Zar Brooks can't decide whether it's ximenez (front label) or ximinez (back label). From a solera started in 1944, now an average age of 30 years. It has a strong, dark roasted nut bouquet, and an extremely luscious brandy snap, cumquat, nut and tea palate. This is seriously old material. JAMES HALLIDAY, The Australian Wine Companion 2011
Made from 30 year old material this Pedro Ximinez is produced in an amontillado style. Dry with
hints of walnut and pecan nuts, tea leaf and crème brulee. Though the wine is sweet it is dryer than many luscious Pedro Ximenez's, the rancio nutty character is fresher and more reminiscent of amontillado Sherry. Rich, with hints of orange rind, and marmalade and finishing with a dry nutty toffee flavour and fresh zesty acidity. Quite long and fresh. PWS

An interesting newcomer to the market, the base of this vermouth is rich, nutty Sherry—80% amontillado and 20% Pedro Ximenez, to be precise. It has a coffee-brown hue and a bright dried-herb scent. The palate wows with sticky toffee, dried apricot, orange peel and cocoa. Ideal for adding complexity to drinks featuring dark spirits. WINE ENTHUSIAST

A perfect blend of two wines each aged individually in the traditional, authentic Jerez “Solera y Criaderas” System: An Amontillado, dry and nutty, with character. A Pedro Ximénez, sweet, intense and velvety. LUSTAU

Sanlúcar de Barrameda sits on the estuary of the Guadalquivir river with Atlantic breezes coming off the ocean. Its microclimate impregnates the yeasts growing on the surface of the Manzanilla with a rare sea salt character. ‘Aranzá’ is Rafa’s sub-vineyard name for a small portion he selects from Viña La Palma. La Palma itself is a small vineyard, 3 hectares of 60 year-old Palomino growing in Albariza tosca cerrada. The term ‘Aranzá’ is a short-hand for the local measure of land area, an Aranzáda – depending upon the colloquy involved (the measure is different in each town and possibly grower-to-grower!), it’s roughly a half hectare.

Pickled hay, buttery chalk and the cold steel smell of yesterday’s Tea Billy. Savoury, earthen, edged and filled with pickles and spice. Dandelion, a nice rim of diatom (blue oceanic fossil minerality), pickled cucumber, a sapid buzz in the cheeks and corners of the tongue. A round and savoury style, the cereal-inflected Palomino is mid-weight with an understated, lovely finish of bitters on the point of the tongue. Incredible volume and textural satisfaction at such low ABV.

Bouzy and Ambonnay are the epicentre of pinot noir in Champagne, and the Clouet family is the priviledged custodian of eight hectares of estate vines in the best middle slopes of both villages.  These are rich and concentrated expressions of pinot noir, wines of deep complexity, multi faceted interest and engaging character, yet with remarkable restraint and sense of control.  Recent tastings confirm my impression that this small and relatively unknown grower ranks high among Champagne's finest practitioners of pinot noir - and expresses one of the best value of all.

Release after release, year after year, I have always marvelled at the lemon blossom freshness that Clouet manages to capture in pinot noir from two of Champagne's most powerful terroirs.  Here it is again, in a captivating interplay of fleshy mirabelle plums, white peaches, crunchy golden delicious apples, and even a hint of pepper.  Wild honey and mixed spice join the maelstrom along the way, gliding obediently into a well defined finish of soft minerality and integrated dosage.  TYSON STELZER, The Champagne Guide 2014-2015

One of the large, historical houses of conventional sherry-making, Williams and Humbert nowadays offer a layer of distinct wines within the fluidity of its 'Sherry' styles. Under the young generation leadership of Paola Medina Sheldon, the Williams Coleccion is a series of astonishingly delicate and singular vintage sherries, or añadas: statically aged single-vintage wines, with terroir as important as bodega influences. Paola mainly takes fruit from the 'las Conchas' vineyard within Pago Añina (jerez), and some from old vines in Pago Carrascal (jerez). 

In every respect, Finolis parallels Willy Perez's remarkable statically-aged natural alcohol Fino Caberrubia (from the same Pago), except that it's a half degree of booze short of the regulations. Only 50% free run juice yield from pressing was used, fermenting naturally to 15%. The wine was then aged in old 600L Fino casks with 20% ullage to allow plenty of Flor. Later, at nearly 5 years of age, the wine was bottled en rama (unfiltered), however the DO refused to ratify it as a Fino as the alcoholic degree had diminished, and it's in the market as table wine of Cadiz, not Fino.

