Domaine Pajot Cotes de Gascogne Blanc 2022The Domaine itself is plonked on the hills overlooking Eauze the capital of Armagnac. Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.
We were super impressed with the latest vintage here. Much more texture and weight then in previous vintage with an emphasis on phenolic grip and slippery fruit. There is lovely chalky, white pepper note on the nose with fresh nashi pear and green apple to the fore. They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Vallformosa MVSA Brut NVThe 'MVSA' is made from the tradition Cava varieties Macabeo, Xarello and Parellada at the respective ratio's of 35:30:35%, the wine has seen 24 months of lees ageing and bears 9.5 g/l of residual sugar, but has the acidity to clean up the tail; it is a stylish and satisfying wine of great value. It is pale in colour with plenty of bubbles showing aromas of apples and pears, toasty bread and white flowers balancing the right amount of bubbles and acid. Pierre Marie Chermette Beaujolais Les Griottes Beaujolais 2023 375mlThis mouthwatering crowd-pleaser is named after a grove of cherry trees that flank the vineyard. The fruit is drawn from 30- to 40-year-old Gamay vines, grown in dark granite soils around the Chermette homestead in Saint-Vérand, southern Beaujolais. In contrast to his age-worthy Crus from Moulin-à-Vent and Fleurie et al., Chermette aims to produce something light-to-medium-bodied, bright and cherry-fruited with reach-for-another-glass charm.
The winemaking has remained unchanged for decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks still the order of the day. The nose is so exuberant you could be tasting out of barrel, flush with easy-going, lip-smacking red fruit flecked by red floral notes. The palate tells the same story through waves of vibrant, tangy berries and cherrystone fruit. As always, it is a delicious, moreish wine and fabulous value.

Stephane Aviron Beaujolais Village 2023Stephane's family has been wheeling and dealing in Beaujolais for generations. Based in Fleurie, his father owned an oenological laboratory and worked as a wine broker where, after completing his studies, Stephane returned to work in the family business as a wine consultant and a winemaker in Chénas. His experience there and history in the region brings a depth of knowledge and intimate detail of the terroirs he now works. Wine was fermented with ambient yeast on skins for 2 weeks and pressed to 2 x 6 year old Bossuet 500 Lt Puncheons. No adds other than a small organic yeast hulls to aid fermentation and a small amount of So2 pre bottling.
Gentle spice, herbaceous alpine edge brings freshness, cranberry and bright cherry fruits. Red spectrum rather than blue black of the spiritual home of Gamay but delicious and dangerously drinkable none the less.

Carefully crafted by Antonio Nadal, Mallorca's oldest and most renown distillery, the Canoneta essence is blended with white wine and refined with a secret selection of herbs from our beautiful island.
Its beautifully fragrant with fresh crushed orange, citrus peel, delicate sweet floral notes and a gentle bitterness of fresh cut herbs. This is perfect as a spritz or even with tonic but honestly we would happily drink it with ice and a dash soda as an apertif all summer long.
