

Frank Moorhouse in his book Martini - a memoir states, "Every time it is served, the martini represents a journey towards an unattainably ideal drink". The idea of endlessly pursuing a perfection that does not exist is something well known to passionate winemakers. Having a winemaking background we thought we would delve into the mysteries of gin production. This was largely brought about by our fascination with martinis and all things gin.
The notion of the "unattainable ideal drink" led us into a series of trials and experiments and we have become fully immersed in the alchemy of batch distillation and the extraction of exotic and local botanicals. The MGC doffs its hat to London Dry Gin with the two major components being juniper berries and coriander seed. There are 11 botanicals in total (not including a lot of love) with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, which are all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.

Each botanical is distilled separately and then blended to our recipe - essentially a winemakers approach. We use a copper pot baine-marie alembic still. A still traditionally used for making perfume. This allows us to preserve the delicate nature of the botanicals we work with. The final component is the water used to break the gin back. We use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique "Melbourne Dry Gin" style.

The MGC is not chill filtered. We didn't want to take out the oils that contribute so much to the aromatics and mouth feel of the gin. So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made. ANDREW MARKS, Distiller & Winemaker