The Delamotte NV Brut blends approximately 55% Chardonnay with 35% Pinot Noir and 10% Pinot Meunier. It is clear, round and spicy on the predominantly fruity and vinous nose with its delicate chalk and hazelnut flavors. On the palate this is a lithe, finessed, fresh and elegant Brut with good structure and a pure, salty-mineral and cleansing finish. A complex, reliable Champagne that would show well in all occasions thanks to its freshness and class. Drawing on all three grapes (chardonnay, pinot noir and pinot meunier), this has a complex grilled-nut and autolysis character overlayed across red berries and citrus fruits. Definitely a lot of reserve wine character here. The palate delivers lemons, grapefruit, peaches and mangoes in a refreshingly pure, fleshy style. One of the great signatures of the region, its calligraphy flowing with elegance, panache and balance, the last reflected in the equal proportions of the three great varieties of Champagne. A flamboyant straw gold lustre, and an immediately seductive nose, encyclopaedic in its indulgence. Nougat, praline, white pepper, spice and nectarine were first to the page for this taster, but there is much more behind that, the sugar discrete yet edifying, the long yeast ageing responsible for a happy and altogether luminous marriage of power and finesse. the wine wafts from the glass with an alluring bouquet of green apple, brioche, pastry cream and buttered toast. On the palate, it's medium to full-bodied, impressively layered and complete, with a crisp but fleshy core of fruit, a youthfully frothy mousse and bright acids, concluding with a delicately chalky finish. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. It is a lovely entry to the range to enjoy now or over the next 6-8 years, and I love this as an aperitif style. JEB DUNNUCK

Jean-Francois Clouet's zero-dosage ideal is realised with magnificent clarity here.  Such is the concentration and richness of his pinot noir that it has absolutely no need for any sweetness.  The bouquet is delightfully fresh, lifted, pure and expressive, with lemon zest, yellow mirabelle plums and red apple fruits.  The palate follows impeccably, showcasing the concentration of Bouzy with exceptional purity and focus.  Its barrel work blends impeccably contributing nuances of nougat, brioche and honey.  Succulent yellow summer fruits pull seamlessly into a crunchy finish of red apple and lemon zest, concluding long and refined, with refreshingly taut acidity and soft, chalky minerality.  Classic Bouzy of the finest order. Light yellow-gold. A highly aromatic nose displays lemon zest, fig, pear and ginger, with a bright mineral overtone. Tangy and precise, offering a complex blend of lime, white flowers, quinine and dusty minerals. Juicy, tightly focused Champagne, with nervy acidity adding cut to a long, sappy finish. The NV Brut Nature Silver is naturally a very focused, driven wine given the no-dosage style. This shows wonderful nuance and depth all the way through to the long finish, with bright aromas and flavors but less of the toastiness than some of the house's other wines. This is the most renowned pago in Jerez, planted on pure albariza, a white soil high in calcareous microfossils. Equipo Navazos sources the 115 from a bodega that farms their vineyards entirely by hand and without chemical inputs.
My heart stuttered a bit when the glass was set in front of me: rather than the pale-lemon colour I've come to expect in fino, it was a soft apricot, and I worried that it was past its prime. It was not. It smelled fresh and characterful - Could a wine be more Spanish? It smells like the sea, rich, fatty Valencia almonds, orange zest kneaded into yeasty bread dough, a touch of Manzanilla olive brine and a caramelly tang like birch syrup. It's richer and more savoury than any fino I've encountered, with heightened viscosity and concentration. The finish goes on forever. SAMANTHA COLE-JOHNSON, jancisrobinson.com

The NV La Bota de Fino 115 is still 100% from Macharnudo Alto, and they are trying to make a slightly more fluid wine, not like a Fino Amontillado, which was the case with some bottlings coming from the selection of very old soleras. It's slightly different from the previous edition, number 91; this is slightly younger, between seven and eight years of age, but it keeps the same style, just a little more approachable. It's still an old Fino, with notes of esparto grass and volume in the palate. (95) LUIS GUITERREZ, The Wine Advocate

Bottled a few days ago. From the Machurnado vineyard. They have decreased the average age by a couple of years so it's seven or eight years on average and the wine is more refreshing and not so uncomfortably concentrated. Firmer and nuttier than I Think Manzanilla with real tang and bite. Hint of molten dry treacle. Real grip. Neat and convincing. Not yet open - needs a couple of months. JANCIS ROBINSON MW

Wheatie, course ground grains and a background hint of fresh toast with wildflower honey. That alone had me coming back. But the aromatics are multidimensional, they run through a wild, complex and beautifully constructed spectrum, from perfume to damp stone, hay to honey roasted nuts. Crazy nuance and head spinning detail. There is so much involved here, but it is by no means bombastic. These details are, at times, faint little suggestions that mingle amongst more obvious characters. It takes time in the glass and air to shake loose some of the more reticent attributes. But they are so inviting and alluring. It is worth just sitting on a glass for a while. I poured some aside to keep coming back to over a couple of days.
The subtle, though not shy, nose does not prepare you for the impact on your palate.
It hits with some force, there's a lot of flavour here and it begins on impact. From the moment it touches your mouth it is a crazy dance. Intense, unusually concentrated and powerful for the style. Loaded up with character and brimming with confidence. This is a Sherry of presence and stature, however it does not depart from the things that we all love in Fino. Salty. Oh, so salty. Fresh feeling, it pops with a sense of spring in the mouth but then leans in to autumnal notes as it slowly, so very slowly, fades away. A final twang of salinity and chalky texture on the incredibly long finish, reminds you exactly what you are drinking.
This is both thoroughly and utterly delicious as well as deeply convincing and totally spellbinding. I love it! ROSCOE
