Dewazakura Dewa Sansan Junmai Ginjo Sake 300mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Dry or Trocken style Rieslings from the Mosel don't get as much attention as the sweeter versions do and that is a shame. If this wine is anything to go by, I hope they are making bucket-loads more because this really floats my boat. It's all about fresh diced pear, green apple, a touch of peach and ripe citrus throughout. The palate sings with pure fruits, lemon drop and crushed white rock. Its finely shaped, zipping along buoyed by crystalline acidity that pierces the gently sweet fruits. It feels so full of life, bouncy and fresh. Love the purity of it all finishing emphatically dry but with plenty to keep you going back for more. I love the sweet stuff too, don't get me wrong, but this I could drink all day long. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Weinbach Sylvaner 2022This is our second shipment of Weinbach’s Sylvaner, drawn from old vines in the Clos des Capucins. Sylvaner may have fallen down the Alsatian pecking order in recent decades, but you could hardly tell that from tasting Weinbach’s example. Old, biodynamically tended vines and low yields are just two key components to the quality and style. The fruit was pressed gently as whole clusters, then fermented with indigenous yeasts (an element of the terroir that enhances depth and complexity in the wines) in old oak vats. Sylvaner boasts relatively high acidity, which works a treat with the early-ripening, sandy and rocky terroir of Capucins. The result is a deliciously fruity, taut, salivating white with complex aromatics and plush concentration.
A biodynamic Sylvaner among thorns, the 2022 opens with golden orchard fruits, aromatic salts and a twist of savoury herbs, while the palate is packed with silky fruit and balanced by a mouth-watering spine of crystalline acidity. Impressive length, too.
