Disznoko Late Harvest Furmint 2020 500mlLászló Mészáros makes this late-harvest wine from mainly botrytised Furmint grapes (along with small amounts of Zéta and Hárslevelu), which have shrivelled to around half of their original volume. Termed Késói Szüretelésú in Hungarian, there is no berry-by-berry selection here as there is for Aszú wines. Instead, selected botrytised bunches and grape clusters were harvested and macerated briefly before being pressed. The wine was racked into used French oak (including barrels from Disznóko's sister property, Château Suduiraut in Sauternes), where it matured for six months.
The short aging has kept Furmint's pungent and fruity aromas and flavours intact and guarded its energy and freshness. The palate has a fine balance of candied fruit, honeycomb sweetness and acacia. This wine has residual sugar of around 130 g/L, which is well-balanced by punchy acidity and gentle grip, giving a vibrant and modern expression of Tokaji.
The balance and freshness mean you don't necessarily have to serve this with dessert. In fact, in Hungary, this kind of wine is often consumed as an aperitif or with goat’s cheese or pâté on toast.

This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.
Subtle sparkling with notes of pears, apples and peach, on a festival of light and very elegant bubbles. The palate is dry, notes of granny smith apples and hazelnut, built around a nice, ripe acidity. Delicious festive number !

Domaine Dirler-Cade Alsace Riesling 2022One reason I never miss a chance to visit Jean Dirler and his family is that the Dirler-Cadé estate in Bergholtz makes outstanding wines from several different Alsace varieties. Its Sylvaner, a grape often treated as an afterthought in Alsatian wine-production circles, is especially noteworthy. Domaine Barmes Buecher Sands Pinot Blanc 2021The vines for this 2021 Pinot Blanc Clos Sand were planted in 2013. It was first vinified as a single vineyard in 2018. This is a granitic site, at 400m of altitude, enclosed by forest, looking south-east. Matured in a mix of stainless steel and used 300-liter barrel, because there was not enough wine to fill a foudre , this spent 11 months on gross lees. The nose is shy, with mere suspicions of lemon. The palate is sylph-like but wonderfully juicy and rounded in its concentrated slenderness. It has the richness of yeast and strikes a beautiful balance. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
